Papaya-Spinach Salad image

The honey-ginger dressing brings an unlikely combination of ingredients together in this tropical delight.

2 tablespoons lime juice
2 tablespoons honey
2 teaspoons vegetable oil
1/2 teaspoon grated gingerroot or 1/4 teaspoon ground ginger
5 cups bite-size pieces fresh spinach
1/2 cup julienne strips jicama
1/2 cup sliced radishes
1 medium papaya or mango, peeled, seeded and cut up
2 tablespoons sunflower nuts

Steps:

  • In tightly covered container, shake all dressing ingredients.
  • In large bowl, toss dressing and remaining ingredients except nuts. Sprinkle with nuts.

Number Of Ingredients 10

1 large cucumber, peeled, seeded and thinly sliced (about 1 1/2 cups)
1/2 teaspoon salt
1/4 cup rice wine vinegar
4 teaspoons sugar
1 tablespoon peanut oil
1 teaspoon minced Hawaiian chiles or chile paste
2 teaspoons minced fresh ginger
1 large papaya, peeled and cut into 1/2-inch dice (about 1 1/2 cups)
1/4 cup chopped fresh cilantro
6 lettuce leaves

Steps:

  • Sprinkle the cucumber with salt and let drain in a colander for 20 minutes. Rinse and pat dry.
  • In a bowl, whisk together the vinegar, sugar, oil, chiles, and ginger. Add the cucumber, papaya, and cilantro and toss. Line a serving platter or 4 individual plates with lettuce leaves, and top each with about 1/2 cup of salad.
  • Serve.

2 large ripe tomatoes, cut into wedges
2 English cucumbers, peeled and sliced into 1/4-inch thick slices
1 papaya, peeled, diced large and seeds reserved

Steps:

  • In a mixing bowl whisk vinegar while slowly adding olive oil. Season with salt and pepper and toss with tomatoes, cucumbers, papaya, and papaya seeds. Taste and adjust seasoning.
  • Serve family style.

1 papaya, preferably unripe
1 cucumber
1 1/2 tablespoons superfine sugar
1 1/2 tablespoons lime juice
3 tablespoons fish sauce
12 mint leaves
3 shallots, peeled and finely sliced
12 cherry tomatoes, halved
1 red chili pepper, deseeded and finely sliced
6 large lettuce leaves
3 tablespoons sweet chili sauce
3 tablespoons unsalted cashews, roughly crushed (optional)

Steps:

  • Peel the papaya, remove the seeds and, using a peeler, slice the flesh lengthways. Cut into strips.
  • Thinly slice the cucumber lengthways with the peeler, avoiding the seeds and cut into strips.
  • Mix the sugar, lime juice, fish sauce and mint in a large bowl and toss with the papaya, cucumber, shallots, tomatoes and chili. Chill.
  • Line 6 bowls with the lettuce leaves and pile the salad on top.
  • Drizzle with a little sweet chili sauce and scatter with cashews if using.
  • Serve.
