Mimi's Sweet Potatoes in Orange Cups image

My mother made these every year for the holidays. I have made them for a church fellowship dinner, using 100 oranges. They were a big hit! Little kids can hold them in their hands and walk around without spilling. You can prepare this up to three days ahead of time and it travels well. There's an extra bonus: The orange sections can be used for making delicious ambrosia.

6 sweet potatoes, unpeeled
1/2 stick butter, softened
1/4 cup orange juice
1/4 cup chopped pecans
6 large oranges (heavy for their size)
48 mini-marshmallows

Steps:

  • Preheat oven to 375 degrees F.
  • Cover sweet potatoes with cold water in a large pot and boil until fork tender. Peel the potatoes, transfer to a bowl, and mash. Stir in butter, orange juice and pecans, and mix until incorporated.
  • For the orange shells, cut each orange in half and scoop out the pulp using a small knife or grapefruit spoon. Reserve the pulp for another use.
  • Fill each orange shell with the potato mixture and top off with the marshmallows. Bake until hot and the marshmallows are melted.

6 oranges
3 cups cooked, mashed sweet potatoes
1 cup white sugar
¼ cup orange juice
2 eggs, lightly beaten
1 teaspoon vanilla extract
1 cup butter, softened, divided
1 tablespoon grated orange peel
1 cup brown sugar
½ teaspoon all-purpose flour
1 cup chopped pecans

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Prepare oranges by cutting tops off, 1/4 to 1/2 inch down. Spoon out the flesh, leaving a shell.
  • In a large bowl combine sweet potatoes, sugar, orange juice, eggs, vanilla extract, 1/2 cup butter and grated orange peel. Spoon mixture into orange shells. Place in a deep casserole dish.
  • In a small saucepan over medium heat, combine remaining 1/2 cup butter, brown sugar, flour and pecans. Cook until sugar dissolves in melted butter. Spoon over oranges. Fill casserole dish with water to reach 1/2 inch in depth.
  • Bake in preheated oven for 30 minutes.

4 teaspoons cornstarch

2 tablespoons grated orange zest

Steps:

  • Place sweet potatoes in a Dutch oven and cover with water. Bring to a boil. Reduce heat; cover and simmer for 25-30 minutes or until tender. Drain. When potatoes are cool, peel and cut into 1/2-in. slices. Arrange in a greased shallow 3-qt. baking dish; set aside., In a large saucepan, combine the brown sugar, cornstarch, salt and cinnamon. Sort of a pudding-like side dish. It takes about 5 medium sweet potatoes to equal 4 cups. If you use cooking sherry, omit the salt. If you want to get fancy, you can sprinkle the top with sliced almonds or finely chopped pecans during the last 5 minutes of baking. The preparation time does not include the time to initially cook the sweet potatoes--I do this in batches in the microwave, but have found the time to vary quite a bit depending on the microwave (my current one works much faster than my former one). I microwave them just until they're soft enough to mash.

  • Put the potatoes in a medium pot, cover with water, salt the water and bring to boil over medium heat. Cook until tender, then drain and return the potatoes to the pot. Heat a little oil over medium heat, in a medium saute pan and add the bacon and cook until it begins to crisp. Stir in the orange zest and juice and the potatoes. Mash to desired consistency with some chicken stock to thin the potatoes, if desired. Stir in the coriander, cumin, cinnamon and hot sauce. Transfer to a serving bowl and serve.
