2 cups fresh cranberries
½ cup water
3 egg yolks
1 large egg
¾ cup white sugar
¼ cup unsalted butter, diced

Steps:

  • Combine cranberries and water in a saucepan over medium heat; cook, stirring occasionally, until cranberries begin to open and pop, about 10 minutes. Lightly crush cranberries with a spoon or potato masher; remove from heat.
  • Combine egg yolks and egg in a bowl; add sugar and whisk until frothy and smooth. Spoon 1 tablespoon hot cranberry mixture into egg mixture and whisk immediately. Continue adding hot cranberry mixture, 1 tablespoon at a time and whisking after each addition, until 1/2 cup hot cranberry mixture has been incorporated.
  • Pour cranberry-egg mixture into hot cranberry mixture and immediately whisk together. Blend mixture with an immersion blender until curd is silky and smooth.
  • Cook curd over medium heat, whisking constantly, until a low boil is reach and curd coats the back of a spoon, about 5 minutes. Remove saucepan from heat. Add butter to curd and whisk continuously until incorporated.

Delicious over scones, oatmeal, or yogurt, this cranberry curd is a seasonal spin on traditional lemon curd. If you prefer a smoother texture, press the cranberry mixture through a fine mesh sieve after blending in the food processor. This makes enough to fill a pint jar.

1 (12 ounce) bag fresh cranberries
¾ cup water
½ cup white sugar
3 large egg yolks egg yolks
2 tablespoons butter

Steps:

  • Place cranberries in a medium saucepan. Add water and sugar and bring to a boil over medium heat. Reduce heat to medium-low and cook, stirring occasionally, until cranberries have burst, 8 to 10 minutes.
  • Pour cranberry mixture into a food processor or blender; blend until smooth, 10 to 20 seconds. Reserve 1/3 cup and return remaining cranberry mixture to the saucepan over low heat.
  • Whisk egg yolks together in a small bowl. Slowly add reserved cranberry mixture, whisking constantly. Slowly whisk egg-cranberry mixture back into the saucepan and continue whisking until thickened and the curd coats the back of a metal spoon, about 5 minutes. Add butter, 1 tablespoon at a time, whisking until melted and fully incorporated.
  • Pour into a sterile jar and allow to cool. Curd keeps in the refrigerator for up to 1 week.

1 cup sugar
One 8-ounce package cream cheese, at room temperature
One 14-ounce can sweetened condensed milk
1 1/2 cups milk
2 teaspoons ground cinnamon
2 teaspoons vanilla
Pinch salt
5 large eggs
1 cup mixed berries (blueberries, raspberries, blackberries), for garnish

Steps:

  • Preheat the oven to 350 degrees F.
  • To make the caramel, add the sugar and 2 tablespoons water to a pan and heat over medium-low heat, stirring to dissolve the sugar. Once the sugar is dissolved, do not stir anymore. Cook until the mixture turns amber brown, about 10 minutes. Brush down the sides of the pan as needed with a wet pastry brush to avoid crystallization. When the caramel is done, pour evenly into six 3/4- to 1-cup ramekins.
  • Add the cream cheese to the bowl of a stand mixer and whip until smooth. Add the condensed milk, regular milk, cinnamon, vanilla, salt and eggs and beat until smooth and the ingredients are incorporated. Divide evenly among the ramekins over the caramel.
  • Bring some water to a boil in a kettle. Place the ramekins in a large roasting pan and pour boiling water into the pan until it reaches about halfway up the ramekins. Bake until the custard is set, about 45 minutes. Allow to cool completely, then refrigerate until chilled.
  • To remove the flans from the ramekins, run a knife around the edge of each flan and invert onto individual serving plates. Garnish with the mixed berries.

GINGERBREAD JARS WITH CRANBERRY CURD

1 stick (8 tablespoons) unsalted butter, melted, plus extra butter at room temperature for greasing the pan
1/4 cup orange juice
1/2 cup golden raisins
1 cup molasses
1 cup (8 ounces) sour cream
2 2/3 cups all-purpose flour, divided
1 1/2 teaspoons ground ginger
3/4 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1 teaspoon kosher salt
1/3 cup crystallized ginger
1 1/2 cups sugar
1/4 cup cranberry juice
1/4 teaspoon kosher salt
6 large egg yolks
1 stick (8 tablespoons) unsalted butter, cut into pats
Sweetened whipped cream, for serving

Steps:

  • Make the gingerbread: Preheat the oven to 350 degrees F. Grease an 8-by-8-inch cake pan with a little softened butter and line with parchment paper, letting any excess hang over the edges of the pan.
  • Place the orange juice and raisins in a measuring cup and set aside to soak. In a mixing bowl add the melted butter, molasses and sour cream, whisking until well combined. Add 1 2/3 cups of flour, the ginger, baking soday, cinnamon, cloves and salt and whisk together until combined. Drain the raisins, then add them to the batter along with the remaining 1 cup of flour and the crystallized ginger. Combine with a silicone spatula, then pour into the prepared pan and bake until a cake tester inserted into the center comes out clean, about 45 minutes. Remove the cake from the oven and set aside to cool completely before cutting the cake into 1-inch cubes.
  • While the cake bakes, make the cranberry curd: Into a saucepan set over medium heat, add the sugar, cranberry juice and salt and whisk until smooth. Once the sugar is dissolved, whisk in the egg yolks, then add the butter. Reduce the heat to low and cook, stirring constantly, until the cranberry curd thickens and reaches 170 degrees F on an instant-read thermometer. Remove from the heat and transfer the curd to a bowl to cool.
  • To assemble: Place a few pieces of the gingerbread cubes in a small jar, add 2 tablespoons of the cranberry curd on top of the gingerbread and top with whipped cream.

1/4 cup finely chopped fresh cilantro
1 1/4 teaspoons kosher salt
Juice of 2 limes
1 large clove garlic, minced
Seeds from 1/2 medium pomegranate (about 1/2 cup)

Steps:

  • In a medium bowl add the onion and the chile. Split the avocados in half and remove the pits. Scoop the avocados into the bowl along with the cilantro, salt, lime juice and garlic. Mash everything together, and then fold in the pomegranate seeds.

1 1/4 cups sugar
1/2 cup lemon juice
1 tablespoon grated lemon zest
4 large egg yolks
3 large whole eggs
8 tablespoons (1 stick) cold butter, cut into pieces
1 cup pistachios
2 cups all-purpose flour
3/4 teaspoon baking powder
1/4 teaspoon salt
8 tablespoons (1 stick) unsalted butter, room temperature, plus for buttering pans
1 1/2 cups sugar
4 large whole eggs
3 tablespoons pistachio cream or 2 tablespoons pistachio paste
3/4 cup sour cream

Steps:

  • For the lemon curd: In a medium saucepan over low heat, combine the sugar, lemon juice, lemon zest, egg yolks and whole eggs, and whisk to combine. Cook, stirring frequently, until the temperature reaches about 168 degrees F on an instant-read thermometer, 6 to 10 minutes; the curd should be thick enough to coat the back of a spoon. Remove from the heat and whisk in the butter, a piece at a time, whisking each addition until fully combined.
  • Transfer the curd to a bowl and place a piece of plastic wrap directly on the curd to prevent a skin from forming. Let cool to room temperature, then refrigerate until chilled, at least 1 hour and up to overnight.
  • For the Bundt cakes: Preheat the oven to 350 degrees F.
  • Grind the pistachios to a powder in a small food processor or grinder.
  • Brush two 6-cavity mini Bundt pans with butter and dust with the pistachio powder.
  • In a medium bowl, whisk together the flour, baking powder and salt. Set aside.
  • In a stand mixer with the paddle attachment, beat the butter and sugar together on medium-high speed until light and fluffy, 2 to 3 minutes. Add the eggs, one at a time, beating until completely combined. Beat in the pistachio cream and sour cream.
  • Reduce the mixer speed to low and add the flour mixture in two additions. Spoon about 1/4 cup of the batter into each Bundt mold and smooth batter on top.
  • Bake until a toothpick inserted in the center comes out clean, 20 minutes. Invert the cakes onto a wire rack and let cool.
  • Fill each cake center with 2 tablespoons of the chilled lemon curd.

SPICY TOMATO AND CHEDDAR SOUP

2 tablespoons olive oil
2 cloves garlic, thinly sliced
1 small red onion, chopped
2 teaspoons fresh oregano leaves, chopped
2 cups chicken broth
1 teaspoon hot sauce
One 28-ounce can diced fire-roasted tomatoes
Kosher salt and freshly ground black pepper

2 cups grated sharp Cheddar
Croutons, recipe follows
2 cups cubed day-old French bread
2 tablespoons olive oil

Steps:

  • Preheat the broiler. Line a sheet pan with foil.
  • Place the tomatoes on the prepared sheet pan and broil until charred, 4 minutes.
  • Add the oil to a large pot set over high heat. Saute the garlic, onions and oregano. Reduce the heat to medium.
  • Add the broiled tomatoes to the pot and mix into the sauteed onion mixture. Break up the tomatoes with the mixing spoon so they cook evenly. Add the broth, hot sauce and canned tomatoes to the pot. Season with salt and pepper. Sprinkle the cheese, reserving 2 tablespoons for garnish, into the soup. Use an immersion blender to blend the soup until smooth. Simmer the soup on low for 5 minutes.
  • Divide the soup among four bowls, then garnish with the reserved cheese and some Croutons.
  • Preheat the oven to 375 degrees F.
  • Place the cubes on a sheet pan in a single layer and sprinkle the oil over the bread. Season with salt and pepper. Bake until crisp and golden, about 10 minutes.
