Time 30m

Yield 4 serving(s)

Number Of Ingredients 15

1 (12 1/3 ounce) package water-packed extrafirm light tofu
2 tablespoons orange juice
1 tablespoon low sodium soy sauce, divided
1 1/2 teaspoons rice vinegar
1 teaspoon honey
1/2 teaspoon chili-garlic sauce, divided (such as Lee Kum Kee)
1/4 teaspoon grated peeled fresh ginger
1/4 teaspoon salt, divided
cooking spray
1 teaspoon dark sesame oil
1/2 cup frozen green pea, thawed
1/2 cup grated carrot
1/4 cup thinly sliced green onion
1 cup hot cooked long-grain rice
1 tablespoon sesame seeds, toasted

Steps:

  • Cut tofu in half crosswise; reserve one tofu half for another use. Cut tofu half lengthwise into 3 (3/4-inch-thick) slices; cut each slice in half diagonally.
  • Arrange tofu pieces in a single layer on several layers of heavy-duty paper towels. Cover tofu with additional paper towels; place a cutting board on top of tofu, and let stand 15 minutes.
  • Combine orange juice, 1 1/2 teaspoons soy sauce, rice vinegar, honey, 1/4 teaspoon chili garlic sauce, and ginger in a shallow dish, stirring with a whisk.
  • Remove cutting board and paper towels from tofu; sprinkle 1/8 teaspoon salt over tofu. Add the tofu slices to the orange juice mixture in dish, turning to coat.
  • Cover and marinate at room temperature 30 minutes, turning tofu slices after 15 minutes.
  • Heat a grill pan over medium heat. Coat pan with cooking spray. Drain tofu; discard marinade. Add tofu to pan; cook 3 minutes or until lightly browned. Turn tofu over; cook 2 minutes. Set aside; keep warm.
  • Heat oil in a medium nonstick skillet over medium heat. Add peas, carrot, and onions; cook 2 minutes.
  • Stir in the remaining 1 1/2 teaspoons soy sauce, remaining 1/4 teaspoon chili garlic sauce, and remaining 1/8 teaspoon salt. Add cooked rice; cook 2 minutes or until thoroughly heated.
  • Stir in sesame seeds. Place 1 cup rice mixture on each of 2 plates, and arrange 3 tofu pieces on top of rice.

Categories     Tofu Recipes

Time 1h25m

Yield 4

Number Of Ingredients 12

1 pound firm tofu
1 cup fresh orange juice
¼ cup rice vinegar
⅓ cup soy sauce
⅓ cup canola oil
4 teaspoons dark sesame oil
3 cloves garlic, minced
1 tablespoon minced fresh ginger root
¼ teaspoon red pepper flakes
1 green onions, cut into 1-inch strips
¼ cup coarsely chopped fresh cilantro
2 dried chipotle chile pepper

Steps:

  • Turn the tofu on its side, and cut it into 4 thin slices. Lay the tofu flat again, and cut the block diagonally to make 8 triangles. Without separating the pieces, place tofu on a cutting board. Cover, with a paper towel, and place a heavy skillet on top. Set aside for 30 minutes, allowing time for excess water to drain from the tofu.
  • In a medium bowl, whisk together the orange juice, vinegar, soy sauce, oils, garlic, ginger, and red pepper flakes. Separate the pressed tofu pieces, and arrange in a baking dish in a single layer. Cover with the marinade, and sprinkle with the green onion and cilantro. Cut the stems off the chiles, remove the seeds, and place the chiles in the baking dish. Cover with plastic wrap, and refrigerate for at least 30 minutes, and up to overnight.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Pour off some of the marinade, so the tofu is covered halfway. Bake for 40 to 45 minutes, without turning, until the tofu is golden and most of the marinade has been absorbed.
