SHRIMP AND DEVILED-EGG SALAD ROLLS



Shrimp and Deviled-Egg Salad Rolls image

Kosher salt
1 pound large shell-on shrimp, deveined
6 large eggs
2 ounces slab bacon or 2 strips thick-cut bacon, finely diced
1/4 cup plus 2 tablespoons mayonnaise
1 tablespoon hot sauce
2 teaspoons dijon mustard
Freshly ground pepper
4 butter lettuce leaves, halved
2 vine-ripened tomatoes, cut into 8 slices
4 top-loading hot-dog buns, halved crosswise
2 scallions, finely sliced

Steps:

  • Fill a large pot with 2 quarts water, add 2 teaspoons salt and bring to a boil over high heat. Remove from the heat; add the shrimp, and let sit (off the heat) until the shrimp is pink-orange and slightly firm, 1 to 2 minutes. Transfer to a colander with a slotted spoon and rinse under cold water until cool enough to handle.
  • Return the water to a boil, then reduce to a simmer over low heat. Gently lower the eggs into the water with a large ladle, two at a time, and let simmer exactly 14 minutes.
  • Meanwhile, peel and chop the shrimp and put them in a large bowl. Saute the bacon in a skillet over medium-high heat until firm and just turning golden brown, 4 to 5 minutes. Drain on paper towels.
  • When the eggs are done, transfer to a colander and rinse under cold water until cool enough to handle, about 2 minutes. Peel the eggs and halve lengthwise. Separate the whites from the yolks; coarsely chop the whites and add them to the bowl with the shrimp. Press the yolks through a mesh strainer into a separate bowl. Add the mayonnaise, hot sauce, mustard and 1/2 teaspoon salt to the yolks and whisk until the mixture is the consistency of cake batter, about 1 minute.
  • Using a rubber spatula, fold the yolk mixture into the shrimp mixture until the shrimp is evenly coated with the deviled-egg dressing. Season with salt and pepper and toss again. (The shrimp and deviled-egg salad will keep in the refrigerator, covered, for 2 days.)
  • To serve, load 1 piece of lettuce and 1 tomato slice into each of the bun halves; spread about 1/2 cup of the shrimp and deviled-egg salad in each. Garnish with the bacon and scallions.

My son loves the orange rolls that come in a can. But he wanted them homemade. After trying a couple recipes and none of them meeting his approval, I came up with my own. After getting thumbs up AND a high five from my son, I finally had a recipe! These are made overnight and baked in the morning.

1 tablespoon white sugar
1 tablespoon active dry yeast
1 cup warm milk
½ cup warm water
1 egg, beaten
½ cup orange juice
½ cup butter, melted
¼ cup instant vanilla pudding mix
1 tablespoon orange extract
5 cups bread flour, or more if needed
1 teaspoon salt
½ cup butter, softened
2 tablespoons grated orange zest
1 teaspoon orange extract
¾ cup white sugar
1 (8 ounce) package cream cheese, softened
½ cup butter, softened
2 cups confectioners' sugar
2 teaspoons orange extract
2 tablespoons milk, or more as needed

Steps:

  • Sprinkle 1 tablespoon white sugar and the yeast over the warm milk and warm water in a bowl. Let stand until the yeast softens and begins to form a creamy foam, about 5 minutes. Mix in the egg, 1/2 cup orange juice, melted butter, vanilla pudding mix, and 1 tablespoon orange extract. Stir in 5 cups bread flour and salt. Add more bread flour if the dough is too sticky. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, 8 to 10 minutes.
  • Place the dough in an oiled bowl and cover with a clean cloth. Allow the dough to rise in a warm place until doubled in size, about 1 1/2 hours.
  • Combine 1/2 cup softened butter with the orange zest and 1 teaspoon orange extract in a small bowl until smooth. Set aside. Grease a baking sheet, or cover with parchment paper.
  • Turn the dough out on a floured surface and roll out into a 24x12-inch rectangle. Spread the butter mixture evenly over the dough, then sprinkle with 3/4 cup white sugar. Roll up the dough, beginning with the long side. Cut the dough into 18 1 1/2-inch rolls. Arrange the rolls cut-side up on prepared baking sheet. Cover with plastic wrap and refrigerate overnight.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Remove the plastic wrap from the rolls and allow them to rise in a warm place for 30 minutes.
  • Bake in the preheated oven until golden brown, 25 to 30 minutes. Allow rolls to cool slightly before frosting.
  • While the rolls are baking, cream together the cream cheese and 1/2 cup softened butter until smooth. Stir in the confectioners' sugar and 2 teaspoons orange extract. Stir in milk, a little at a time, until frosting is smooth and spreadable. Spread the frosting over the slightly cooled rolls.

2 cups unsalted butter, softened
⅔ cup all-purpose flour
2 ½ cups milk
½ cup white sugar
2 teaspoons salt
4 ½ teaspoons active dry yeast
8 cups all-purpose flour
2 eggs
1 teaspoon lemon extract
1 teaspoon almond extract

Steps:

  • In a medium bowl, cream together the butter and 2/3 cup of flour. Divide into 2 equal parts, and roll each half between 2 pieces of waxed paper into a 6 x12 inch sheet. Refrigerate.
  • In a large bowl, mix together the dry yeast and 3 cups of the remaining flour. In a small saucepan over medium heat, combine the milk, sugar and salt. Heat to 115 degrees F (43 degrees C), or just warm, but not hot to the touch. Mix the warm milk mixture into the flour and yeast along with the eggs, and lemon and almond extracts. Stir for 3 minutes. Knead in the remaining flour 1/2 cup at a time until the dough is firm and pliable. Set aside to rest until double in size.
  • Cut the dough in half, and roll each half out to a 14 inch square. Place one sheet of the cold butter onto each piece of dough, and fold the dough over it like the cover of a book. Seal edges by pressing with fingers. Roll each piece out to a 20x 12 inch rectangle, then fold into thirds by folding the long sides in over the center. Repeat rolling into a large rectangle, and folding into thirds. Wrap in plastic and refrigerate for at least 30 minutes.
  • Remove from the refrigerator one at a time, and roll and fold each piece two more times. Return to the refrigerator to chill again before shaping. If the butter gets too warm, the dough will become difficult to manage.
  • To make danishes, roll the dough out to 1/4 inch thickness. The dough can be cut into squares, with a filling placed in the center. Fold 2 of the corners over the center to form a filled diamond shape. Or, fold the piece in half, cut into 1 inch strips, stretch, twist and roll into a spiral. Place a dollop of preserves or other filling in the center. Place danishes on an ungreased baking sheet, and let rise until doubled. Preheat the oven to 450 degrees F (220 degrees C). Danishes can be brushed with egg white for a shiny finish.
  • Bake for 8 to 10 minutes in the preheated oven, or until the bottoms are golden brown.

This is my version of Orange Danish. These are as easy to make as Cinnamon Rolls. They may sound more difficult, but really are not. I always use store bought vanilla frosting mixed WITH HOMEMADE for these because it makes the texture better (creamier) IMHO. The yield is approximate and depends on how thin you roll and how thick you cut. Sorry I don't have a more accurate yield.

1/4 cup margarine or 1/4 cup butter
1/4 cup shortening
2 tablespoons sugar
1 egg
1 teaspoon salt
1 1/2 cups water (110° to 115°)
2 teaspoons yeast
1 teaspoon sugar
3 -5 cups flour (more or less as needed)
1 cup brown sugar
1 teaspoon ginger (only time I use powder ginger) (optional)
1 teaspoon cinnamon
1/4 cup flour
2 tablespoons margarine or 2 tablespoons butter
1/2 of the orange zest
1 dash salt
1/2 of the orange zest
2 tablespoons frozen orange juice concentrate (undiluted)
1 teaspoon vanilla flavoring
1 tablespoon milk or 1 tablespoon cream
1 tablespoon butter or 1 tablespoon margarine (see note) (optional)
1 tablespoon of fresh squeezed orange juice
enough powdered sugar, to make spreading consistancy
1 dash salt

Steps:

  • Mix yeast and warm water together to proof yeast.
  • Cream shortening and margarine with sugar.
  • Add yeast and water mixture.
  • Add three cups flour and mix.
  • Continue adding flour until soft dough forms.
  • Turn out on a lightly floured surface and knead until dough becomes smooth and elastic.
  • Place in an oiled bowl, cover with plastic wrap and let rise until double (about an hour).
  • Punch down.
  • Roll out into a rectangle on a lightly floured surface.
  • Mix all of the filling ingredients cutting the butter or margarine in until it is well blended.
  • Spread evenly over the dough and roll, jelly roll style from the long side.
  • Cut into 1 inch slices, place on lightly greased baking pan.
  • Let rise 20-30 minutes.
  • Bake at 350° for approximately 30 minutes.
  • Mix frosting until smooth.
  • Pour over rolls while they are still slightly warm.
  • Note: I usually mix the frosting and then add a store bought tub of vanilla frosting.
  • It gives a better texture to the frosting.
  • If you choose to do this, I recommend having the"homemade" part slightly thicker than the desired end product.
  • If you are adding the store bought frosting, the margarine/butter is not necessary.

6 large eggs (free range hard boiled)
2 tbsp mayonnaise
1 tsp prepared yellow mustard
2 fresh gherkins (finely diced)
1 fresh jalapeno (finely sliced)

Steps:

  • Cook the eggs in boiling water for 6 minutes and allow to cool
  • Peel shells off cooled hard-boiled eggs; slice into halves lengthwise
  • Remove yolks from whites and place in a small round bowl
  • Mash yolks with a fork into fine pieces
  • Add 2 heaping tablespoons Mayonnaise, yellow mustard, diced gherkins and finely chopped jalapeno and salt and black pepper to taste
  • Stir mixture until creamy
  • Spoon mixture into a piping bag or similar
  • Squeeze mixture into egg white halves.
  • Sprinkle tops of filled deviled eggs with paprika.
  • Chill in refrigerator 1 to 2 hours or until cold before serving.

2 pounds stale bread, cut into cubes
2 quarts water
2 ounces salt
1/2-ounce garlic salt
1 tablespoon black pepper
1/2 teaspoon red chile flakes
1 teaspoon crab boil seasoning
1 stalk celery, chopped finely
2 medium yellow onions, chopped finely
1 1/2 pounds bread crumbs, plus more for breading
1 pound crab meat, cleaned and picked free of crab shells
1 pint Crab Sauce, recipe follows
Oil, for frying
8 ounces crushed tomatoes
4 ounces tomato puree
1 teaspoon garlic powder
1 teaspoon salt
1 bay leaf
2 ounces hot sauce
4 ounces crabmeat, cleaned and picked over for shells
1 small onion, chopped finely

Steps:

  • In a large bowl, place the cubed stale bread. Pour the water over and let soak for 10 minutes. Sprinkle the salt, garlic salt, black pepper, red chile flakes, crab boil seasoning, chopped celery, and chopped onions. Using your hands, combine all the ingredients together into a homogenized mixture. Set aside so the flavors blend.
  • In another large bowl, combine the bread crumbs, crab meat, and crab sauce. Mix into a homogenous blend.
  • Take a small handful of the bread mixture and using your thumb or finger, press out a hole. Take a small scoop, about 1 1/2 ounces, of the crab mixture and place it into the hole. Bring the bread mixture around the crab mixture, forming a patty. Set aside on a sheet pan lined with parchment paper, or a large platter. Continue making patties until all of the mixtures are used.
  • In a large skillet, pour 1 1/2 inches of oil into the pan. Heat the oil to 375 degrees F., or until a small piece of the bread mixture sizzles and bubbles when placed in the oil. Place patties in the pan, being careful not to crowd them. Fry until golden on 1 side, about 3 to 4 minutes, and then flip over and fry until golden on the other side.
  • Note: This recipe was provided by professional chefs, and therefore may be difficult to reproduce in the home.
  • In a large sauce pot, combine all the ingredients. Cook over medium heat, at a simmer, for 30 minutes. Chill the sauce before using.
  • Yield: 1 quart

Steps:

  • Halve the eggs lengthwise and transfer the yolks to a small bowl. Set the egg white halves on a platter.
  • In a mixing bowl, mash the avocado well with a fork, then add the yolks and mash to a smooth consistency. Add the mayonnaise, wasabi paste, and salt, and mix until smooth. Spoon the mixture into a pastry bag fitted with a plain or large star tip, then pipe the mixture evenly into the egg white halves. Alternatively, fill the eggs with a spoon, dividing the filling evenly.

2 Tbsp. orange marmalade
5 Tbsp. powdered sugar
1 Tbsp. milk

Steps:

  • Preheat oven to 375°F. Unroll and separate dough into 8 triangles.
  • In a small bowl, heat cream cheese in microwave for 30 seconds to soften slightly. Stir in marmalade.
  • Put a tablespoon of cream cheese mixture on each dough triangle. Spread evenly over the surface of the dough. Roll into a crescent shape and place on a baking sheet.
  • Bake for 11-13 minutes or until lightly golden brown. Remove from baking sheet and allow to cool.
  • Stir together powdered sugar and milk. Drizzle over cooled rolls and serve.

1 teaspoon white sugar
2 ½ teaspoons rapid-rise yeast
2 eggs, room temperature

½ cup white sugar
1 teaspoon salt
2 ½ cups finely chopped cranberries
¾ cup firmly packed brown sugar

Steps:

  • Mix warm milk, sugar, and yeast together in a small bowl until dissolved. Set aside and allow yeast to proof until foamy.
  • Whisk eggs and cooled melted butter together in a bowl and set aside.

Cook over medium heat, stirring constantly, until mixture begins to bubble and thicken slightly, about 5 minutes. Remove from heat and allow filling to cool to room temperature.
  • Line a 9x13-inch baking pan and a 6-inch cake pan with parchment paper and lightly grease both pans.
  • Turn risen dough out onto a lightly floured surface. Roll out into a rectangle approximately 21x14 inches. Place cranberry filling on the dough leaving a 1/2-inch border on all sides. Roll dough up starting at a long side. Pinch ends to seal dough and lay seam-side down on a cutting board. Use a very sharp or serrated knife to cut into 15 rolls, each about 1 1/4-inch thick. Place rolls cut-side up in the prepared pans, 12 in the baking pan and 3 in the cake pan.
  • Loosely cover pans and allow rolls to rise until doubled in size, 30 to 45 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Bake in the preheated oven until buns are golden brown on top, 22 to 27 minutes. Allow to cool in the pans for several minutes before transferring to a serving plate.
  • Whisk confectioners' sugar, heavy cream, vanilla extract, and salt together in a bowl until smooth. Add more cream to thin or more sugar to thicken, if needed. Pour glaze over slightly warm rolls before serving.
