PAN-FRIED CHEESE TOASTIE



Pan-Fried Cheese Toastie image

It's as simple as a toasted sandwich but it tastes better! In this recipe you don't need to put in the ham or the chives but you can add extra ingredients (onions etc.)

Number Of Ingredients 5

25g (2oz) butter
4 slices wholemeal bread
100g (3oz) cheddar cheese, grated
1 teaspoon snipped fresh chives
100g (3oz) ham, chopped

Steps:

  • Butter the bread and arrange the cheese and ham over half of the slices, buttered side down.
  • Sprinkle over the chives and cover with the remaining slices, buttered side up.
  • Preheat a frying pan and cook the sandwiches for 2 mins on each side, until golden brown and the cheese has melted.
  • Cut into triangles and serve.

1/4 cup olive oil
2 tablespoons butter
4 large slices Italian bread
1 cup fruit jam, such as fig
1/4 cup crumbled blue or Gorgonzola cheese
Flaky sea salt, such as Maldon, for sprinkling

Steps:

  • In a large skillet, heat the oil over medium heat. Add the butter and heat until melted. Add the bread to the skillet and fry each side until golden brown, 3 to 5 minutes per side.
  • Spread the jam generously over the toasted bread. Crumble the cheese over the jam. Sprinkle sea salt on top. Serve immediately.

This recipe is an overnight French Toast recipe. It is very easy to make and cooks up well. The finished toast is not too soft, as with some overnight recipes. I prefer to make mine with Finnish Pulla Bread (a very good recipe here, just search for it), or with any decent bread from the grocery store.

1 loaf bread
1/2 cup butter
1 cup brown sugar
1 teaspoon cinnamon
7 eggs
1 1/2 cups milk
1 pinch salt

Steps:

  • Melt butter in bottom of 9 x 13 pan.
  • Sprinkle brown sugar over butter, then cinnamon over brown sugar.
  • Place as many pieces of bread in the pan as possible.
  • Mix together eggs, salt, and milk. Beat well.
  • Pour mixture over bread, cover and refrigerate overnight.
  • Pre-heat oven to 350, cook for 25 minutes, then flip french toast over and cook for an additional 20 minutes.

1 (12 ounce) package extra-firm tofu, drained
salt to taste
½ cup cornmeal
ground cinnamon, or more to taste
olive oil, or more as needed

Steps:

  • Slice tofu into 1/8-inch-thick slices, laying pieces on a paper towel as you go. Season each side lightly with salt.
  • Place cornmeal in a shallow bowl; add a pinch of salt and cinnamon and stir.
  • Heat olive oil in a saucepan over medium-high heat.
  • Dip each side of the tofu slices in the cornmeal mixture; gently tap off excess. Place tofu in the hot saucepan and cook until golden brown and crisp, 2 to 3 minutes per side.

6 eggs
5 ½ teaspoons white sugar
¼ teaspoon salt
2 cups milk
1 cup all-purpose flour
2 quarts vegetable oil for frying
8 thick slices (1-inch thick) French bread

Steps:

  • Beat the eggs, sugar, and salt together in a mixing bowl. Whisk in the milk, followed by the flour; whisk until smooth.
  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Soak the bread slices in the egg mixture until the egg has penetrated through to the center of the bread. Wipe off the excess egg. Cook in the deep-fryer several pieces at a time to avoid overcrowding. Cook until golden brown on both sides and no longer soggy in the center, about 4 minutes. Drain the French toast on a paper towel-lined plate before serving.
