MORE THAN GOUDA QUESADILLAS
Everyone's RSC nightmare come true! I created this recipe for the RSC 11 contest and after proofreading my private recipe at least 10x, I copied and pasted it and left off the first step! So, a huge thank you to the reviewers who gave this a try and made the most of it and were very kind! It is now edited so don't be afraid to give them a try. These quesadillas have caramelized shallots, spinach, and sun-dried tomatoes. They make a great appetizer if cut into wedges, a special lunch, dinner when served with a salad, or a late night snack. If you really want to put them over the top, serve with a bit of guacamole.

Steps:
- Melt butter in a non-stick skillet which is larger than your tortilla. Add shallot and cook over medium-low heat, stirring occasionally, until soft (about 8-10 minutes). Add wine and then baby spinach cooking for 2 more minutes stirring occasionally. Remove from heat into a bowl.
- Place a little olive oil in the bottom of the skillet.
- Place a tortilla in pan and over half the tortilla spread some cheese, followed by some of the shallot/spinach mixture, 1/2 tablespoon sun-dried tomatoes and a little more of the cheese. Sprinkle with a little garlic salt.
- Fold in half and cook over medium heat until cheese has melted and tortilla has browned to your liking and then flip and cook the other side. Repeat for second quesadilla.
- Slice into wedges and enjoy!

Steps:
- Melt 2 tablespoons butter in heavy medium skillet over medium heat. Add onion, brown sugar and vinegar; sauté until onion is golden brown, stirring frequently, about 25 minutes. Remove from heat. Cool to room temperature.
- Preheat oven to 350°F. Sprinkle cheese over half of each tortilla, dividing equally. Sprinkle prosciutto and sautéed onion over cheese. Season with pepper. Fold other half of each tortilla over cheese mixture. Brush tortilla with some of melted butter.
- Brush heavy large skillet with some of melted butter. Place over medium-high heat. Working in batches, cook quesadillas just until brown spots appear, brushing skillet with butter between batches, about 2 minutes per side. Transfer quesadillas to heavy large baking sheet.
- Bake until tortillas are golden and cheese melts, about 5 minutes.
- Transfer quesadillas to work surface. Cut each into 6 triangles. Arrange on platter and serve hot.

- Spread cream cheese over 2 of the tortillas. Layer tortillas with ham, tomatoes, cheese and parsley. Top with remaining 2 tortillas.
- Heat 1 tablespoon of the oil in 10-inch nonstick skillet over medium heat. Add one quesadilla; brush top with more oil. Cook 2 to 3 minutes on each side or until golden brown and cheese is melted. Remove from skillet; keep warm. Repeat with remaining 1 tablespoon oil and second quesadilla.
- Cut each quesadilla into 8 wedges. Serve immediately.

- Slice the onion and peppers into thin strips. Heat the olive oil in a large nonstick skillet over medium high heat; add the onions and saute for 3-5 minutes or until soft. Add the peppers and saute for 5 minutes until soft and roasty-looking on the outside. Transfer to a bowl.
- Wipe the skillet with a paper towel and return to the stove. Add 1 1/2 tablespoons butter and melt over medium low heat. Add the mushrooms and saute for 5-8 minutes or until golden brown. Toss in the bowl with the peppers and onions.
- Wipe the skillet with a paper towel (again) and return to the stove. For each quesadilla, melt 1/2 tablespoon butter in the skillet and layer these ingredients directly in the pan: 1 tortilla, 2 tablespoons cheese, 1/3 cup pepper mushroom mixture, 2 tablespoons cheese, 1 tortilla. By the time you’ve layered them, the bottom will probably be getting a little golden brown. Press the quesadilla together with the back of a spatula to help it stick and carefully flip it over in the skillet. I usually hold my hand on the top tortilla as I flip it to keep the filling from falling out. Let the quesadilla brown for another 2-3 minutes on the other side, just enough to turn golden brown and melt the cheese. Remove and cut into wedges (and repeat for the other quesadillas). Top with sour cream, cilantro or anything else you like!
