- Wash the oranges and lemon thoroughly. Cut the oranges into 1/8-inch slices using a mandoline, removing the seeds as you go. Stack the orange slices and cut them into quarters. Place the oranges into an 8-quart stainless steel pot. Add the lemon zest and juice and the water to the pot, set over high heat and bring to a boil, approximately 10 minutes. Once boiling, reduce the heat to maintain a rapid simmer and cook, stirring frequently, for 40 minutes or until the fruit is very soft.
- While the fruit is cooking, fill a large pot (at least 12-quart) 3/4 full with water, set over high heat and bring to a boil. Place 10 (8-ounce) jars and rings, canning funnel, ladle, and tongs into the boiling water and make sure the water covers the jars by at least an inch. Boil for 10 minutes. Turn off the heat, add the lids and leave everything in the pot until the marmalade is ready.
- Meanwhile, place a small plate in the freezer. Increase the heat under the orange mixture to return to full boil. Add the sugar and stir the mixture continually, until it reaches 222 to 223 degrees F on a deep-fry or candy thermometer, and darkens in color, approximately 15 to 20 minutes. You may need to adjust the heat in order to prevent boil over. Test the readiness of the marmalade by placing a teaspoon of the mixture onto the chilled plate and allowing it to sit for 30 seconds. Tilt the plate. The mixture should be a soft gel that moves slightly. If mixture is thin and runs easily, it is not ready.
- Remove jars from the water and drain on a clean towel. Place a canning funnel onto the top of 1 of the jars and ladle in the marmalade just to below the bottom of the threads of the jar. Repeat until all of the mixture has been used. The amount of marmalade may vary by 1 to 2 jars. Wipe the rims and threads of the jars with a moist paper towel and top each with a lid. Place a ring on each jar and tighten.
- Return the jars to the pot with boiling water, being certain that they don't touch the bottom of the pot or each other. (If you don't have a jar rack, try a round cake rack, or metal mesh basket. Even a folded kitchen towel on the pot bottom will do in a pinch.) Add additional water if necessary to cover the jars by at least an inch. Boil for 10 minutes. Using canning tongs, carefully remove the jars from the water, place in a cool dry place and allow to sit at room temperature for at least 24 hours before opening. Once open, store in the refrigerator. Unopened marmalade will last for up to 6 months.
ORANGE MARMALADE

- Wash and dry the oranges and lemons.
- Make sure your jars and lids are washed and sanitized. Running the jars through the dishwasher is sufficient. You can also boil the jars if preferred. Place the lids in a pot of boiling water for a few minutes to ensure they are cleaned.
- Cut oranges in half and then into thin slices, discarding the white center of the fruit. Be sure to remove the seeds as you go.
- Place chopped oranges, lemon zest,and lemon juice, and water in a large pot. Set over high heat and bring to a boil.
- After the water comes to a boil, reduce heat and simmer for about 40 minutes, stirring regularly.
- Once the fruit has softened, raise the heat and bring to a boil for a second time.
- Add sugar and stir continuously.
- Once the mixture thickens, it can be transferred into the jars.
- Using a canning funnel, ladle the marmalade into the jars until all of the mixture has been distributed.
- Wipe the rims of the jars, top with the lids, and secure with the rings.
- Fill the large stockpot with water and carefully place the jars inside, being careful to not let them touch the bottom or each other (use a rack if necessary.)
- Boil for 10 minutes.
- Using canning tongs, remove the jars from the pot and allow to cool to room temperature for at least 24 hours before opening.
- Once open, store the jam in the refrigerator. Unopened, the marmalade will last for about 6 months.

- Preheat the oven to 350 degrees F (175 degrees C).
- Season drumsticks with salt and pepper and place in an oven-proof dish.
- Bake in the preheated oven for 20 minutes.
- Combine orange marmalade, Dijon mustard, barbeque sauce, sambal oelek, and soy sauce in a small bowl.
- Remove dish from oven and brush chicken with marmalade mixture. Return to the oven and bake an additional 10 minutes.
- Remove dish again, turn chicken over, brush with marmalade mixture, and continue baking until chicken is no longer pink at the bone and the juices run clear, about 10 more minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).
- Remove dish from oven and baste chicken with remaining marmalade mixture. Preheat the oven's broiler. Return to the oven and broil until chicken starts to blacken and blister, 3 to 5 minutes.

- 1. Prepare clean jars and keep hot until ready to use. I put mine in dishwasher on dry cycle. Keep lids and flats hot in a boiler.
- 2. Wash oranges and lemons and cut ends off. Cut in quarters and remove white membrane from middle and all seeds. Thinly slice oranges and lemons and put in medium saucepan. Add water and bring to a boil.
- 3. After comes to a boil, reduce heat to medium low and cover and let simmer about 25 minutes stirring occasionally. Measure out exactly 4 cups of prepared fruit in saucepan. Add fruit pectin and then butter to reduce foaming. Bring to a full rolling boil on high heat stirring constantly. Add sugar and bring to full boil again stirring constantly for exactly one minute. Remove from heat and skim off any foam.
- 4. Marmalade should be at a jelly like stage and ready to ladle into jars. If not ready, boil a little longer. Fill jars one at a time within 1/8 inch of top. Add lids and flats and screw tightly. Put jars in hot water bath and bring to a boil. Let boil 10 minutes. Be sure water cover jars by 1 to 2 inches.
- 5. After the 10 minutes, remove jars with thongs and place on dry towel away from drafts until they are all sealed. If for some reason one doesnt seal, store it in refrigerator
CLASSIC SEVILLE ORANGE MARMALADE
Although it's traditionally made with sour orange and lemon, marmalade is open to interpretation.

- Bring fruit, peels, and water to a boil in a large saucepan. Cook for 5 minutes. Turn off heat, cover, and let cool. Refrigerate for 8 hours (or up to 1 day).
- Freeze a plate. Uncover citrus mixture, and bring to a simmer over medium-high heat. Cook until thickest peel is tender, about 20 minutes. Measure mixture, and return to pan. For each cup of mixture, add 3/4 cup sugar.
- Bring mixture to a boil, stirring often. Cook until mixture registers 220 degrees to 222 degrees on a candy thermometer, about 20 minutes. To test for doneness of marmalade: Drop a spoonful on frozen plate. If marmalade has a slight film when pushed with a finger, it's done. If it spreads out and thins immediately, continue cooking, and test again after a few minutes. Transfer marmalade to airtight containers, cover, and let cool at room temperature. Refrigerate overnight before serving.

- Preheat oven to 400 degrees F (200 degrees C). Grease an 8-inch square pan.
- In a large mixing bowl, cream the shortening with the sugar, vanilla, and almond extract. Stir in the egg and mix until well blended. In a separate bowl, mix together the flour, baking powder, cinnamon, cloves and salt. Add to the first mixture and mix well. Spread half of the dough into the pan. Cover with a layer of marmalade. - Select Navel oranges that have the thinnest peel.
- If the orange is large double the amount of water and sugar.
- Wash the orange thoroughly.
- Cut off both ends of the orange.
- Cut the orange in half, cut each half in about eight sections.
- Place the orange sections in the food processor and pulse until the peel in is tiny pieces.
- In a medium saucepan place the processed orange, the water and the sugar and bring to a gentle boil.
- Boil for 15 minutes, stirring frequently.
- Let cool, then place in a glass jar with a tight fitting lid.
- Refrigerate to store.
- When it is cold it is ready to eat.
- I use 1/2 sugar and 1/2 Splenda and it works well.

- Rinse oranges under hot water. Quarter oranges lengthwise; slice crosswise as thinly as possible with a sharp knife.
- Bring the orange slices, orange and lemon juices, and 6 cups water to a boil in a large nonreactive saucepan over medium-high heat. Reduce heat to medium-low. Simmer until orange peels are translucent and tender, about 1 1/2 hours.
- Stir in sugar. Bring mixture to a boil over medium-high heat, stirring constantly, until sugar is dissolved. Continue cooking, stirring often and skimming foam from surface with a slotted spoon, until mixture is set and registers 220 degrees on a candy thermometer, about 15 minutes. (To test if the marmalade has set, place a small amount on a well-chilled plate. Press gently with your finger; marmalade should wrinkle. If it doesn't, continue to simmer, 5 to 10 minutes more. Test again; repeat as needed.)
- Let cool, then transfer to an airtight container. (Alternatively, transfer marmalade to sterilized canning jars and process according to the jar manufacturer's instructions.)

- Put the whole oranges and lemon juice in a large preserving pan and cover with 2 litres/4 pints water - if it does not cover the fruit, use a smaller pan. If necessary weight the oranges with a heat-proof plate to keep them submerged. Bring to the boil, cover and simmer very gently for around 2 hours, or until the peel can be easily pierced with a fork.
- Warm half the sugar in a very low oven. Pour off the cooking water from the oranges into a jug and tip the oranges into a bowl. Return cooking liquid to the pan. Allow oranges to cool until they are easy to handle, then cut in half. Scoop out all the pips and pith and add to the reserved orange liquid in the pan. Bring to the boil for 6 minutes, then strain this liquid through a sieve into a bowl and press the pulp through with a wooden spoon - it is high in pectin so gives marmalade a good set.
- Pour half this liquid into a preserving pan. Cut the peel, with a sharp knife, into fine shreds. Add half the peel to the liquid in the preserving pan with the warm sugar. Stir over a low heat until all the sugar has dissolved, for about 10 minutes, then bring to the boil and bubble rapidly for 15- 25 minutes until setting point is reached.
- Take pan off the heat and skim any scum from the surface. (To dissolve any excess scum, drop a small knob of butter on to the surface, and gently stir.) Leave the marmalade to stand in the pan for 20 minutes to cool a little and allow the peel to settle; then pot in sterilised jars, seal and label. Repeat from step 3 for second batch, warming the other half of the sugar first.

- Combine oranges, lemon and water in a large wide saucepan or Dutch oven. Cover and bring to a simmer. Simmer very gently over low heat for 2 hours.

(To test for jelling, place a spoonful of the mixture on a chilled plate and refrigerate for 2 minutes. The jelling point has been reached if the marmalade is firm enough to remain divided when a finger is drawn through it and there is no watery edge. Continue cooking and testing as necessary.)
