MY GREAT GRANDMOTHER'S HAM CROQUETTES

My Great Grandmother's Ham Croquettes image

I don't know how this recipe came to be, but we know my great-grandmother made this. It is made with diced ham in the oven and covered in bread crumbs. After shaping them, you can put cheese or anything you want into the middle for a filling. I personally like cream cheese or Cheddar cheese in mine but you can put whatever you want in the middle.

VINCE'S HAM-AND-CHEESE CROQUETTES

Vince's Ham-and-Cheese Croquettes image

Provided by Food Network

Categories     appetizer

Time 1h25m

Yield 20 croquettes

Number Of Ingredients 17

3 tablespoons unsalted butter
1/2 cup chopped onion
3/4 cup all-purpose flour
1/2 teaspoon cayenne pepper
Kosher salt
1 cup milk
1 cup diced thinly sliced ham
1/2 cup grated white cheddar cheese
1/2 teaspoon chopped fresh thyme
3 small cloves garlic, smashed
1 10-ounce box frozen peas
3/4 cup low-sodium chicken broth
1 teaspoon grated lemon zest
Freshly ground pepper
Vegetable oil, for frying
2 large eggs, beaten
1 sleeve saltines (40 crackers), roughly crushed

Steps:

  • Melt the butter in a small saucepan over medium heat. Add the onion; cook until soft, about 5 minutes. Add 1/2 cup flour, the cayenne pepper and 1/2 teaspoon salt; cook, stirring with a wooden spoon to make a dry, stiff mixture, about 3 minutes. Gradually whisk in the milk to make a smooth paste. Stir until the batter forms a ball, about 3 more minutes.
  • Remove from the heat; stir in the ham, cheese and thyme. Spread the mixture evenly into a greased 8-inch square baking pan. Cool, then refrigerate until firm, at least 45 minutes and up to 1 day.
  • Meanwhile, make the pea sauce: Bring 3 cups water and the garlic to a boil in a saucepan. Add the peas; cook until thawed, 30 seconds. Drain, then transfer the peas and garlic to a blender. Add the broth and lemon zest; puree until smooth. Season with salt and pepper and set aside.
  • Heat about 3 inches of oil to 340 degrees in a saucepan over medium-high heat. Place the remaining 1/4 cup flour, the eggs and the saltine crumbs in 3 separate shallow dishes. Cut the chilled dough into 20 4-inch-long croquettes. Dredge each in flour, then dip in the eggs, letting the excess drip off, and roll in the saltines.
  • Fry the croquettes in the oil in batches until golden brown. Drain on a paper-towel-lined plate. Season with salt and serve with the pea sauce.

HAM AND CHEESE CROQUETTES

Ham and Cheese Croquettes image

Provided by Claire Robinson

Categories     appetizer

Time 20m

Yield 8 (2-inch) croquettes

Number Of Ingredients 6

1 cup leftover potatoes from Parsnip-Potato Mash recipe or plain mashed potatoes
1/4 cup all-purpose flour, plus more as needed
1/2 cup finely shredded Gruyere cheese, about 1-ounce
1/2 cup very finely diced cooked ham or country ham, about 2 ounces
Kosher salt and freshly ground black pepper
1/4 cup vegetable oil, for frying

Steps:

  • In a bowl, mix the potatoes, 1/4 cup flour, cheese, and ham with a large rubber spatula until combined. Season with salt and pepper, to taste and divide the mixture into 8 equal portions. Rub your hands with a small amount of flour and form the portions into small flat disks about 1/2-inch thick. Use just enough flour to keep the potatoes from sticking to your hands, but do not coat them completely.
  • Heat the oil in a large nonstick skillet over medium-low heat. Shallow-fry the croquettes, turning once, until golden brown, about 4 minutes per side. Remove from the oil and drain on a paper-towel lined plate. Let the croquettes cool for about 5 minutes before serving.
  • Cook's Note: This recipe doubles easily if you have enough leftover potatoes.

SUPER EASY BAKED HAM

Super Easy Baked Ham image

So one day, I was just too weary to try to do anything special with the ham I picked out for dinner. So I stabbed it with a meat thermometer, and let it bake until done. It was so surprisingly delicious that it's the only way I bake hams now. :) This recipe is written for beginners or for people who have never even thought of baking a ham but found a great sale and now need to know what to do with their hunk of ham. :) Servings are a guess based on the 11 pound ham I served last night.

Provided by CraftScout

Categories     Ham

Time 3h5m

Yield 20 serving(s)

Number Of Ingredients 2

1 (10 -15 lb) cooked ham, bone-in shank half
salt and pepper, to taste (optional)

Steps:

  • Preheat oven to 350F and make sure the racks are all the way on the bottom so there is plenty of room for the ham.
  • Bring ham in packaging to sink and have a pan big enough to hold it nearby. I find a 9"x13" baking pan works great. Make sure your pan is at least an inch deep.
  • Take ham out of wrapper and rinse it with cool water if you think it feels icky. Then find the plastic doohickey on the large cut end and remove it. At this point you can trim off some of the fat if you would like. I usually don't, as most of it renders out into the pan or is very easy to cut around.
  • Place ham in pan with large cut side down.
  • Stab with the business end of a probe style thermometer. This is the kind which has a long metal skewer on one end (the business end), a long cable, and a box which has all the controls and readouts. Make sure the probe goes through a large area of meat, not fat, and doesn't hit one of the bones down the center of the ham. Set your thermometer to alert you when the ham reaches 140°F.
  • When your oven has reached 350F, put the ham in (be careful, it's heavy).
  • Wait until the thermometer alerts you. Then remove the ham from the oven (remember, it's heavy and now it's really hot, too). Remove the probe, and either start slicing or put on a pretty platter and let your family/guests ooh and ahh. :).
  • NOTE: The skin gets very black and crispy. Do not panic, the meat is juicy, I promise. Simply cut the skin off where it is really crispy and get to the meat underneath.
  • ALSO: If you do not have a probe style meat thermometer, or need an idea of timing for preparing the rest of your meal, an already cooked (city) ham will reheat to 140F in approximately 15 minutes per pound. So a 12 pound ham will take 3 hours. Ish.
  • And FINALLY: I like to carve off the leftovers and separate into 1 pound amounts. I then put these into labeled quart sized freezer bags and freeze for casseroles, pasta, or beans another night. The bone can be put into a labeled gallon sized freezer bag, and then thawed for yummy beans another night.

HAM CROQUETTES

Ham Croquettes image

Croquettes can be made and frozen for up to 1 month. Thaw and fry them just before serving. I found that several cooks in Basque restaurants used Panko for the bread crumbs. It is a finer bread crumb so it adheres better. This is not a quick recipe but well worth the wait.

Provided by Ceezie

Categories     Ham

Time 3h5m

Yield 16 croquettes

Number Of Ingredients 10

1/4 lb butter, melted
2/3 cup flour
2 cups whole milk, scalded
1 tablespoon parsley, finely minced
1 teaspoon green onion, finely minced
2 cups cooked ham, chopped fine
3/4 cup flour
2 eggs
2 tablespoons water
1 cup breadcrumbs, finely ground

Steps:

  • Place melted butter and 2/3 cups flour in a heavy 2 quart saucepan over medium high heat. Whisk constantly. When the mixture turns into a thick paste, gradually whisk in the scaled milk. When the milk is consumed, gently stir parsley, green onion and ham into the butter, flour and milk mixture. Chill this mixture for several hours or overnight.
  • Shape the filling into the size of a small thin kiwi. Dip croquettes into the flour and then into the egg mixture. Roll them in bread crumbs. Deep fry them at 400 degrees until golden brown. Drain on paper towels and serve hot.
