Corn Fritters image

Nothing warms up a cool night like a plateful of old-time corn fritters! Dig in, these are delicious!

3 cups oil for frying
1 cup sifted all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
¼ teaspoon white sugar
1 egg, lightly beaten
½ cup milk
1 tablespoon shortening, melted
1 (12 ounce) can whole kernel corn, drained

Steps:

  • Heat oil in a heavy pot or deep fryer to 365 degrees F (185 degrees C).
  • In a medium bowl, combine flour, baking powder, salt and sugar. Beat together egg, milk, and melted shortening; stir into flour mixture. Mix in the corn kernels.
  • Drop fritter batter by spoonfuls into the hot oil, and fry until golden. Drain on paper towels.

Two co-workers who also subscribe to Taste of Home helped me convince the owners of The Old Tavern, Gary and Ralph Haskins, to give out the recipe. It has been a secret for nearly 200 years.-Laura Lagasse, Unionville, Ohio

Number Of Ingredients 9

1 cup all-purpose flour
1-1/2 teaspoons baking powder
2 eggs
1/3 cup milk
1 can (15-1/4 ounces) whole kernel corn, drained
1 tablespoon butter, melted
Oil for deep-fat frying
Confectioners' sugar
Maple syrup, warmed

Steps:

  • In a large bowl, combine flour and baking powder; set aside. In another bowl, beat the eggs and milk; stir in corn and butter. Stir into dry ingredients just until blended. , In a deep-fat fryer or electric skillet, heat oil to 375°. Drop batter by heaping teaspoonfuls into hot oil; fry for 2-3 minutes or until golden brown. Drain on paper towels. Dust with confectioners' sugar. Serve with syrup.

Grandma's Corn Fritters image

This one has been in our family for as long as I can remember. A long time ago my grandma used to use fresh corn, but as the family got BIG and there were a lot of mouths to feed (more to make too) she went to can corn just to make it faster. I cut the recipe in half.

2 (15 ounce) cans whole kernel corn
4 eggs, slightly beaten
4 tablespoons milk
3 tablespoons butter, melted
salt and pepper (optional)
flour

Steps:

  • Combine corn, eggs, milk, butter, salt and pepper to taste, if using.
  • Add flour gradually, just enough to hold mixture together.
  • Amount of flour depends on size of eggs (and weather according to my grandma!).
  • Heat 1/2 inch of oil in frying pan.
  • Form patties whatever size you'd like, I do small ones so my kids can hold them.
  • Fry in hot oil until golden brown.
  • Serve as side dish OR if you left out the salt and pepper serve with syrup on the side.
  • You can also dust with powdered sugar.

1 cup all-purpose flour
1 1/2 teaspoons baking powder
2 eggs
1/3 cup milk
1 1/2-2 cups leftover corn or 1 (15 ounce) can corn, drained
1 tablespoon butter, melted
oil (for frying)
salt and pepper

Steps:

  • Combine flour and powder in a large bowl.
  • In a medium bowl, beat eggs and milk.
  • Stir in corn and butter.
  • Stir gradually into dry ingredients until just blended.
  • In a deep fryer, electric frying pan or chicken fryer, heat oil until 375 degrees.
  • Drop batter into heaping teaspoonfuls into hot oil and fry for 2- 3 minutes.
  • You can also do this using less oil in a skillet, just flatten them a bit with the back of the spoon and then turn them like pancakes.
  • Drain on paper towels.
  • Some people put confectioner's sugar or syrup on these, we eat them plain.

Dust with confectioner's sugar. Serve with syrup.
  • Notes : I used only 11ounces of corn and it turned out great. I tried the full 15-1/4 ounces and it was too much corn. Also, we just used the confectioner's sugar, the syrup made it way too sweet for us. If you want, put a little confectioner's sugar into a bowl and dip a little before you eat it.
