Super easy and delicious NO ROLL Sugar Cookies with a delicious frosting. No rolling pin needed for these - just drop and bake!

1/3 cup shortening
1/3 cup butter
3/4 cup sugar
1 egg
1 tsp vanilla extract
1/4 tsp almond extract
1 tsp baking powder
1/2 tsp salt
1 1/2 cups all-purpose flour (plus 2 tbsp )
1/2 cup butter (softened)
1 tsp vanilla extract
2 tbsp milk
2 cups powdered sugar

Steps:

  • Preheat oven to 350. Line cookie sheet with parchment paper.
  • In bowl or stand mixer cream shortening, butter and sugar until fluffy. Add egg and extracts and mix well.
  • Combine baking powder, salt and flour in a separate bowl. Gradually add to the wet mixture until blended.
  • Using cooking scoop, lightly roll dough ball in hands, place on parchment paper lined baking sheet and press top of cookies half way down.
  • Bake for 10-12 minutes.
  • For frosting, beat butter until fluffy using a hand mixer. Add vanilla and milk. Blend lightly. Add powdered sugar one cup at a time.Texture should be solid but soft. Frost cookies.

1 egg
2 1/3 cups Gold Medal™ all-purpose flour

Steps:

  • Heat oven to 375°F. Line cookie sheets with cooking parchment paper; set aside.
  • In large bowl, beat 1 cup granulated sugar and butter with electric mixer on low speed or with spoon until light and fluffy. Stir in vanilla, nutmeg and egg. Stir in flour and baking soda. This recipe is from Wilton and was on the back of some cookie cutters I recently purchased. I liked that it didn't require chilling. It's a rich, buttery cookie, very tasty.

1 cup unsalted butter
1 1/2 cups granulated sugar
1 egg
2 teaspoons vanilla
2 3/4 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt

Steps:

  • Preheat oven to 400 degrees.
  • In mixing bowl, cream butter with sugar until light and fluffy. Beat in egg and vanilla.
  • Mix flour, baking powder, and salt in a separate bowl; add to butter mixture 1 cup at a time, mixing after each addition.
  • Do not chill dough. Divide dough into two balls. On a floured surface roll each ball into a circle approximately 12" wide and 1/8" thick. Dip cookie cutter in flour and cut out cookies.
  • Bake on ungreased cookie sheet for 6 - 7 minutes or until cookies are lightly browned. It helps to line pans with parchment paper for easy cookie removal.

  • Heat oven to 400°F. In large bowl, stir all ingredients except granulated sugar until soft dough forms.
  • Shape dough into balls, about 1 inch in diameter; roll in granulated sugar to coat. On ungreased cookie sheets, place balls about 2 inches apart. Flatten balls slightly with bottom of glass.

1 teaspoon vanilla

Steps:

  • Mix in order of recipe. Do not add more flour. Drop by teaspoon on a greased cookie sheet.
  • Flatten each cookie with the flat bottom of a water glass that has been dipped in white granulated sugar. These are baked as soon as they are mixed; re-kneed to cool dough.
  • Bake at 350 degrees for 15 minutes.
