PERI PERI CHICKEN (HOMEMADE NANDO'S RECIPE)
This easy Peri Peri Chicken has all the flavour you know and love from Nando's but much cheaper. It's simple to make and cooks in 40 minutes.

Steps:
- Put all of the marinade ingredients in a bowl and mix well.
- Put the chicken in to a large bowl and add the marinade. Mix well. Put in the fridge for 30-60 minutes so the chicken marinates.
- Put in a baking dish or onto a baking sheet.
- Put in a preheated oven at 220°C/425°F/Gas 7 and bake for 40 minutes, or until the chicken is cooked through (reached an internal temperature of 74°C/165°F)

NANDOS CHICKEN
Steps:
- Marinate chicken in above for at least 3 hours. Place chicken with very little marinade in a flat pot. Reserve extra marinade for later use. cook on the stove until chicken is cooked. Then transfer to an oven tray. Pour left over marinade over chicken n cook in the oven until skin gets nice n crisp n browned. Continue basting chicken with marinade that has settled on the bottom of the tray. Just before serving. Heat little butter and nandos sauce of your choice and pour over chicken. Grill for a min or 2 n serve.
NANDO'S PERI PERI CHICKEN RECIPE

Made with homemade Peri peri Sauce this Portuguese Peri Peri Chicken is extremely easy to make & can be a fantastic easy appetizer or main course. Make this spicy, tangy, delicious South African Piri Piri Chicken at home without an oven or grill.

Steps:
- Take the chicken drumsticks & thighs in a clean dry bowl. I have used skinless chicken pieces.. You may also you chicken pieces with skin.
- Slash each piece of the chicken diagonally a few times (2-3 slashes each piece depending on their sizes).
- Add salt, paprika & lemon juice to the chicken pieces and give them a good rub.
- Next, add the homemade peri peri sauce and rub well so that the chicken pieces are well coated with the marinade.
- Cover the bowl with a cling film and pop it in the fridge. Allow the marinated chicken to rest for at least 3-4 hours. You may also leave it over night.
- Next, over medium heat set an iron skillet grill. Brush olive oil and arrange the chicken pieces shaking off the excess marinade without over crowding. Cook them roatating side to side after few minutes until fully cooked. It should take you about 30 mins approximately. Brush them with olive oil or drizzle oil on the skillet while cooking the chicken.
- Serve hot. Enjoy. You may garnish it with more peri peri sauce or use the left over sauce if any as a dip. It tastes fabulous.

- Mix all of the marinade ingredients (except for the Sriracha) together until well combined. Mix in 2-4 teaspoons of Sriracha, taste test, and work up from there until reaching your desired level of heat (or leave it out all together if you don't want any spice at all).
- Using 3/4 of the marinade, coat the chicken evenly on the outside, as well as under the skin where possible (the breast especially), until fully coated in sauce. Cover with plastic wrap and refrigerate over night if time allows. (I recommend a minimum marinade time of two hours for this chicken. The longer you leave it, the better the flavours.)
- Place chicken on well-greased grill over medium heat, skin-side down, for 10-12 minutes, until the skin begins to have a nice char on it. Add 2 more tablespoons of vegetable oil to the remaining marinade. Flip and baste with a small amount of sauce (not too much or it will burn on your grill plates). Close barbecue lid and cook for 40-45 minutes, flipping once or twice while cooking, until chicken is completely cooked through and juices run clear.

- Mix together all of the Peri Peri marinade ingredients (i.e. all the ingredients apart from the actual chicken!) in a large bowl. Place the chicken in the bowl, turning to coat each piece of chicken with marinade. (You can do this in a ziplock bag if you don’t like getting your hands messy!)
- Cover and marinate the chicken for 2 hours in the fridge or up to 24 hours if you have the time. Alternatively, just continue with the recipe.
- Heat your griddle/frying pan for 2 minutes over a high heat (see notes for alternative cooking methods). Place the chicken in the pan and cook for 7-9 minutes on each side (depending on thickness – you can check if your chicken is done by cutting into the thickest one – if it’s not raw and pink, you are good to go!).
