ONE POT CREAMY CHICKEN AND NOODLES



One Pot Creamy Chicken and Noodles image

Classic chicken and noodles with vegetables in a creamy, cheesy sauce, all cooked in one pot for easy clean up.

2 pounds boneless, skinless chicken breasts (cut into 1-inch pieces)
2 tablespoons olive oil
1 small yellow or white onion (diced)
3 medium carrots (peeled and sliced)
2 celery stalks (sliced)
1 tablespoon minced garlic
Salt & Pepper (to taste)
10 ounces cream of chicken soup
1 1/4 cup nonfat milk ((fill the chicken soup can))
2 cups low sodium chicken broth
1 tablespoon dried parsley
1/2 teaspoon dried thyme
1 teaspoon garlic powder
8 ounces dry fettuccine pasta (about 1/2 of a regular box)
1 1/2 cups shredded sharp cheddar cheese (divided)

Steps:

  • Heat olive oil in a 5 quart pot or deep saute pan. Add chopped vegetables and minced garlic. Saute over medium-high heat for about five minutes, or until vegetables are just becoming tender.
  • Add chicken and season with salt and pepper. Continue to saute over medium heat until chicken is no longer pink on the outside. It does not have to be cooked through since it will continue to cook in the sauce.
  • Stir in cream of chicken soup, milk (fill the chicken soup can), chicken broth, pasta and dry seasonings.
  • Bring to a boil, then turn heat down to low. Simmer uncovered for about 20 minutes or until pasta is tender, stirring every five minutes to keep pasta from sticking together.
  • Once pasta is cooked to al dente, remove from heat and stir in 1 cup of cheddar cheese until melted. Sprinkle with remaining cheese. Cover pot and let rest for 5-10 minutes to thicken the sauce.
  • Sprinkle with fresh chopped parsley for garnish.

Steps:

  • In heavy 5-quart saucepan over medium heat, melt butter; add chicken and onion. Cook 5 minutes or until chicken is no longer pink. Add chicken broth; heat to boiling. Stir in uncooked pasta and peas and carrots, stirring to coat evenly with liquid. Heat to boiling; reduce heat. Cover; simmer on medium heat 8 minutes, stirring occasionally, or until most liquid is absorbed. Meanwhile, in a medium bowl, stir together soup, milk, 1/2 cup cheese and pimiento until smooth; stir into pasta mixture. Simmer until heated through. Serve sprinkled with remaining cheese.

  • Heat oil in large skillet. Cube chicken into bite size pieces and brown in hot oil. Meanwhile, in a large saucepan, boil noodles in water until soft, then drain. Add hot cooked noodles to chicken in skillet and pour in gravy and peas. Stir together until ingredients are covered/coated with gravy. 2 tablespoons hoisin sauce
1 tablespoon toasted sesame oil

2 teaspoons chile garlic sauce

This is a recipe my grandmother used. She lived on a chicken farm, so it is as basic and simple as it can get. Usually all we have to accompany this recipe is mashed potatoes. It's really nice on cold days and extremely cheap to make.

1 (3 pound) whole chicken
1 teaspoon salt, or to taste
2 cups all-purpose flour
dash salt
4 large eggs
1 teaspoon vegetable oil

Steps:

  • Remove any giblets, rinse the chicken with cold water, and place it into a large saucepan of water. Add 1 teaspoon salt, and bring to a boil over high heat. Reduce heat to a medium low, and simmer about 1 hour, skimming foam from the broth, until the chicken meat is tender.
  • Mix the flour with a dash of salt in a bowl. With your fingers, make a depression in the top of the flour and drop in the eggs. Add the oil, and stir the eggs into the flour to make a stiff dough. Knead the dough for about 10 minutes, until smooth and elastic, and let it rest, covered, for about 10 minutes.
  • Cut the dough in half, and roll each piece out, on a well-floured surface, into a rectangle shape until it's about 1/8 of an inch thick. Sprinkle the dough sheet with flour, and roll it up into a loose cylinder. With a sharp knife, cut 1/2 inch wide noodles from the roll. Unroll the noodles, and sprinkle with flour to prevent them from sticking together.
  • Remove the chicken from the broth and let cool about 10 to 15 minutes, until it's cool enough to handle. Remove the skin and strip all of the meat from the bones, and return the chicken meat to the broth. Bring the broth back to a boil, drop in the fresh noodles, and let simmer over medium-low heat for about 10 minutes, until the noodles are tender, slightly puffed and lighter in color.

8 cups Homemade Chicken Stock, or canned low-sodium chicken broth, skimmed of fat
2 star anise
One 3-to-4-inch-long cinnamon stick
1 tablespoon dried savory
3 boneless, skinless chicken breasts halves
4 ounces egg noodles
2 tablespoons olive oil
1 large leek, trimmed, washed, and cut into 1/4-inch-thick rounds
1 stalk celery, cut into 1/2-inch pieces
1 small carrot, julienned into 1 1/2-inch-long strips
3 cloves garlic, minced
1/2 medium portobello mushroom, stem discarded, cut into 1/4-inch-thick pieces, and halved
6 cups loosely packed fresh spinach

Steps:

  • In a stockpot, combine chicken stock, star anise, cinnamon stick, and savory. Cook, covered, 15 minutes. Add the chicken, and poach, uncovered, on medium heat, until just cooked through, about 15 minutes. Using a slotted spoon, transfer chicken to a plate.
  • Bring a medium pot of salted water to a boil. Add noodles, and cook until al dente, about 4 minutes. Strain, and place under cold running water to stop cooking. Set aside.
  • Heat oil in a large saute pan over medium-low heat. Cook the leek, celery, carrot, and garlic until softened, about 6 minutes. Add portobello. Cook 5 minutes. Remove star anise and cinnamon from broth; add broth to the sauteed vegetables. Bring to a simmer over medium-high heat; cook 10 minutes.
  • Slice chicken on the bias 1/4 inch thick. Add chicken, noodles, and spinach to broth. Over medium heat, cook until spinach has wilted, about 2 minutes. Ladle mixture into individual bowls, and serve immediately.
