6 peaches, peeled, cut into 1/2-inch slices (6 cups)

2 teaspoons lemon juice
1 cup Original Bisquick™ mix
2 tablespoons sugar
1/3 cup milk
1 tablespoon butter or margarine, melted
Sweetened whipped cream, if desired

Steps:

  • Heat oven to 400°F. In 4-quart saucepan, mix 1/3 cup sugar, the cornstarch and cinnamon. Stir in peaches, water and lemon juice. Heat to boiling, stirring constantly; boil and stir 1 minute. Pour into ungreased 8- or 9-inch square (2-quart) glass baking dish.
  • In medium bowl, stir Bisquick mix, 1 tablespoon of the sugar, the milk and melted butter until soft dough forms.
  • Drop dough by 6 tablespoonfuls onto hot peach mixture. Sprinkle remaining 1 tablespoon sugar over dough.

1 cup biscuit baking mix of choice
1 cup milk
1/4 teaspoon ground nutmeg
1/4 teaspoon cinnamon
1/2 cup salted butter
1 cup brown sugar
4-5 large ripe peaches (sliced with skin on)

Steps:

  • Preheat your oven to 375 °F.
  • Whisk together the baking mix milk, nutmeg and cinnamon. Pour in the melted butter and mix again. Pour into an ungreased 8x8 pan or a large cast iron skillet.
  • Combine the peaches with the brown sugar, tossing to coat them well. Spoon onto the top of the Bisquick mixture in the pan carefully, trying to keep them on top if you can.
  • Place in the oven and bake for 40-50 minutes until golden brown and baked completely though. You can insert a toothpick into the baked part and see if it comes out clean.

4 large peaches, sliced and peeled ((or 4 cups of frozen peaches, or two 15-ounce cans of peaches SEE NOTES))
1 tablespoon cornstarch
1 teaspoon lemon juice
2/3 cup sugar, divided
1½ cups Bisquick mix
1/2 cup milk, whole or 2%
3 tablespoons butter, grated ((semi-frozen butter is easier to grate))

Steps:

  • Preheat oven to 375º.
  • Stir together peaches, cornstarch, 1/2 cup of sugar, and lemon juice in a medium bowl. Pour them into the bottom of the cast iron skillet or casserole dish. Bake at 375º for 20 minutes (then we'll add the biscuit topping).
  • Rinse the bowl, then stir together Bisquick mix, the rest of the sugar, milk, and butter. The batter will be thick, with a dough-like consistency.
  • Carefully drop biscuit dough by large, rounded tablespoons (I use a small cookie scoop) on top of the peach mixture. Gently press down to submerge the cobbler topping. Continue baking for 15 minutes, until the filling is bubbly and the biscuits on top are golden.
  • Let cool at least 10 minutes before serving. Top with vanilla ice cream, whipped cream, or cream cheese.

48 ounces fresh or frozen sliced peaches (6 ½ cups, with or without peels)
2 cups granulated sugar
1 ½ teaspoon pumpkin pie spice (or apple pie spice belnd)
2 cups Bisquick baking mix
2 cups whole milk
1 cup melted butter

Steps:

  • Preheat the oven to 350 degrees F. Set out a 9 X 13 inch baking dish and a large mixing bowl.
  • If using fresh peaches, slice into wedges and remove the pits. Place the fresh (or frozen) peach slices in the baking dish. Then sprinkle 1 cup sugar, and the pumpkin pie spice over the peaches. Toss to coat the peach, then spread out in a even layer.
  • In the mixing bowl, combine the remaining 1 cup sugar with the Bisquick, and milk. Whisk well. Then whisk in the melted butter.
  • Pour the batter evenly over the top of the peaches. Place the baking dish in the oven and bake for 55- 60 minutes.
  • Check the cobbler after 40 minutes. If it is starting to look dark on top, loosely cover with foil and continue baking.
  • Allow the cobbler to cool at least 15 minutes before serving. Scoop into bowls and serve with vanilla ice cream or whipped cream.
