CREAMY MUSHROOM MEATLOAF
This technique keeps the meatloaf moist, while fortifying the sauce with its flavorful drippings. Regardless, this technique will work with just about any meatloaf recipe out there.

Steps:
- Preheat the oven to 325 degrees F (165 degrees C).
- Melt butter in an oven-safe skillet over medium-high heat. Stir in mushrooms and a pinch of salt; cook and stir until mushrooms begin to brown, about 5 minutes.
- Stir in fresh rosemary. Add flour and stir to coat the mushrooms; cook and stir for about 3 minutes.
- Whisk in beef broth, 1/2 cup at a time, whisking constantly to prevent lumps.
- Turn heat to high and bring the sauce to a simmer. Simmer a few minutes until sauce starts to thicken. Season with salt and pepper to taste.
- Remove from heat and stir in heavy cream.
- Slide prepared meatloaf into the sauce. Spoon sauce over the top of the meatloaf.
- Bake in the preheated oven until no longer pink in the center, about 1 1/2 hours. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
- Remove pan from the oven and gently remove meatloaf to a serving platter.
- Skim off any extra fat from the surface of the sauce.
- Bring the sauce to a boil over medium-high heat to reduce until thick, about 5 minutes.

MEATLOAF WITH MUSHROOM GRAVY
Steps:
- Gather the ingredients.
- Heat the oven to 350 F. Lightly grease a 9 x 5 x 3-inch loaf pan.
- In a large bowl, combine the ground beef, grated onion, egg, oats, milk, ketchup, Worcestershire, 1 teaspoon salt, 1/4 teaspoon pepper, herb blend, and optional garlic. Blend well.
- Pack the meatloaf mixture loosely in the prepared loaf pan. Bake 1 1/2 hours.
- While the meatloaf is baking, make the gravy. In a medium saucepan over medium heat, melt oil with butter.
- Add the mushrooms and sauté, stirring, until tender and browned and the liquid has evaporated. Stir in the flour until well blended.
- Add the beef stock and continue cooking, stirring, until thickened.
- Add the gravy browning sauce (Gravy Master, Kitchen Bouquet, etc.) and Worcestershire sauce.
- Continue simmering, uncovered, stirring frequently, for 3 minutes. Taste and add salt and pepper, as needed.
- Spoon the gravy over the sliced meatloaf or serve it in a bowl on the side.
- Enjoy.

- Preheat oven to 350°F. Mix all ingredients together, except the bread slices and sauce. Shape into a loaf. Line a 1 1/2-quart loaf pan with the bread slices. Place meatloaf on top. Bake loaf for 45 minutes. The bread absorbs the grease and should be discarded after loaf is removed from oven. SAUCE: Heat the soup and milk over medium heat; add the cheese. Add the chopped onions and parsley to the sauce, if desired. Pour sauce over the meatloaf or pass at the table.
ELVIS PRESLEY'S CHEESEBURGER MEATLOAF AND CHEESE SAUCE
Haven't gotten to make this yet but I saw Paula Deen's show today and my mouth was just watering. YUM! Paula's show was on "Elvis's favorite foods with a twist". This meatloaf was one of the recipes and I thought I would share it with everyone.

Steps:
- Preheat oven to 350'.
- Grease a deep dish meatloaf pan with pam.
- Place 2 slices of bread on bottom of dish (this will catch the grease from the meatloaf).
- Mix together, ground beef,house seasoning,chopped onion and green pepper,1c shredded cheese, worcestershire sauce,sour cream,ritz crackers and black pepper.
- Place in meatloaf dish and bake 45 minutes.
- Discard bread pieces after baking. Place meatloaf on a large plate.
- For the cheese sauce --.
- Place soup, milk (whipping cream if using)in a sauce pan and heat on medium heat.
- Add 1 1/2c. cheddar cheese and stir to combine.
- When cheese is melted add, green onion and parsley if desired.
- Pour over meatloaf and enjoy!

- Preheat oven to 350 °F. In a large bowl, combine the beef, House Seasoning, Lawry's salt, onion, bell pepper, Cheddar, cracker crumbs, sour cream, and Worcestershire sauce. Use your hands and make sure you mix the ingredients really well so they are thoroughly combined. Shape into a loaf about 8 by 3 inches.
- Line a rimmed baking sheet with the bread slices and place the loaf on top. Bake the loaf until well browned, 45 minutes to 1 hour. Remove from the oven and discard the bread slices.
- Meanwhile, make the sauce.
- Slice the meatloaf and serve topped with the sauce or pass the sauce at the table. You can add chopped onions and parsley to the sauce, if you like.
- In a medium saucepan, heat the soup and milk over medium heat. Add the Cheddar and stir until the cheese is melted.

- Heat oil in skillet over medium heat.
- Add onion and sauté until translucent, about 4 minutes.
- Add garlic and mushrooms.
- Cook until mushrooms are golden-brown and liquid evaporates, about 8-9 minutes.
- Cool.
- Preheat oven to 350 degrees F (175C).
- Mix beef and everything else but cheese.
- Turn out onto large square of plastic wrap.
- Pat into 9 x 12 inch rectangle.
- Spread mushroom filling over rectangle, leaving a ½ inch border on all sides.
- Cover mushrooms with cheese.
- Starting at one short end, roll up jelly roll fashion. Take time and lovingly pat it into a compact shape to fit into your loaf pan - this will ensure that it doesn't crack as it bakes.
- Arrange seam side down in 9 x 5 inch loaf pan.
- (Can be prepared up to 6 hours ahead. Cover and refrigerate) Bake until loaf shrinks from sides of pan and browns, about 1 hour.
- Pour off any drippings.
- Gently turn out loaf and let stand 10 minutes before slicing.
