NEW WAVE-NEW FAVE BAKED TOFU OR TEMPEH

Yield Enough for 12 to 14 ounces of tofu or tempeh

Steps:
- 1. Combine the peanut butter, tamari, honey, apple cider vinegar, garlic, ginger, tomato paste, chipotle, and orange juice and zest in a food processor and buzz until the ginger is finely chopped.
- 2. To use the marinade, place the tofu in a nonreactive bowl or zip-top bag and pour or spoon this luscious mixture over it. Refrigerate the tofu, covered, overnight.
- 3. The next day, preheat the oven to 375°F and generously spray a nonreactive baking dish with oil (I use an 8 or 9 by 12-inch deep glass baking dish).
- 4. Place the tofu and its marinade in the baking dish, spreading the marinade as needed so both sides of the tofu slices get a good smear of it. Bake, turning once, until fragrant, firmed up, and golden to deep brown in spots with the marinade considerably thickened, about 30 minutes.

I am not a vegetarian but I quite enjoy this recipe as a meat substitute, especially when I use Tempeh

Steps:
- Spray a pyrex pie plate with oil.
- Put 1/4 of the soy in it.
- Cut the tofu or tempeh into small bite size pieces and put in the pie plate.
- Add the chopped mushrooms, garlic& ginger.
- Sprinkle remaining 3 tbsp of soy on top.
- Sprinkle with the parsley.
- Broil 6" from heat source for approximately 10 minutes or until the soy is bubbling and the tofu/tempeh is browned.

- Lemony Baked Tofu. Number one for our oven on a busy weeknight is this classic from the meatless masters at Moosewood restaurant. It’s on page 223 of Moosewood Restaurant New Classics cookbook, but I did find a link to share with you too.
- Black Pepper Tofu. This recipe is utterly remarkable in terms of taste, which is not surprising since it comes from Yotam Ottolenghi of Plenty fame. But nutritionally, it’s got some room for improvement which is why it didn’t make #1 on my list.
- Soy-Lime Roasted Tofu. This is easy, works equally well with tempeh, and has a very short ingredient list. If you’re in a pinch, forget marinating for an hour and just put it straight in the oven.
- Braised Tofu in Caramel Sauce. This recipe was originally in Sunset magazine, and I swear I’ve been making it for at least 20 years. (But according to the internet, it was published in 2002, so I’m a few months off with my calculations.)
- Teriyaki Tofu Triangles. You can’t go wrong with recipes from Nava Atlas. You just can’t. I’ve made this one with tempeh, and I don’t always follow the directions to cook on the stovetop.
- TLT Sandwich. Heidi strikes again. I dare say this is the perfect vegetarian sandwich, probably because of the special treatment the tempeh and the cherry tomatoes receive before you actually put them between two slices of (whole grain) bread.
- Orange Pan-Glazed Tempeh. Another reliably good recipe from Heidi Swanson at 101 Cookbooks. And another recipe that tastes equally yummy with tofu or tempeh, whichever you happen to have on hand.
- Sesame-Maple Roasted Tofu. Leave it to Eating Well to embrace this nutritional powerhouse and feature tofu in a magazine that isn’t specifically geared towards vegetarians, just healthy eaters.
- Peas, Carrots and Tempeh with Miso-Almond Sauce. Need a quick meatless meal with plenty of fiber and protein? Vegetarian Times happens to have a few thousand solutions to that problem, and this is one I keep making time and time again.
- Thai-Seared Tofu. This recipe was originally from Cooking Light long, long ago, but the best link I could find was to MyRecipes. I use their marinade recipe (sometimes leaving out the mint and crushed red pepper) and then cook in a bit of toasted sesame oil.
