2 oranges (1 juiced, 1 thinly sliced)
3 tablespoons honey
3 tablespoons grainy mustard
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper
8 skin-on, bone-in chicken thighs (about 2 1/2 pounds)
1 bulb fennel, thinly sliced, fronds reserved
1 red onion, thinly sliced
1 pound fingerling potatoes, halved lengthwise, then crosswise if large
8 sprigs thyme, halved
1 tablespoon fennel seeds, crushed

Steps:

  • Place a rimmed baking sheet in the upper third of the oven and preheat to 500 degrees F. Whisk the orange juice, honey, mustard, olive oil, 1 teaspoon salt and a few grinds of pepper in a large bowl. Add the chicken, sliced oranges, sliced fennel, red onion, potatoes, thyme and fennel seeds; toss to coat.
  • Remove the hot baking sheet from the oven and add the vegetables in a single layer. Arrange the chicken skin-side up on top of the vegetables; season with salt and pepper. Return to the oven and roast until the chicken is golden and cooked through and the vegetables are tender, about 30 minutes. Top with fennel fronds.

¼ cup soy sauce
2 tablespoons orange juice
¼ cup cornstarch
2 tablespoons oil
¾ cup orange juice
1 tablespoon soy sauce
1 tablespoon hoisin sauce
1 tablespoon rice vinegar
2 tablespoons brown sugar
1 tablespoon cornstarch

Steps:

  • Slice chicken breast into cubes.
  • In a bowl, combine marinade ingredients. Add chicken and stir to coat.
  • Let marinate at least 1 hour.
  • In a pan, heat oil on medium-high heat. Remove chicken from marinade with a slotted spoon, and cook all sides until golden brown, about 5 minutes.
  • Add sauce ingredients to pan and bring to a boil, mixing continuously, until mixture thickens, about 5 minutes.
  • Serve over rice if desired.

¼ cup all-purpose flour
1 (14.5 ounce) can chicken broth
2 teaspoons lemon juice
⅔ cup orange marmalade
¼ teaspoon ground black pepper

Steps:

  • Saute chicken in a large skillet until lightly browned, about 7 to 10 minutes. Remove from skillet and set aside.
  • In a medium bowl combine the flour, broth, juice, marmalade and pepper. Mix together. Heat mixture in a medium saucepan over medium low heat, stirring constantly, until bubbly. Add chicken and cook over low heat for 4 minutes.

Steps:

  • Chicken thighs should be skinless. If they come with the skin, remove it and trim off any surface fat. Rinse and pat try with paper toweling. In a large nonstick skillet, combine the sauce ingredients, including the jalapeno. Bring the mixture to a boil, then add the chicken. If the chicken thighs still have bones add the chicken thigh bone side down. If boneless the smooth side should go down. Cover and reduce heat to med-low and simmer for 15 minutes. Remove the cover, turn the chicken pieces over, raise the heat to medium-high and continue cooking until the liquid is evaporated and the chicken is glazed, about 10 to 15 minutes.

2/3 cup chicken broth
4 green onions, chopped
1 tablespoon jarred roasted minced garlic
1 teaspoon grated orange zest

  • Place orange juice and 2 tablespoons thyme in an 8-in. square baking dish; add chicken. Refrigerate, covered, 30 minutes., Remove chicken from orange juice mixture; pat chicken dry. 4 chicken drumsticks
1 garlic clove, crushed
2 tablespoons chopped thyme
2 tablespoons orange juice
1/2 cup breakfast marmalade

Steps:

  • Heat oven to 180 C.
  • Combine all ingredients but chicken in a saucepan.
  • Stir over low heat until melted and well combined.
  • Cool slightly then add chicken.
  • Toss to coat then chill for 15 minutes.
  • Place 1 cup of water in a roasting pan.
  • Position wire rack over pan.
  • Place chicken on rack, bake 35 minutes.
  • Brush every 10 minutes with reserved marinade.

½ cup orange marmalade
2 tablespoons Dijon mustard
2 tablespoons barbeque sauce
1 tablespoon sambal oelek
½ tablespoon soy sauce

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Season drumsticks with salt and pepper and place in an oven-proof dish.
  • Bake in the preheated oven for 20 minutes.
  • Combine orange marmalade, Dijon mustard, barbeque sauce, sambal oelek, and soy sauce in a small bowl.
  • Remove dish from oven and brush chicken with marmalade mixture. Return to the oven and bake an additional 10 minutes.
  • Remove dish again, turn chicken over, brush with marmalade mixture, and continue baking until chicken is no longer pink at the bone and the juices run clear, about 10 more minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).
  • Remove dish from oven and baste chicken with remaining marmalade mixture. Preheat the oven's broiler. Return to the oven and broil until chicken starts to blacken and blister, 3 to 5 minutes.
