GRANDMA'S CHOCOLATE TEXAS SHEET CAKE



Grandma's Chocolate Texas Sheet Cake image

This is hands-down my all-time favorite cake! I fell in love making it after my grandmother shared the recipe with me. This cake is super quick, easy, and fun to make! Definitely recommend this for first time bakers and anyone else who would love to take a bite out of a delicious chocolate Texas sheet cake.

1 cup salted butter
1 cup water
3 tablespoons cocoa powder
2 cups all-purpose flour
2 cups white sugar
½ teaspoon salt
½ cup buttermilk
2 large eggs
1 teaspoon baking soda
1 teaspoon vanilla extract
½ cup unsalted butter
6 tablespoons milk
3 tablespoons cocoa powder
1 teaspoon vanilla extract
2 cups confectioners' sugar

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 10x15-inch cake pan.
  • Combine butter, water, and cocoa powder for cake in a saucepan over medium heat. Cook until butter has melted and mixture comes to a boil. Remove from the heat and cool slightly.
  • Meanwhile, mix flour, sugar, and salt together in a large bowl. Beat buttermilk, eggs, baking soda, and vanilla extract together in a separate bowl.
  • Add melted butter mixture to the flour mixture, then add buttermilk-egg mixture and beat until thoroughly combined. Pour into the prepared cake pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 20 minutes. Remove cake from the oven and cool on a wire rack for 5 minutes.
  • Meanwhile, combine butter, milk, cocoa powder, and vanilla extract for the frosting in a saucepan over medium heat. Stir until butter melts, then stir in powdered sugar. Spread frosting over the warm cake.

This makes a very tender brisket for sandwiches. In the real olden days this is how brisket was made in Texas

1 (5 -6 lb) beef brisket, flat
1 dash salt
1 dash black pepper
1 dash lemon juice
1 dash Worcestershire sauce
3 garlic cloves
1 dash thyme
1 dash crushed red pepper flakes
16 buns
16 ounces mayonnaise
16 ounces dill pickles
2 onions, sliced

Steps:

  • Cover one brisket flat with water to in large pot and cook on stovetop. Add a little salt and black pepper, a drop or two of worceshire, a little splash of lemon juice, crush 3 or 4 cloves of garlic and add to pot. a small sprinkling of thyme. when brisket begins to pull apart with two forks you may want to add a little crushed red pepper.
  • The key here is not to over-do the spices, it should still taste like beef and not chili or spicy bbq. You could basically just boil the meat until tender and add salt and pepper after its done. Serve on plain warmed buns slathered with mayonnaise with dill pickles and onion slices.
  • As the brisket cooks the water will go away. You may need to add a little water during the cooking process, but near the end when the meat muscle fibers begin to break down the water will just sort of dissolve and the meat will be very tender. Cooking time is determined by size of meat and heat. You could speed it up some with a higher setting, but I cook on big burner on a setting of about 3-4 (out of 10max) after bringing it to a boil. A typical trimmed brisket flat works great for this because it fits in a stovetop pot, and doesn't take too long- should be ready in 4-5 hours cooked slowly until the meat is easily pulled apart with two forks.

  • Chicken Fried Steak and Cream Gravy. Once you have had a real honest to goodness Texas style Chicken Fried Steak, you will never be able to eat those frozen breaded things they call food again.
  • Barbecue Spare Ribs! I always wondered how a pig could "spare" his ribs, but I was always glad that he could! This is the very easy way to make barbecue ribs, not out on the grill as most Texans prefer, but in the oven!
  • Brisket. Barbecue brisket is definitely cooked on the grill or smoked in a smoker. There is no other way to cook it. You can smoke a brisket on Sunday and eat great sandwiches all week long.
  • Frito® Pie. I think the only place in the world you can get real Frito® Pie is in Texas! Maybe you don't even know what it is! You could be living in Cincinnati, for instance, and think you have some real chili.
  • Enchiladas and State Fair Corn Dogs. I really had two choices here that I couldn't decide on. Tex-Mex food is really good, and homemade enchiladas are an excellent choice for the ninth best Texas food.
  • Pecan Pie! I hear cute little cup cakes may be on their way out as a fad food and that pies are going to be the next big thing in bakery treats! Well, you don't have to go far to find the very best pie ever invented, the Texas Pecan Pie!
