Steps:
- Preheat a griddle and deep fryer to 350 degrees F.
- Butter the griddle. Dunk the Texas toast on both sides in the French Toast Custard and grill until golden brown. Flip and add 1 slice Swiss cheese to each slice of toast. Then add 3 ounces ham on top of 6 of the toast slices, then top the ham with another slice of Swiss cheese. Top each ham and cheese toast with a cheese only toast, to form 6 sandwiches. Cook until the cheese melts, then remove from griddle and cool. Dunk the cooled sandwiches in the pancake batter until fully covered and put into the fryer. Cook until golden brown on both sides, about 8 minutes. Serve with the Strawberry-Rhubarb Syrup.
- Beat the eggs well, then add the sugar and mix until emulsified and all the sugar has dissolved. Add the milk and vanilla and whisk until combined.
- Add the strawberries, rhubarb, sugar and maple syrup to a saucepot. Place over medium heat and cook until fruit is soft, about 20 minutes. Let cool slightly, then carefully puree with a hand blender.

- In a small bowl, combine the mayonnaise, salad dressing and Dijon mustard; spread over 1 side of each slice of bread. On 4 slices, layer the turkey, ham and Swiss cheese; top with remaining bread. - Spread mustard over one side of each bread slice; top two slices with cheese and turkey. Cover with remaining bread, mustard side down. In a shallow bowl, beat egg substitute and milk. Dip sandwiches in mixture, coating both sides., Heat a griddle coated with cooking spray; toast sandwiches until lightly browned on both sides. Sprinkle with confectioners' sugar. MONTE CRISTO WRAPS

- Lay wrap flat. Place 1/4 of meat and cheese ingredients horizontally on each wrap. Carefully fold bottom section of wrap over top section like a taco. Then carefully fold in a little on each end while rolling up wrap “burrito style”. Place a couple of toothpicks like a safety pin to hold wrap together.
- Pour egg substitute into flat bottom bowl. Dip and coat each Monte Cristo wrap in egg substitute. Spray olive oil in skillet and warm to medium/medium high. Place wraps in skillet and pour remaining egg substitute over the top of wraps.
- Cook (5 - 10 minutes) turning once or twice to brown all sides. Don't forget to remove the toothpicks before serving! Serve with 1 Tbsp. each of jam for dipping.

MONTE CRISTO SANDWICH FROM MAMA'S
I got this off of the Food Network, courtesy of Mama's on Washington Square, San Francisco. I tweaked it, swapping ham steaks for the turkey, taking it down from a triple-decker sandwich to a double and adding the must-have powdered sugar. Makes 4 sandwiches. Really really good, my 2 year old ate it up!

- On a work surface, spread each slice of bread with mayonnaise. Top four slices with the 1 slice of Gouda and several pieces of fried ham steak. Use remaining slices to top ham and cheese slices to make four sandwiches.
- Using a knife, cut the crusts off the sandwich (this helps to pinch and seal the ends). Press sandwich flat with hands and wrap tightly with plastic wrap.
- Refrigerate for at least 30 minutes and up to 6 hours. (Wrapping the sandwich in plastic wrap, compacts it, and prevents the egg batter from seeping in.).
- Heat the oil and butter in a skillet over medium-high heat.
- Combine the eggs and milk in a bowl.
- Unwrap the sandwiches and dip them in the egg batter, to coat evenly.
- Gently place each sandwich in the skillet (one or two at a time), and fry, turning once, until golden brown and hot, about 5 minutes total.
- Cut the Monte Cristos in 1/2, transfer to a place, and sprinkle with powdered sugar.
- Spoon some jam on the side and serve immediately.

OVERNIGHT MONTE CRISTO CASSEROLE
Always looking for that "one new dish" to add to the Christmas Brunch repertoire, but really, it's good any old time. This may be just a little rich for every day, but whenever you absolutely need to make a party out of breakfast, this'll do it! A basic strata dressed up a little .... easy on the cook, and most of the prep can be farmed out to the kids the night before. Prep time does not include time spent in the refrigerator.

- Butter a 9x12 casserole dish and set aside.
- Mix Dijon mustard, softened butter, and grated onion to blend.
- Spread mixture thinly on each slice of bread, and place one slice of ham and one slice of cheese within the crusts of two prepared slices to make a sandwich.
- Cut each sandwich into fourths, and then cut each fourth into triangular halves.
- Place the little triangles marching in rows lengthwise in the prepared casserole, with points up.
- In a separate mixing or batter bowl, beat the eggs just until lemony-looking; add milk and brown sugar, and whisk firmly until no lumps from the brown sugar show.
- Pour egg mix over the prepared sandwiches and cover the casserole with plastic wrap, sealing firmly, and place in refrigerator overnight, or for at least two hours.
- Preheat oven to 375 degrees F.
- While oven in preheating, remove casserole from refrigerator, take off plastic wrap and let rest on the counter to lose the "fridge chill".
- You may want to place the casserole on a rimmed cookie sheet to prevent spills during baking.
- Just before placing in oven, sprinkle lightly with paprika, more for effect than taste, really.
- Bake for 60 minutes, or until the center is set and the sandwich points are a nice golden brown.
- Let rest for ten minutes and then cut into individual serving portions.
