A delightful change from the ordinary...the only relish most of my family will eat! Relish can be chilled up to 3 days.

Steps:
- Grate 2 teaspoons of zest from orange; discard remaining peel and pith from orange. Divide orange into sections.
- Place orange sections, orange zest, cranberries, sugar, and cinnamon in a food processor; pulse until finely chopped.
- Transfer relish to a bowl and cover; refrigerate to allow flavors to blend, at least 2 hours.

Steps:
- Stir together cranberries, sugar and 1 1/2 cups orange juice in 3-quart saucepan.
- Cook over medium-high heat, stirring occasionally, until cranberries pop and sugar dissolves about 9 to 11 minutes; cool 15 minutes.
- Meanwhile, combine all remaining stuffing ingredients in large bowl.
- Stir in cranberry mixture.
- Heat oven to 325 degrees.
- To bake stuffing in casserole, place stuffing mixture into greased 3-quart casserole dish.
- Bake, uncovered, for 60 to 70 minutes or until celery is tender.
- Meanwhile, combine all sauce ingredients in 2-quart saucepan.
- Cook over medium-high heat, stirring occasionally, until melted (5 to 6 minutes).
- Pour into blender in small batches and puree.
- Serve sauce with turkey.

COOKED CRANBERRY AND ORANGE RELISH
Steps:
- Make this a day ahead and serve chilled. In a non-reactive saucepan, combine the water, orange juice and sugar. Bring to a boil, stirring continuously. Add the cranberries and cook only for about minutes or until the skins of the berries pop. Remove pan from heat and add orange rind. Transfer mixture to a bowl and let cool to room temperature.
- Leftovers can be thinned with some liqueur and used as a hot sauce to spoon over frozen yogurt or pound cake.
STUFFED FRENCH TOAST WITH CRANBERRY SAUCE
Baked french toast filled with orange flavored cream cheese and served with a maple cranberry sauce. Prep time includes refrigeration overnight.

Steps:
- Cut 1" from each end of the loaf and discard or use for another recipe.
- Cut the loaf into 1" thick slices and halve each slice on the diagonal.
- Cut in the diagonal side of each piece of bread to form a pocket (this is almost like cutting the bread into 1/2" slices except you don't go through any of the other sides of the bread).
- Mix the cream cheese, 2 tbsp sugar, egg yolk, zest and 1 tbsp orange juice until smooth.
- Fill each bread pocket with 1 tbsp of the cream cheese mixture.
- Put bread slices in a 13" x 9" baking dish, overlapping slightly.
- Whisk the eggs, milk and 1 tsp vanilla until frothy and pour over the bread.
- Cover with plastic wrap and refrigerate overnight.
- Preheat oven to 350 degrees F.
- Sprinkle bread with 1 tbsp sugar.
- Bake for 35 minutes or until a toothpick inserted into the center comes out clean.
- Cranberry Sauce: Combine cranberries, maple syrup, 1/2 c sugar, 1/2 c orange juice and 1 tsp vanilla in a pot.
- Cook over medium heat stirring as required until cranberries burst and mixture thickens, about 15 minutes.
- Cool sauce and serve with toast.

- Preheat oven to 375 degrees F (190 degrees C).
- Unroll crescent roll dough triangles and overlap slightly on a baking sheet, pinching the seams to join. Sprinkle lightly with sugar.
- Bake in the preheated oven until golden brown, 10 to 12 minutes. Set aside until completely cool.
- Chop cranberries, orange pieces, and walnuts in a food processor; sprinkle in sugar.
- Beat cream cheese, yogurt, honey, lemon juice, and vanilla extract in a large bowl with an electric mixer until fluffy.
- Spread cream cheese mixture evenly over the crust; smooth cranberry mixture on top. Cover with plastic wrap and chill until the cream cheese layer is firmer, about 30 minutes.
