- In a heavy, 2 quart saucepan, combine the sugar, corn syrup, hot water, and salt. Cook and stir until the sugar dissolves and the mixture comes to a boil. Then cook to hard ball stage without stirring, 250 degrees F (120 degrees C.) Frequently wipe crystals forming on the sides of the pan, using a pastry brush dipped in water. Remove from heat.
- Just as the syrup is reaching temperature, begin whipping egg whites: In a large glass or stainless steel mixing bowl, beat egg whites until stiff peaks form. Pour hot syrup in a thin stream over beaten egg whites, beating constantly with the electric mixer at medium speed. Increase speed to high, and continue beating for about 5 minutes. Add vanilla; continue beating until the mixture becomes stiff and begins to lose its gloss. If it is too stiff, add a few drops hot water.
- Immediately drop by teaspoonfuls onto waxed paper. For a decorative flair, twirl the top with the spoon when dropping. Let stand until set. Store in an airtight container at room temperature.

- Place egg whites in the bowl of a stand mixer; let stand at room temperature for 30 minutes. Meanwhile, line three 15x10x1-in. pans with waxed paper., In a large heavy saucepan, combine the sugar, water and corn syrup; bring to a boil, stirring constantly to dissolve sugar. Cook, without stirring, over medium heat until a candy thermometer reads 252° (hard-ball stage). Just before the temperature is reached, beat egg whites on medium speed until stiff peaks form., Slowly add hot sugar mixture in a thin stream over egg whites, beating constantly and scraping sides of bowl occasionally. Add vanilla. Beat until candy holds its shape, 5-6 minutes. (Do not overmix or candy will get stiff and crumbly.) Immediately fold in pecans., Quickly drop by heaping teaspoonfuls onto prepared pans. Let stand at room temperature until dry to the touch. Store between sheets of waxed paper in an airtight container at room temperature.

- Line 1-2 baking sheets with parchment paper.
- In a 2-quart heavy pot combine the sugar, corn syrup, water and salt.
- Cook over low heat and stir until the sugar fully dissolves.
- Increase the heat to high and cook the mixture until it reaches 260 degrees (hard ball stage). Do not stir!
- While the sugar mixture is cooking place the egg whites in a very clean and dry bowl of a stand mixer.
- When the sugar mixture reaches about 230 degrees start to beat the egg whites until stiff peaks form.
- Very carefully pour the hot sugar mixture in a steady stream over the egg whites while the mixer is running at high speed.
- Add in the vanilla and continue to beat for 5-10 minutes until the mixture is stiff enough to shape and is no longer shiny.
- Stir in the cherries.
- Using a small ice cream scoop or a tablespoon drop mounds onto the parchment lined baking sheets.
- Top with sprinkles if using.
- Let rest at room temperature until set.

- In a medium saucepan over low heat, combine sugar, corn syrup, vanilla extract and water. Bring to a boil, stirring to dissolve sugar. Heat to 250 to 265 degrees F (121 to 129 degrees C), or until a small amount of syrup dropped into cold water forms a rigid ball.
- Meanwhile, beat egg whites until stiff; slowly add gelatin while beating until stiff peaks form. Continue beating and pour syrup mixture in a thin stream over the egg mixture. Beat until mixture thickens and losses its gloss. Stir in pecans.
- Drop by teaspoonfuls onto wax paper. Cool; store in airtight containers.

You MUST have a heavy duty stand mixer to make this. It is my absolute all time favorite Christmas candy. Please make sure your walnuts are very fresh. This is a delicate candy and any off taste in the nuts will ruin it. 3 c. sugar 1/2 c. light corn syrup 2/3 c. water 2 egg whites 1/8 tsp. salt 1 tsp. vanilla 1 c. chopped nuts Bring sugar, corn syrup, salt and water to a boil. Cook to hard ball stage, (250-265 F) wiping any crystals from side of pan from time to time. While syrup is boiling, beat egg whites until they form stiff peaks. Very slowly pour a thin stream of syrup into the stiff egg whites keeping mixer at med high speed for as long as possible, reducing speed to med as mixture thickens. - In a large saucepan over medium high heat, combine the sugar, corn syrup, and the water. Cook and stir constantly until boiling. Clip the candy thermometer to the pan and without stirring over medium heat, bring the temperature up to 260°F (hard ball stage). This will take approximately ten minutes.
- When the candy is nearly to the hard ball stage, begin the next step. In a large mixing bowl, attached to an electric freestanding mixer, beat egg whites until stiff peaks form.
- Gradually, in a slow steady stream, pour in the hot mixture, beating on high the entire time. This should take about 3 minutes. Scrape the sides of the bowl and add in your Vanilla extract.
- Continue to beat on high speed for approximately 6-10 minutes, until the candy starts to lose it’s glossy finish. When the beaters are lifted, the mixture should mound on itself, and not flatten. You can test it by dropping a spoonful onto a parchment paper lined baking sheet. If it stays mounded, the mixture has been beaten sufficiently. If it begins to flatten, continue beating and check again after a minute or so.

- Line 3 baking sheets with wax paper and set aside. In a 3.5 quart saucepan fitted with a candy thermometer, whisk together sugar, corn syrup and water. Heat over medium heat until sugar has dissolved, stirring occasionally. Increase heat to high and stop stirring. Continue cooking until candy thermometer reads 250 degrees F.
- While the syrup mixture is heating, beat egg whites in a stand mixer until stiff peaks form. Once syrup has reached 250 degrees, slowly and carefully stream mixture into egg whites while mixer is still beating. You should be streaming for about 2 minutes. Add vanilla extract.
- Let mix on medium speed for another 15-20 minutes, or until mixture is no longer shiny. If mixer and divinity mixture are still hot, turn off mixer and let rest 2-3 minutes every five minutes to give the mixture a chance to cool.
- Divinity is ready when the mixture is no longer shiny and holds its shape when spooned onto wax paper. The mixture should not spread. Test a spoonful, and if it spreads, continue mixing.
