CHOCOLATE RASPBERRY BLINTZES



Chocolate Raspberry Blintzes image

It's a minor adjustment to the cheese blintzes located on the website. Sour cream complements the blintzes for dipping.

1 (8 ounce) package cream cheese, softened
⅓ (13 ounce) jar chocolate-hazelnut spread (such as Nutella®)
½ (8 ounce) package mixed berry cream cheese, softened
1 tablespoon milk
2 teaspoons vanilla extract
½ cup butter, melted
1 cup white sugar
2 tablespoons ground cinnamon
1 loaf sliced white bread, crusts removed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix cream cheese, chocolate-hazelnut spread, berry cream cheese, milk, and vanilla extract together in a bowl.
  • Pour melted butter into a shallow bowl.
  • Combine sugar and cinnamon in a separate shallow bowl.
  • Flatten bread slices out on a work surface. Spread cream cheese mixture over each slice. Roll up each slice. Dip rolls in melted butter; coat with cinnamon sugar. Arrange seam-side down in a baking dish.
  • Bake in the preheated oven until lightly golden, 15 to 20 minutes.

This comes from a cookbook published by a local chapter of B'nai B'rith Women in 1963. They offer two fillings, both milk-based and meat-based. You could also use fruit fillings, such as a fruit compote. Note: Zaar doesn't recognize matzah cake meal, only regular matzah meal. The recipe specifies the cake meal.

2/3 cup matzo meal
1/2 teaspoon salt
1 1/4 cups water
2 1/2 cups beef or 2 1/2 cups turkey
2 eggs
1 medium onion, diced
1 tablespoon margarine
1/2 teaspoon salt
1 dash pepper
1/2 lb well-drained cottage cheese
2 eggs
3 tablespoons melted butter
salt

Steps:

  • For Batter:.
  • Combine eggs, salt, and water. Add gradually to matzah cake meal, stirring hard to avoid lumps.
  • Fry into thin pancakes on one side only.
  • Place a rounded spoonful of filling onto each pancake.
  • Fold envelope fashion -- one end, then both sides, then roll to close completely.
  • Fry in oil.
  • Note: you can make the blintzes ahead, then put them packed closely together in a baking dish, and reheat in a slow oven, and serve casserole style at the table.
