4 Roma tomatoes, small diced
1 medium red onion, thinly sliced
1 bunch freshly chopped cilantro leaves
4 cloves garlic, minced
1 jalapeno, minced
1 lime, juiced
Salt and freshly ground black pepper
1 pound bag blue corn chips
1 pound bag white corn chips
2 cups shredded jalapeno Munster cheese
2 cup shredded smoked Cheddar
1 large Maui sweet onion
Oil
1 large beefsteak tomato, diced
1 Anaheim pepper, diced
Green onions, sliced, for garnish
Freshly chopped cilantro leaves, for garnish

Steps:

  • Pico de gallo: Place the tomatoes, red onions, cilantro, garlic and jalapeno in a serving bowl and combine well. Stir in the lime juice and season with salt and black pepper. Set aside.
  • Heat grill to medium heat.
  • Make a boat out of tin foil, add the corn chips sprinkle with cheese. Slice Maui onion thinly, brush with oil and place on the grill. Sprinkle chips with tomatoes and Anaheim pepper, cover with a foil tent and place on grill until cheese is melted. Remove chips from the grill. Transfer the grilled onions to a cutting board and dice. Sprinkle onions over chips and garnish with green onions and cilantro. Serve with pico de gallo.

  • Set a wide-mouthed 3-quart saucepan with lid over medium-high heat and add the oil to the pan. Season the chicken pieces with the chili powder and salt and toss the evenly coat. Add the chicken to the pan and sear for 3 minutes per side. Add the onions to the pan and saute for another 3 minutes. Add the garlic to the pan and saute for 1 minute. Pour the chicken stock over the chicken and bring to a boil. Reduce to a low heat and cover. Continue to cook the chicken until very tender, about 1 hour, stir the chicken to shred it and continue to cook, covered, for another 30 minutes. Once the chicken is cooked, stir and mash to shred the chicken meat and add the lime juice to the chicken. Set aside as you prepare the nachos.
  • In a medium saucepan, melt the butter over medium-high heat and whisk in the flour. Cook, stirring constantly, for 2 to 3 minutes. Do not allow the flour to color. While whisking constantly, add the milk in a steady stream. Add the green chiles and bring the sauce to a boil. Cook, stirring frequently, for about 5 minutes, or until the sauce is thickened and bubbly. Add the Cheddar, salt, and cayenne pepper and stir until the cheese is melted and the sauce is smooth. Cover and remove from the heat.

Bake, rotating pans halfway through, for 8-10 minutes or until chips are light golden brown (chips will crisp as they cool.) Set aside. (Omit this step if using store-bought tortilla chips.)
  • Meanwhile, heat a large, oven-safe skillet over medium-high heat. Add chorizo then cook through, 6-7 minutes, and then scoop onto a paper towel-lined plate to drain, reserving fat in the skillet. Season shrimp lightly with salt then add to the skillet and saute until just cooked through, 1-2 minutes. Remove to plate with chorizo.
  • Scrape out any excess fat from the skillet then arrange half the tortilla chips in the bottom. Top with half the cooked chorizo and shrimp, and half of the cheeses. Repeat layers then bake until cheese is melted, 5-7 minutes.
