This brisket is fantastic! So tender! I've been eating or making it for 30 years and is a family favorite. It freezes well and makes awesome hot sandwiches if leftover.

3 -4 lbs beef brisket, trimmed
1 large onion, sliced
garlic powder
salt
pepper
1 tablespoon Worcestershire sauce
2 tablespoons ketchup
1 tablespoon kitchen bouquet Gravy Master
Coca-Cola (only the real thing!)

Steps:

  • Season brisket with garlic powder, salt and pepper.
  • Mix ketchup, Worcestershire Sauce, and Kitchen Bouquet and spread over beef.
  • Place in covered roaster and cover with onion slices, then coca-cola.
  • Cover and roast at 350°F until almost done, about 3 hours.
  • Remove meat and slice.
  • Thicken gravy with cornstarch (about 2 tbs in 1/4 cup cold water) and adjust seasonings.
  • Return meat to gravy and continue cooking 1 hour.
  • Serve over mashed potatoes or rice.
  • This can also be prepared using a crockpot. Use same ingredients and cook according to your crockpot manufacturers directions for roasting meat.

1 (5- to 7-pounds) brisket (washed and drained)
1 small onion (peeled, trimmed, and chopped)
1/2 cup oil
1/2 cup red wine (dry)
1/4 cup honey
1/4 cup Coca-Cola
1/4 cup ketchup
1/2 teaspoon mustard powder
1/2 teaspoon paprika

Steps:

  • Place the brisket in a roasting pan. Put the onion, oil, wine, honey, Coca-Cola, ketchup, mustard, and paprika into the work bowl of a food processor and pulse until chopped. Pour over the brisket. Cover and marinate in the refrigerator overnight.
  • Preheat oven to 325 F/165 C. Bake the brisket, covered, in the preheated oven for approximately 4 hours, or until a digital instant-read thermometer inserted into the center of the brisket reads 190 F, for well done.
  • When cool, thinly slice the brisket against the grain . It is very important to slice the brisket correctly. If the meat is not sliced against the grain, it will be tough. Serving suggestion: Make gravy with drippings from the meat. Melt 4 tablespoons of parve margarine in a heavy saucepan . Slowly stir in 4 tablespoons of all-purpose flour (use potato starch instead of flour during Passover). Cook and stir for approximately 3 minutes, or until margarine just starts to darken. Slowly stir in 2 cups of drippings. Continue cooking and stirring until the gravy thickens to desired consistency. Season with salt and pepper . Pour some of the gravy over the sliced brisket, and serve the remainder alongside.

8 to 10 pound brisket
Garlic cloves
1 quart beef stock (unsalted or low salt)
3 large onions, sliced
3 tablespoons vegetable oil
2 teaspoons salt
2 teaspoons Emeril's Original Essence, recipe follows
1 teaspoon freshly ground black pepper, to taste
1 teaspoon onion powder
1 teaspoon garlic powder
1 cup ketchup
1 cup chili sauce
1 cup brown sugar
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme

Steps:

  • Preheat oven to 500 degrees F.
  • Using a paring knife and your finger, stuff brisket all over with garlic. Place brisket in a baking dish or casserole and bake until browned on top, remove from oven, turn brisket and return to oven until browned on both sides. Reduce oven temperature to 350 degrees F. Add enough beef stock to casserole to come up 1 inch on sides, cover with foil and bake one hour.
  • While brisket is cooking, heat a large skillet over medium high heat and saute onions in vegetable oil, stirring occasionally, until caramelized and most liquid has evaporated, about 20 minutes. Set aside.
  • Remove brisket from oven after one hour and add caramelized onions and all remaining ingredients, moving meat around to combine ingredients. Cover and continue to bake until very tender but not falling apart, another 2 to 3 hours. Remove brisket to a carving board and slice. Strain reserved cooking liquids and pour over sliced brisket. Brisket may be returned to casserole dish and allowed to cool, then served the next day. (Reheated in oven.)
  • Brisket is better if made a day in advance.
  • Combine all ingredients thoroughly and store in an airtight jar or container.

1 (28 ounce) can plum tomatoes with juice
1 (5 pound) beef brisket
1 ½ teaspoons salt, or to taste
¼ teaspoon ground black pepper, or to taste
3 tablespoons olive oil, divided
3 large onions, thinly sliced
2 cloves garlic
2 cups dry red wine
5 medium carrots, peeled and cut into 2-inch pieces
2 stalks celery, peeled and cut into 2-inch sticks

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • Puree plum tomatoes with juice in a food processor; set aside.
  • Trim any remaining excess fat from the brisket. Generously season both sides with 1 1/2 teaspoons salt and 1/4 teaspoon pepper.
  • Heat olive oil in a Dutch oven over medium-high heat. Add brisket and brown very well, 4 to 5 minutes per side. Transfer to a plate and set aside.
  • Reduce heat to medium-low and add remaining olive oil, onions, and garlic. Cook, stirring frequently, until quite brown and very soft, about 25 minutes. Add red wine, raise heat to high, and bring to a boil. Cook for about 2 minutes, scraping the browned bits of food off the bottom with a wooden spoon.
  • Add pureed tomatoes, carrots, and celery and stir well to combine. Return brisket to the pot, spooning some of the liquid and vegetables over it.
  • Cover and transfer to the preheated oven. Cook until brisket is very tender, about 3 hours, carefully turning the meat halfway through.
  • Remove from the oven and let cool slightly, 10 to 15 minutes. Carefully remove brisket to a cutting board and slice across the grain into 1/4-inch thick slices.
  • Transfer sauce and vegetables to a food processor and process until smooth. Adjust seasoning with salt and pepper if necessary.
  • Return sauce to the pot and place sliced brisket in the sauce. Warm over medium-low heat for 5 minutes before serving.

It wouldn't be Passover without homemade brisket. This sweet-and-savory version uses a quick sear and a long, slow bake for a fork-tender holiday dish.

1/4 cup packed brown sugar
3 cloves garlic, finely chopped
1 cup red wine
3/4 cup chili sauce
1/4 cup ketchup
3 tablespoons apple cider vinegar
1 brisket (3 1/2 lb), trimmed
Salt and pepper
3 onions, thinly sliced
3 sprigs fresh thyme

Steps:

  • Heat oven to 300°F. In small bowl, mix brown sugar, garlic, wine, chili sauce, ketchup and vinegar with whisk until well blended. Set aside.
  • Heat 12-inch skillet over medium-high heat 2 minutes. Pat beef brisket dry with paper towel; season with salt and pepper on each side. Sear beef 2 minutes on one side (beef will develop a dark crust). Turn beef; sear on other side.
  • Place beef in large roasting pan. Cover with sauce, sliced onions and thyme sprigs. Cover with foil; bake 3 hours.
  • Let beef stand 10 minutes. Cut across grain into slices. Serve with cooked onions and pan drippings.
