1 1/2 sticks unsalted butter
1 cup brown sugar
1 large egg
2 tablespoons plus 1 teaspoon molasses
1 tablespoon orange juice
1 tablespoon finely grated orange zest
2 3/4 to 3 cups flour
1 teaspoon baking soda
1/2 teaspoon ground cloves
2 teaspoons ground cinnamon
2 teaspoons ground ginger

Steps:

  • In a mixing bowl or standing mixer cream together the butter and sugar until light. Beat in 1 egg and mix in the molasses, orange juice, and zest. Sift together the dry ingredients and stir them into the wet ingredients to make a soft, smooth dough, adding more flour if dough is too sticky. Knead the dough three times on a lightly floured board.
  • Shape the dough into 3 logs, about 8-inches long, wrap in plastic wrap and refrigerate at least 1 hour or overnight.
  • Preheat oven to 350 degrees F. Slice logs into thin circles, less than 1/8-inch thick. Place on lightly greased baking sheets.
  • Bake cookies for about 8 to 10 minutes. Remove from oven and transfer cookies to a rack to cool.

  • Process beans and milk together in a blender until smooth; pour into a small saucepan.
  • Stir sugar, egg, orange zest, ginger, and cornstarch into the bean mixture until smooth; place over medium heat and cook, stirring constantly, until thickened, about 30 minutes.
  • Stir butter and vanilla extract into the thickened mixture until the butter is melted; pour into 4 dessert cups and refrigerate until chilled, at least 15 minutes.

1-1/2 cups turbinado (washed raw) sugar
1-1/2 cups water
1 cup fresh mint leaves
8 slices fresh gingerroot
Crushed ice
5 ounces spiced rum, optional
1 bottle (1 liter) club soda, chilled

Steps:

  • Using a vegetable peeler, remove colored layer of peel from oranges in strips, leaving the white pith. Cut oranges crosswise in half; squeeze juice from oranges., In a small saucepan, combine sugar, water and orange juice; bring to a boil. Stir in mint, ginger and orange peel; return to a boil. Reduce heat; simmer, uncovered, 10 minutes. Cool syrup mixture completely., Strain syrup, discarding solids. To serve, fill 10 highball glasses halfway with ice. Add 2 ounces syrup and, if desired, 1/2 ounce rum to each glass; top with soda.

Orange Sable Dough
6 ounces crystallized ginger, finely chopped (about 1 cup)

Steps:

  • Place two 12-by-16-inch pieces of parchment on a work surface. Divide dough in half; form each half into a rough log on parchment. Fold parchment over dough; using a ruler, roll and press dough into a 1 1/2-inch cylinder. Wrap. Chill at least 3 hours.
  • Heat oven to 350 degrees. Line two baking sheets with parchment. Spread crystallized ginger on a work surface. Unwrap logs; roll in ginger to coat. Cut logs into 1/4-inch-thick rounds; place on sheets, spaced 2 inches apart. Bake until edges turn slightly golden, about 15 minutes. Transfer cookies to a wire rack to cool. Bake or freeze remaining dough. Store in an airtight container up to 2 weeks.

Two 12-ounce bottles orange soda, chilled
1 canister sweetened whipped cream

Steps:

  • Rub the orange wedge along the rims of 2 pint-size glasses. Pour the sugar onto a shallow dish and dip the rims of the glasses into the sugar.
  • Put 2 to 3 scoops of coconut sorbet into each glass. Fill each glass with orange soda (you may not need to use it all). If you pour the soda over the back of a spoon into the glasses, it will keep the soda from breaking up the sorbet too much. Top each float with lots of whipped cream and sprinkle with yellow sanding sugar. Add a straw and enjoy!
