1 (9-inch) pie shell
1 ½ cups sugar
¼ cup unsweetened cocoa powder
½ cup self-rising flour
3 large eggs, unbeaten
1 ½ sticks butter, melted
1 ½ teaspoons vanilla extract
1/4 cup confectioner's sugar, optional
whipped cream or ice cream, optional

Steps:

  • Preheat the oven to 350 degrees. Prick the sides and bottoms of the prepared pie crust with a fork. Bake for 10 to 12 minutes until pie crust is lightly browned. Set aside.
  • In a medium bowl, add the sugar, cocoa powder, and flour. Stir until blended.
  • Using a mixer, blend in the eggs and melted butter until smooth. Stir in the vanilla.
  • Pour the filling into the pie crust. Bake for 20-25 minutes or until a knife inserted in the center of the pie comes out clean.
  • Dust with confectioner's sugar, if desired. Serve slices with a scoop of vanilla ice cream or a tablespoon of whipped cream, if desired.

Steps:

  • Preheat oven to 375.
  • In a saucepan melt the stick of butter and the chocolate.
  • Add a cup of sugar.
  • Beat two eggs in a separate bowl.
  • Take the chocolate mixture off of the stove and mix two tablespoons or so of the chocolate to the eggs to temper them.
  • Now you can add the eggs to the chocolate without fear of them scrambling!
  • Pour into a pie shell and bake at 375 for 20-25 minutes.

Steps:

  • Beat eggs with 3/4 cup of sugar, add melted butter and vanilla.
  • In a separate bowl, mix the other 3/4 cup sugar with the cocoa, salt and flour.
  • Add milk and a little hot water, just enough to dissolve the mixture.
  • Combine all ingredients and pour into two prepared pie crusts and bake for 30 minutes.
  • Top with whipped cream.

2 cups white sugar
½ cup cocoa
1 cup milk
4 tablespoons butter
1 teaspoon vanilla extract

Steps:

  • Grease an 8x8 inch square baking pan. Set aside.
  • Combine sugar, cocoa and milk in a medium saucepan. Stir to blend, then bring to a boil, stirring constantly. Reduce heat and simmer. Do not stir again.
  • Place candy thermometer in pan and cook until temperature reaches 238 degrees F(114 degrees C). If you are not using a thermometer, then cook until a drop of this mixture in a cup of cold water forms a soft ball. Feel the ball with your fingers to make sure it is the right consistency. It should flatten when pressed between your fingers.
  • Remove from heat. Add butter or margarine and vanilla extract. Beat with a wooden spoon until the fudge loses its sheen. Do not under beat.
  • Pour into prepared pan and let cool. Cut into about 60 squares.

½ cup unsweetened cocoa powder
1 cup whole milk
4 tablespoons unsalted butter, sliced and softened
1 teaspoon vanilla extract

Steps:

  • Grease an 8-inch square baking pan.
  • Place sugar and cocoa powder in a medium saucepan; pour in milk and stir until blended. Set heat to medium-high and stir constantly until mixture comes to a boil.
  • Reduce heat to low and place a candy thermometer in the pan. Let the mixture simmer without stirring until the temperature reaches 238 degrees F (114 degrees C) when measured with a candy thermometer, about 10 minutes. If you don't have a candy thermometer, drop a small amount of the mixture into cold water; if it forms a soft ball that flattens when removed from the water and placed on a flat surface, it's ready.
  • Remove from the heat. Allow to cool to 110 degrees F (43 degrees C), 50 to 70 minutes. Do not disturb fudge as it's cooling.
  • Add butter and vanilla to the fudge. Beat with a wooden spoon until well incorporated and fudge loses its sheen; do not under beat.
  • Pour fudge into prepared pan and press to flatten. Let cool at room temperature or in the refrigerator before cutting into 1-inch squares.
