MOM'S HOMEMADE SALSA



Mom's Homemade Salsa image

15-20 Tomatoes (peeled, seeded, and chopped into bite sized pieces)
3 Large Onions (chopped)
1 Green Pepper (chopped)
1 can (6 oz) Tomato Paste
1 can (4 oz) Diced Jalapeno Peppers
1 can (4 oz) Diced Green Chilies
1/2 cup White Vinegar
2 Tbsp Sugar
1 Tbsp Lemon Juice
1 Tbsp Canning Salt
1 Tbsp Dried Cilantro
1 Tbsp Cumin
1 tsp Minced Garlic

Steps:

  • Into a very large stockpot, combine all of the ingredients together.
  • Bring to a boil and simmer for 1 1/2 - 2 hours, stirring frequently.
  • If your tomatoes give off a lot of juice and you want a thicker salsa, dissolve 1-2 Tbsp of cornstarch in a small amount of water. Add the cornstarch slurry to the salsa in the last 15-20 minutes of cooking. Salsa should thicken slightly.
  • Prepare canner, jars, and lids according to manufacturer's instructions.
  • Carefully ladle the hot salsa into the heated jars, using a funnel and leaving 1/2 inch headspace.
  • Center lids on jars. Apply and tighten bands.
  • Process in boiling water canner for 35 minutes, adjusting for altitude. **Increase processing time: 5 minutes for 1,001 to 3,00 ft; 10 minutes for 3,001 to 6,000 ft; 15 minutes for 6,001 to 8,000 ft; 20 minutes for 8,001 to 10,000 ft.

2 heads romaine lettuce, thinly sliced
2 tomatoes, large diced
1 cucumber, large diced
1 red onion, thinly sliced
1/2 cup extra-virgin olive oil
1/4 cup red wine vinegar
2 tablespoons sour cream
1 teaspoon fresh oregano, chopped
1 clove garlic, minced
Kosher salt and freshly cracked black pepper

Steps:

  • Combine the romaine, tomatoes, cucumber and onions in a large bowl.
  • Whisk the olive oil, vinegar, sour cream, oregano and garlic in a small bowl to make the vinaigrette.
  • Pour the vinaigrette over the salad, season with salt and pepper and toss to combine. Serve with more freshly cracked black pepper over the top.

1 cup fresh cilantro
½ serrano pepper, seeded
5 green onions
2 14 oz cans S&W stewed mexican tomatoes
3 cloves fresh garlic, minced
2 tbsp olive oil
1 tsp white wine vinegar
Pepper

Steps:

  • Wash all fresh ingredients.
  • Chop the green onions and add only the white parts to a blender.
  • Add ½ serrano pepper, tomatoes, minced garlic, vinegar, olive oil, pepper to taste and cilantro.
  • Pulse the blender a few times until you achieve desired texture (for smoother salsa, purée it for 10 seconds).
  • Serve with warm tortilla chips.

This is a very simple green salad my mom used to put on the table every night. She was able to get kids who never ate their vegetables to love this salad. I think the secret is in the vinaigrette: it's got the perfect level of acidity to balance out all the greens.

1 head green leaf lettuce, chopped
2 ribs celery, sliced
1 tomato, chopped
1/8 head red cabbage
2 carrots, peeled
2 radishes
2 green onions
6 tablespoons olive oil
2 1/2 tablespoons red wine vinegar, 2 tablespoons plus 1½ teaspoon
3/4 teaspoon Kosher salt, divided
1/4 teaspoon Freshly ground black pepper
2 teaspoons lemon juice

Steps:

  • For the salad: In a large bowl, add the lettuce, celery, and tomato. Thinly slice the cabbage. Cut the carrots in half lengthwise, then slice. Shave the radishes on a mandoline. Thinly slice the green tops of the onions. Add everything to the bowl and refrigerate while making the vinaigrette.
  • For the vinaigrette: In a jar with a tight-fitting lid, add olive oil, vinegar, ½ teaspoon salt, pepper, and lemon juice. Cover and shake. Spoon vinaigrette from the bottom of the jar onto a piece of lettuce and taste.
  • Assemble the salad: Season the chilled greens with ¼ teaspoon salt and a few grinds of pepper. Give the dressing a stir and then drizzle around the outer edge of the bowl. Gently toss with your hands to combine. Taste one more time, adjust seasoning, and serve.

This is, by far, the best macaroni salad I've ever put into my mouth. It has a perfect blend of sweetness and tartness, and it is so pretty with all of the multi-colored veggies. Be ready for this to disappear before you put it on the table! I have six children, and it is all I can do to keep them from nibbling on it while I'm mixing it up!

16 ounces uncooked elbow macaroni
4 carrots, shredded
1 large red onion, chopped
½ green bell pepper, seeded and chopped
½ red bell pepper, seeded and chopped
1 cup chopped celery
2 cups mayonnaise
1 (14 ounce) can sweetened condensed milk
½ cup white sugar
½ cup white vinegar
salt and pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Add macaroni, and cook until tender, about 8 minutes. Rinse under cold water, and drain.
  • In a large bowl, stir together the carrots, red onion, green pepper, red pepper and celery. Mix in the mayonnaise, condensed milk, sugar, vinegar, salt and pepper. Add the macaroni, toss gently, cover and refrigerate for at least 8 hours. I usually make this a day ahead of time, and stir it occasionally to blend the flavors. The macaroni will absorb some of the liquid.

This has been a favorite in our family for as long as I can remember. I use it on tacos, chimichangas, with chips, tamales, enchiladas, burritos, scrambled eggs, taco salads, Mexican rice, huevos rancheros, fried potatoes...you get the point. This recipe is an ATTEMPT to get the spices right since Mom doesn't measure the ingredients. (Nor do I.) ;) Feel free to adjust seasonings to your taste. Please note: The salsa needs to sit in the fridge for at least 2-3 hours for the flavors to meld.

1 (15 ounce) can tomato sauce (We use Hunt's brand)
2 teaspoons dried oregano
1 teaspoon granulated garlic
1 teaspoon ground cumin
3/4 teaspoon onion powder
2 teaspoons red pepper flakes

Steps:

  • Combine all ingredients in a large bowl.
  • Cover and refrigerate until ready to use.
  • NOTE: I use an empty, clean mayonnaise jar to make this. Put all the ingredients in the jar, cover and shake well. Stick in the fridge to have on hand whenever you need it.

This is my Mom's spinach salad recipe that we grew up with and it's always been a favorite of anyone that's tried it. I believe Mom cut the recipe from the newspaper. Prep time is approximate (I like to tear the stems off the spinach so that takes a few more minutes, your choice), and the cooking time is for the hard boiled eggs. This is very good the next day (spinach kind of wilts in the dressing). I hope you like it as much as we do!

2 (10 ounce) bags fresh spinach, rinsed, patted dry & torn
1/2 cup celery, chopped
6 tablespoons onions, chopped
3/4 cup muenster cheese (my favorite) or 3/4 cup mozzarella cheese, cut in 1/4 inch pieces (I've used shredded Italian blend when I haven't had anything else on hand and it's just as good)
4 hard-boiled eggs (3 eggs chopped, 1 egg grated for garnish)
1/2 teaspoon salt
1/4 teaspoon black pepper (to taste)
1/2 teaspoon Tabasco sauce
1 1/2 teaspoons vinegar
1 tablespoon horseradish
1 cup mayonnaise
paprika

Steps:

  • Combine celery, onion, 3 chopped eggs, cheese & spinach.
  • Combine salt, pepper, Tabasco, vinegar, horseradish & mayonnaise.
  • Mix dressing with vegetables.
  • Put in serving dish, garnish with reserved grated hard boiled egg & sprinkle with paprika.
  • Chill.
