Coconut date balls are little balls of nutrition made with dates and nuts and then coated in shredded coconut - an easy-to-make sweet & healthy vegan snack!

10-12 medjool dates
2 cups pecans
Pinch sea salt
¼ cup desiccated coconut

Steps:

  • Pit the medjool dates and soak them in warm water for 10 minutes until they soften
  • Place the pitted dates and pecans in the bowl of a large food processor. Blend on high until a thick "dough" is formed and the mixture feels sticky.
  • Scoop about 1-2 tablespoons of the mixture and use your hands to roll it into a ball. If you have time you can let them set in the fridge for 5 minutes.
  • Roll the energy bites into desiccated or shredded coconut pressing gently so they adhere. Makes about 12-14 bites.

1 cup white sugar
1 cup chopped dates
1 teaspoon vanilla extract
1 tablespoon butter
3 cups crispy rice cereal
1 cup flaked coconut

Steps:

  • In a medium saucepan over medium heat, combine the eggs sugar and dates. Bring to a boil, stirring occasionally, and boil for 5 minutes. Remove from heat and stir in the butter and vanilla. Mix in crispy rice cereal. Butter hands and roll the mixture into walnut sized balls. Roll the balls in coconut. Serve.

These energy balls are the perfect healthy afternoon snack! They're super chewy and loaded with coconut and dates making them a delicious and easy homemade hiking snack.

8 Medjool dates, pitted*
1 cup old-fashioned rolled oats
1/2 cup unsweetened shredded coconut
2 Tbsp maple syrup (honey also works)
1 Tbsp coconut oil, room temperature
1/8 tsp salt

Steps:

  • Add the pitted dates to a food processor and pulse until the dates break down into smaller pieces. About 1-2 minutes.
  • Add in oats, coconut, maple syrup, oil, and salt.
  • Process until the mix turns crumbly and everything is well incorporated. About 1-2 minutes. The mix should stick together when you form a ball, but it shouldn't stick to your hands. Do not over-process or you'll lose texture in the final energy balls.
  • Roll into 8-10 bite-sized balls and set them in the fridge to firm up. Enjoy! These will keep well for about 5-7 days.
  • For hikes, grab a few energy balls and store them in a stasher bag in your backpack for an easy snack on the trails!

1/2 cup nuts, chopped
4 cups crispy rice cereal

Steps:

  • Melt margarine in large pot (4 quart or larger).
  • Add sugar, egg, and dates.
  • Stir constantly over low to medium heat.
  • Cook approximately 5 minutes until mixture thickens.
  • Remove from heat. Add chopped nuts and rice cereal.
  • Roll into walnut-sized balls; then roll in coconut.

  • Wrap each ball individually in parchment paper or bakery tissue paper, place in a sealable plastic freezer bag and keep frozen until ready to eat.
