This recipe was sent via email from All-recipes with a video showing onion rings that not only fry up crispy but STAY that way. The reason he reported is in the secret ingredient, instant mashed potatoes in the batter and panko crumbs. As an update: Made these and while the taste is good and they certainly stayed crispy, for some reason I had trouble getting the coating to stick when cooking. I think maybe I didn't have the oil hot enough when I started, or maybe I needed a 2nd breading?? Not really sure, but if anyone has an idea please let me know.

1/2 cup all-purpose flour
1/4 cup cornstarch
2 tablespoons instant mashed potatoes
1/4 teaspoon cayenne pepper
1 cup club soda, cold
2 -3 cups panko breadcrumbs (Japanese-style breadcrumbs)
2 teaspoons salt, to taste
vegetable oil (for frying)
2 -3 yellow onions, cut into 1/4-inch rings

Steps:

  • Mix flour, cornstarch, mashed potatoes and cayenne together.
  • Add soda and let sit about 10 minutes allowing batter to thicken.
  • Place Panko in seperate plate with salt to taste.
  • Slice onions into 1/4 inch rings.
  • Heat oil.
  • Dip onion rings first in batter then in Panko and fry until done (about 2-3 minutes).
  • Transfer to wire rack to drain.

1 1/4 cups flour
1 teaspoon baking powder
1 teaspoon salt
1 egg
1 cup milk, as needed
3/4 cup breadcrumbs, dry
seasoning salt
oil, for frying approx 1 qt

Steps:

  • Heat the oil in a deep-fryer to 365 degrees F.
  • Separate the onion slices into rings, and set aside.
  • In a small bowl, stir together the flour, baking powder and salt.
  • Dip the onion slices into the flour mixture until they are all coated; set aside.
  • Whisk the egg and milk into the flour mixture using a fork.
  • Dip the floured fings into the batter to coat, then place on a wire rack to drain until the batter stops dripping.
  • The wire rack may be placed over a sheet of aluminum foil for easier clean up.
  • Spread the bread crumbs out on a plate or shallow dish.
  • Place rings one at a time into the crumbs, and scoop the crumbs up over the rings to coat.
  • The coating should cling very well. Repeat with remaining rings.
  • Deep fry the rings a few at time for 2 to 3 minutes, or until golden brown.
  • Remove to paper towels to drain. Seasoning with season salt, and serve.

  • 1.Heat the oil in a deep-fryer to 365 degrees F (185 degrees C). 2.Separate the onion slices into rings, and set aside. In a small bowl, stir together the flour, baking powder and salt. 3.Dip the onion slices into the flour mixture until they are all coated; set aside. Whisk the egg and milk into the flour mixture using a fork. Dip the floured rings into the batter to coat, then place on a wire rack to drain until the batter stops dripping. Add the onions a handful at a time, seal bag and mush the bag until all slices are coated, take out with tongs and put on wire rack over foil or wax paper...then put my Panko breadcrumbs into a big tupperware bowl, add the onions a handful at a time (with tongs), put the lid on and shake shake shake. Put the onions from the bowl directly into the hot oil with clean tongs, woo-hoo no mess!!!

2 cups buttermilk
1/4 teaspoon hot sauce
1 egg, beaten
1 cup all-purpose flour
1 cup cornmeal
2 teaspoons seasoned salt
1/4 teaspoon cayenne

Steps:

  • Preheat vegetable oil in a deep-fryer to 375 degrees F.
  • Slice the onions into 3/4-inch rings and separate. Add the buttermilk, hot sauce, and egg to a large casserole dish and whisk to combine. Stir in the onion slices and allow to soak for 3 to 5 minutes. Put the flour and cornmeal in a large brown paper bag and season with the season salt and cayenne. Add the onion rings, to the paper bag in batches, and shake until they are covered with the flour mixture. Make sure to get rid of the excess buttermilk before adding to the bag.
  • Add the onions in batches to the hot oil, being careful not to overcrowd the fryer. Fry until golden brown, about 2 minutes. Transfer to a serving platter and season with salt when they come out of the hot oil.

1 yellow onion - ends trimmed off, peeled, and cut crosswise into 1/2-inch slices
2 egg whites
2 tablespoons milk
1 pinch cayenne pepper, or to taste
3 cups panko bread crumbs, or more if needed
½ cup all-purpose flour
salt and ground black pepper to taste
cooking spray

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Separate onion slices into individual rings.
  • Whisk egg whites with milk in a bowl until thoroughly combined; season egg mixture with a pinch of cayenne pepper. Place panko crumbs into a separate bowl.
  • Place onion rings into a large resealable plastic bag. Add flour, salt, and black pepper; seal bag and shake until rings are well coated with flour.

2 teaspoons salt, divided
2 teaspoons ground black pepper, divided
3 egg whites
1 cup milk
1 tablespoon white vinegar
3 large sweet onions, peeled and sliced into thick rings

Steps:

  • Heat the oil in a large heavy skillet over medium-high heat, or deep-fryer to 375 degrees F (190 degrees C).
  • Place the flour in a shallow baking pan, and stir in 1 teaspoon of salt and 1 teaspoon of pepper. In a medium bowl, whisk together the egg whites, milk, vinegar, and remaining salt and pepper until frothy.
  • Dip the onion rings in the wet ingredients then into the flour mixture until coated. Then dip in the egg white mixture again, and then into the flour again.
