Time 4h

Yield 12 serving(s)

Number Of Ingredients 23

1 cup butter
1 1/2 cups sugar
3 eggs
1/3 cup frozen orange juice concentrate, plus
milk, enough to make 3/4 cup liquid total
1 1/2 teaspoons vanilla extract
3/4 teaspoon orange extract
2 cups cake flour
2 teaspoons baking powder
1/2 teaspoon salt
orange food coloring
1 cup milk
1/4 cup water
1/2 cup sugar
1 1/2 tablespoons fresh lemon juice
2 1/2 tablespoons frozen orange juice concentrate
2 1/2 tablespoons cornstarch
orange food coloring
1 pint whipping cream
6 tablespoons sugar
1 teaspoon vanilla
4 -5 tablespoons orange juice concentrate
orange food coloring

Steps:

  • To make the cake:.
  • Preheat oven to 325. Mix together flour, baking powder, and salt; set aside. Cream butter and sugar until light and fluffy. Beat in eggs one at a time. Add vanilla and orange extract. Blend in 1/3 of the flour mixture then half of the orange juice/milk mixture. Blend in half of the remaining flour mixture, then the rest of the orange juice/milk mixture, and then finally the remaining flour mixture. Mix at medium speed until ingredients are thoroughly blended (about 1 or 2 minutes). Tint cake batter orange. Pour batter into two 8" round prepared cake pans. Bake for 35 to 40 minutes, or until a toothpick comes out clean when inserted in the center of the cake layer. Cool 15 minutes before turning out on to cooling racks.
  • To make the filling:.
  • Combine sugar and cornstarch in a small sauce pan. Add remaining filling ingredients and mix well. Cook over medium heat stirring continuously until mixture comes to a boil. Boil for 1 minute. Pour filling into a container and chill in the refrigerator.
  • To make the icing:.
  • Whip cream to soft peaks. Gradually whip in sugar. Mix in vanilla. Mix in orange juice concentrate to taste. Add orange food coloring.
  • To assemble the cake:.
  • Split the two cake layers in half so you have four layers. Lay the first layer on a plate. Pipe a small border of the whipped cream on the layer at the edge. Fill the center of the cake layer with 1/3 of the orange filling. Repeat with the remaining layers. Starting at the bottom you should have cake, filling, cake, filling, cake, filling, cake. Ice the outside of the cake with the remaining orange flavor whipped cream. Chill cake in the refrigerator for several hours before serving.
  • Note:.
  • I usually color the cake batter a medium orange, the filling a dark orange, and the whipped cream a pale orange.

ORANGE FLUFF CAKE

Orange Fluff Cake image

Wonderful cake with a true orangey flavor.

Provided by S Hussy

Categories     Desserts     Cakes

Time 3h

Yield 12

Number Of Ingredients 15

1 ½ cups sifted cake flour
½ cup white sugar
2 teaspoons baking powder
½ teaspoon salt
5 tablespoons butter, melted
⅓ cup fresh orange juice
1 teaspoon grated orange zest
6 egg yolks
1 teaspoon vanilla extract
6 egg whites
½ teaspoon cream of tartar
½ cup white sugar
1 cup confectioners' sugar
2 tablespoons fresh orange juice
2 teaspoons grated orange zest

Steps:

  • Position a rack in the center of the oven and preheat to 350 degrees F (175 degrees C). Have ready an ungreased 10-inch tube pan with a removable bottom. Don't use a nonstick surface pan.
  • Sift the flour, 1/2 cup sugar, baking powder and salt into a medium bowl. Form a well in the center and add the melted butter, 1/3 cup orange juice, 1 teaspoon orange zest, egg yolks and vanilla. Beat for 1 to 2 minutes with an electric mixer.
  • In a large glass or metal mixing bowl, beat egg whites and cream of tartar until foamy. Gradually add 1/2 cup sugar, continuing to beat until stiff peaks form. Fold 1/3 of the whites into the batter, then quickly fold in remaining whites until no streaks remain.
  • Pour batter into the ungreased tube pan. Bake for 60 to 75 minutes, until the top springs back when lightly touched and a toothpick inserted comes out clean. Immediately invert and let the cake hang upside down until completely cool.
  • Turn right side up and run a sharp knife around the edge to separate the cake from the pan. Remove sides. Run a knife around the center tube and under the cake; remove the pan bottom. Turn the cake right side up on a serving plate.
  • To make the glaze: In a small bowl combine the confectioner's sugar, 2 tablespoons orange juice, and 2 teaspoons orange zest. Spread over the top of the cake, letting some drip down the sides. Let stand at room temperature until glaze has set, about one hour.

CRANBERRY / ORANGE SAUCE

Cranberry / Orange Sauce image

Having tried a number of cranberry sauce recipes over the years, I find this one to be easy and very tasty. As with many such sauces, it goes well with poultry, pork, meatloaf, pound cake, ice cream, cottage cheese & more! Pleast note that I much prefer to use chunky applesauce as the final ingredient.

Provided by Sydney Mike

Categories     Sauces

Time 20m

Yield 20 serving(s)

Number Of Ingredients 6

1 cup water
1 cup sugar
1 (12 ounce) bag cranberries
1 large navel orange
1 (16 ounce) can whole berry cranberry sauce
1 1/2 cups applesauce

Steps:

  • In a medium sauce pan dissolve sugar in water, then bring to boil.
  • Pick over the cranberries, keeping only quality berries & add them to the boiling sugar water. Return to boil & reduce heat & boil berries gently for 10 minutes, then remove from heat.
  • Meanwhile, zest the orange. Chop zest into small bits. Then remove the white pith from the orange before coarsly dicing the orange.
  • When the cranberries have been removed from heat, add the chopped zest, diced orange, canned cranberry sauce and chunky applesauce & mix thoroughly.
  • Cool to room temperature, then cover & refrigerate.
