4 slices bacon
2 onions, chopped
1 teaspoon summer savory
6 medium potatoes, peeled and diced
3 carrots, peeled and sliced
4 cups water
1 teaspoon salt
1 1/2 lbs cod fish fillets, cut into 1-inch chunks
1 (12 ounce) can evaporated milk
white pepper
2 tablespoons chopped fresh chives

Steps:

  • In a large, heavy saucepan, cook bacon over medium high heat for about 10 minutes or until crisp.
  • Chop the cooked bacon coarsely and set aside.
  • Drain off all but 1 tablespoons bacon fat from saucepan.
  • Add onions and savory to the saucepan. Cook, stirring occasionally, for 5 minutes or until softened.
  • Add potatoes, carrots, water and salt.
  • Bring to boil. Cover; reduce heat and simmer for about 20 minutes or until tender.
  • Add the cod chunks; simmer for about 5 minutes or until fish flakes easily.
  • Add milk and pepper, heat through.
  • Serve in bowls and garnish with the bacon and chives.

4 pounds haddock fillets, cut into 3/4-inch pieces
1/4 pound uncooked medium shrimp, peeled and deveined
1/4 pound bay scallops
4 bacon strips, diced
3 medium onion, quartered and thinly sliced
2 tablespoons all-purpose flour
2 cups diced peeled potatoes
4 cups milk
2 tablespoons butter
1 tablespoon minced fresh parsley
2 teaspoons salt
1/2 teaspoon lemon-pepper seasoning
1/4 teaspoon pepper

Steps:

  • Place haddock in a Dutch oven; cover with water. Bring to a boil over medium heat. Reduce heat; simmer, uncovered, for 20 minutes. Add the shrimp and scallops; simmer 10 minutes longer. Drain, reserving 2 cups cooking liquid; set liquid and seafood aside., In a soup kettle, cook bacon over medium heat until crisp; drain on paper towels. In the drippings, saute onions until tender. Stir in flour until blended. Gradually stir in reserved cooking liquid. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat. Add potatoes; cover and cook for 15-20 minutes or until potatoes are tender., Add the milk, seafood, butter, parsley, salt, lemon-pepper and pepper; heat through. Sprinkle with bacon.

1/2 pound sliced bacon, diced
2 medium onions, chopped
6 cups cubed peeled potatoes
4 cups water
1 pound bay or sea scallops, quartered
1 pound lobster meat, cut into 1-inch pieces
1 pound uncooked medium shrimp, peeled and deveined
1 pound cod, cut into 1-inch pieces
1 pound haddock, cut into 1-inch pieces
1/2 cup butter, melted
4 teaspoons salt
4 teaspoons minced fresh parsley

2 quarts whole milk
1 can (12 ounces) evaporated milk

Steps:

  • In a large soup kettle or Dutch oven, cook bacon over medium heat until crisp. Remove with a slotted spoon to paper towels; reserve drippings. Saute onions in drippings until tender. Add potatoes and water; bring to a boil. Cook for 10 minutes., Add the scallops, lobster, shrimp, cod and haddock. Cook for 10 minutes or until scallops are opaque, shrimp turn pink and fish flakes easily with a fork. Add the butter, salt, parsley and curry powder. Stir in milk and evaporated milk; heat through. Garnish with bacon, additional parsley, and oyster crackers, if desired.

Being from the Easy Coast, I've tried a lot of different chowders; however, my Mom's takes the cake. She makes a huge pot of this chowder every Christmas Eve and all of it is gone by Christmas night. Although it is not very healthy, it is an awesome treat once in awhile for any of us that love seafood! I normally throw in a dash of garlic and onion powder. Enjoy!

2 large onions, diced
3 carrots, sliced
7 potatoes, cubed
1 pound salmon, cut into chunks
1 pound cod, cut into chunks

Steps:

  • Fill a large pot halfway with lightly salted water; bring to a boil. Add onions and carrots; cook until slightly tender, 10 minutes. Add potatoes; cook until tender, 15 to 20 minutes.
  • Stir in salmon, cod, scallops, shrimp, lobster, and crab; cook over medium heat until salmon and cod are firm but chunks are still slightly translucent in the center, about 10 minutes. Drain half the water from the pot and add clams, heavy cream, and half-and-half. Place butter chunks atop the soup; season with salt and black pepper. 3 or 4 slices good bacon, finely chopped
3 tablespoons butter
1 large onion, finely chopped
1 stalk celery, finely chopped
2 cloves garlic, finely chopped
2 or 3 Yukon Gold (or other high starch potato such as Idaho or Russet) potatoes, peeled and chopped into small dice
250 ml bottle of clam juice
3 cups water
4 bay leaves
1 lb mixed seafood, de-boned and cut into small bits
1 cup cream (18 per cent milk fat, known here as "coffee cream").
pinch of thyme
salt and plenty of fresh cracked black pepper

Steps:

  • 1. Start by heating a large soup pot, preferably stainless steel (not non-stick) over medium high heat, then adding the bacon. Stir and fry the bacon until it's nicely browned. Pour off all but about a tablespoon of the fat that accumulates. 2. Reduce heat to medium and add the butter. 3. Add the onion and celery and saute gently for about five minutes until the onion is nice and soft. Add one (just one!) clove of the garlic and stir for a few seconds. 4. Add in the potato, the clam juice, water and bay leaves and bring the mixture to a rapid boil over high heat. 5. Keep the heat at medium-high and boil it hard for 10 minutes. This helps to release starch from the potato which helps to thicken the chowder later. 6. Reduce heat to medium-low and add in the seafood. Simmer very gently for five to eight minutes. 7. At this point, the chowder can be cooled and stored until you're ready to finish and serve it later. When ready to serve, add in the cream, a pinch of dried thyme, a very finely minced clove of garlic and salt and pepper to taste. 8. I personally like a chowder that has that rich flavour of fresh garlic (not too much though) and is very peppery. 9. Bring the pot just to a steaming hot (don't let it boil) temperature over medium-low heat, about ten minutes. Remove and discard the bay leaves. Serve with bread, biscuits or crackers and a side donair.

8 large shrimp, raw, peeled and deveined
2 tablespoons butter
1 cup onion, finely chopped
1 cup celery, finely chopped
1 cup carrot, finely chopped
1/2 teaspoon dried savory (or thyme)
4 teaspoons all-purpose flour
2 cups chicken stock
1 teaspoon salt
1/4 teaspoon pepper
1 cup milk
1/2 cup 18% cream

Steps:

  • Cut cod and shrimp into bite-size pieces; set aside.
  • In large saucepan, melt butter over medium-high heat.
  • Sauté onion, celery, carrot and savory until softened, about 5 minutes.
  • Stir in flour. Add stock, salt and pepper; simmer 15 minutes.
  • Gently stir in cod and shrimp; simmer just until cod is opaque and shrimp is pink, about 3 minutes. Don't over cook the seafood.
  • Pour in milk and cream; heat through.

  • In a large stockpot, melt ½ a stick of butter over medium heat, and sauté the onion, celery and carrots for 5 minutes. Season with a little salt and black pepper. Add remaining butter and the flour and using a wooden spoon, stir the butter and flour together to make a paste, which will thicken the chowder.
  • Cook the roux for a minute and increase the heat to medium high. Gradually add the two cartons of seafood stock, stirring as you go. Make sure to stir out any lumps that may have formed in the roux. Add the potatoes and simmer for about 10 minutes.
  • Add the heavy cream and the milk, and return the chowder to a low simmer. It is now important not to boil the chowder, as the dairy may curdle. For Newfoundland twist, add dried savory. As a trick to prevent heartburn, which some complain of from savory, rub the herbs in the palm of your hand to break it into smaller pieces.
  • Cut the cod and salmon into 1-inch chunks, quarter the scallops and de-vein and remove the shells from the shrimp. Once the chowder begins to thicken, add the seafood to the pot and stir occasionally. Cook for approximately 10 more minutes on a gentle simmer until the chowder has thickened, the potatoes are tender, and the seafood is cooked.
