I was a theater major in college, and our director's mother always made sure we were well fed. I was particularly fond of her pimiento cheese sandwiches and tried making a similar spread for crackers. It tastes just as good as I remember! -Katrina Jameson, Brandon, Mississippi

1 package (8 ounces) cream cheese, softened
2 jars (4 ounces each) diced pimientos, drained
1/4 cup mayonnaise
2 tablespoons finely chopped onion
1 pound sharp cheddar cheese, shredded (about 4 cups)
Saltines

Steps:

  • In a large bowl, mix cream cheese, pimientos, mayonnaise and onion until blended. Stir in cheddar cheese. Refrigerate at least 2 hours before serving. Serve with crackers.

1 package (8 ounces) cream cheese, softened
2 cups shredded cheddar cheese
2 green onions, chopped
1 jar (2 ounces) diced pimientos, drained
2 tablespoons butter, melted
2 teaspoons Worcestershire sauce
Assorted crackers

Steps:

  • In a bowl, beat cream cheese until fluffy. Beat in cheddar cheese, onions, pimientos, butter and Worcestershire sauce. Press into a small bowl; smooth top. Cover and refrigerate. Remove from the refrigerator 15 minutes before unmolding. Serve with crackers.

1 cup chopped pecans (Toasted)
4 ounces diced pimentos (well drained)
8 ounces low-fat cream cheese (Neufchatel preferred, at room temperature)
5 tablespoons mayonnaise
8 ounces extra-sharp cheddar cheese (freshly shredded)
12 ounces swiss cheese (freshly shredded)
1/4 teaspoon fresh coarse ground black pepper
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon Worcestershire sauce

Steps:

  • Toast pecans in a medium-hot iron skillet ~ constantly stirring to prevent burning! Set aside to cool.
  • Drain pimentos in a wire strainer, covered with a folded paper towel, for about 1/2 hour.
  • In a large bowl, combine all ingredients. Use a food processor, if you have one!
  • Refrigerate cheese spread for a few hours, to allow flavors to meld.
  • Makes approximately 4 cups. Serve with crackers, celery sticks, sliced apples, or make toasted sandwiches!
  • Enjoy!

1 cup mayonnaise
1 pound shredded sharp Cheddar cheese
½ cup chopped pecans
salt and freshly ground black pepper to taste

Steps:

  • In a medium bowl, stir together the chopped pimentos, their juice, and the mayonnaise. Add the cheese, and stir until thoroughly coated. Stir in the pecans and season with salt and pepper. Serve immediately, or refrigerate until serving.
