PENNSYLVANIA DUTCH FUNNEL CAKES
3 eggs
2 cups milk
1/4 cup sugar
3 1/2 cups flour
1/2 tsp salt
2 tsp baking powder

Steps:

  • Preheat oil in a cast iron skillet on medium high heat (for an electric frying pan preheat to 375 degrees). Leave room between the oil and the top of the pan to allow room for batter to be added. Beat eggs, add milk and sugar. Beat well. In a separate bowl, sift flour, salt and baking powder. Add to egg and milk mixture. Beat until batter is smooth. Batter should be thin enough to flow through the opening of your funnel. If needed, add a little more milk. Put your finger over the bottom of the funnel and pour batter in top. Drizzle batter in hot oil making criss crosses and swirls. (I use a measuring cup with a thin spout to do this, easier for those of us less coordinated!). Let brown on bottom and then carefully flip it over with tongs to brown on the other side. Place on a paper towel to drain for a minute or so and then serve warm with molasses, jelly or sprinkle with powdered sugar.

  • Mix salt, baking powder, and half the flour in a bowl. Set aside.
  • Cream eggs, sugar, and milk in a large bowl. Add flour mixture and beat until smooth. Continue to add remaining flour, but use only enough to achieve desired consistency.Batter will be thin enough to run through a funnel.
  • Heat the oil to 375 degrees F (190 degrees C) in an 8-inch skillet. If using a funnel, cover the bottom of the spout with your finger as you pour the batter in.Put your finger over the bottom opening of the funnel, and fill the funnel with a generous 1/2 cup of the batter.
  • Position funnel over the hot oil and slowly move your finger so batter comes out in a steady stream. Make circular and crisscross motions to form a funnel cake.Move the funnel in a spiral motion until all the batter is released, scraping with a rubber spatula if needed.
  • Just fry for a minute or so on each side, then you're done. Fry until golden brown. Use tongs and wide spatula to turn the cake over carefully.Fry the second side one minute. Remove to a paper towel to drain. Enjoy with desired toppings like powdered sugar, fruit, whipped cream, chocolate, caramel or all of the above!If you happen to find that you have left over funnel cakes you can store them in an airtight container the fridge for later. 2 cups sugar, divided
1/2 cup baking cocoa
1-1/2 cups whole milk, divided
2 unbaked pastry shells (9 inches)
2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1 large egg, room temperature
2 tablespoons shortening
1 teaspoon vanilla extract
Whipped cream, optional

Steps:

  • In a small saucepan, combine 1 cup of sugar and cocoa. Blend in 1/2 cup milk. Cook and stir over medium heat until mixture comes to a boil. Cook and stir until thickened, about 2 minutes. Pour into unbaked pastry shells, tipping to coat the pastry halfway up the sides; set aside. In a bowl, combine flour, baking powder, salt and remaining sugar. Add egg, shortening, vanilla and remaining milk; beat until smooth. Starting at the edge, spoon batter into the pastry shells, completely covering the chocolate. Bake at 350° for 40 minutes or until a toothpick inserted in the center comes out clean. Serve warm or chilled with whipped cream if desired.

3 (9 inch) unbaked pie crusts
1 cup white sugar
½ cup unsweetened cocoa powder
¾ cup water
1 teaspoon vanilla extract
1 ½ cups white sugar
½ cup butter
2 eggs
1 cup milk
2 teaspoons baking powder
1 teaspoon vanilla extract
2 ½ cups all-purpose flour

Steps:

  • Combine 1 cup sugar, cocoa, water, and 1 teaspoon vanilla in a saucepan. Heat over medium-low heat to the boiling point, but do not boil. Set aside.
  • In a large bowl, cream together 1 1/2 cup sugar and butter. Beat in eggs. Stir in milk and 1 teaspoon vanilla. Combine flour and baking powder; mix into the creamed mixture. Divide batter into the pastry shells. Pour 1/3 of the cocoa mixture on top of the cake batter in each pastry shell.
  • Bake at 350 degrees F (175 degrees C) for 25 to 35 minutes, or till cake is done.

1 egg, beaten
2/3 c. lowfat milk
1 1/4 flour
2 tbsp. sugar
1 teaspoon baking pwdr
1/4 teaspoon salt

Steps:

  • Beat lowfat milk and egg together. Blend dry ingredients and gradually add in lowfat milk mix. Beat constantly till batter is smooth. Holding your finger over the bottom of the funnel with a 3/8 or possibly 1/2 inch hole, fill funnel with batter. Hold the funnel as near the surface of veg. oil as possible remove finger and let batter fall into deep fat heated to 375 degrees. Use a circular motion form a spiral cake about 3 to 4 inches in diameter. Immediately replace finger on bottom of funnel. Repeat to create other cakes. Fry to puffy and golden. Turn once. Remove with slotted spoon, drain on paper towels. Sprinkle with powdered sugar or possibly cinnamon and sugar. Serve at once. Makes 2 to 2 1/2 dozen.

1 quart oil for frying
2 tablespoons white sugar
1 egg
1 cup milk
¼ cup confectioners' sugar for dusting

Steps:

  • In a mixing bowl, beat together egg and milk. Beat in flour, salt, baking soda, cream of tartar, and white sugar until smooth.
  • Heat about 1 inch cooking oil in frying pan to 375 degrees F (190 degrees C).
