Orange Date Banana Oatmeal


zesty! this is from although very tart, this has a sweet depth to it with a nutty overtone. i use more nutmeg, and find the salt, although optional, should be used. i will try subbing milk for water, that may also be good.

Time: 5 minutes


  • in a saucepan , bring juice , water , salt and nutmeg to a boil
  • stir in oatmeal and dates
  • return to boil , reduce heat
  • cook 1 minute for quick oatmeal , stirring occasionally
  • stir in banana
  • let stand until of desired consistency

  • Heat oven to 400°F Line twelve medium muffin cups with paper baking cups or lightly spray bottoms only with cooking spray.
  • In large bowl, combine oats, flour, brown sugar, baking powder, baking soda, cinnamon, salt and dates; mix well. In medium bowl, combine yogurt, banana, egg whites, oil and orange peel; blend well. Add to dry ingredients all at once; stir just until dry ingredients are moistened. (Do not overmix.).
  • Fill muffin cups almost full.
  • Bake 20 to 22 minutes or until golden brown. Cool muffins in pan on wire rack 5 minutes; remove from pan.

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
  • In a large bowl, cream together the shortening and sugar until light and fluffy. Stir in the eggs one at a time, beating well with each addition, then stir in the banana and vanilla.
  • In a separate bowl, sift together flour, baking soda and salt. Beat into creamed mixture. Stir in oats and nuts. Pour into prepared pan.
  • Bake in preheated oven for 50 to 55 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
