ORANGE DREAMSICLE LUSH
Everyone's favorite childhood ice cream treat becomes a sophisticated potluck dessert in this refreshing and creamy lush. Betty Crocker™ sugar cookie mix makes a perfect cookie crust, which gets topped with layers of creamy vanilla pudding, orange Jell-O® gelatin and Cool Whip whipped topping, then garnished with mandarin oranges for added flair. It's guaranteed to be the favorite dessert at any potluck, and we recommend making it in a glass baking dish so everyone can see the pretty layers in its presentation.

Steps:
- Heat oven to 375°F. Make and bake drop cookies as directed on pouch. Cool completely, about 30 minutes.
- In food processor, process half of the cookies to coarse crumbs. Remove to medium bowl. Continue to process remaining cookies to coarse crumbs; add to bowl. Stir in melted butter until well blended. In ungreased 13x9-inch (3-quart) glass baking dish, press cookie crumb mixture firmly in bottom. Set aside.
- In small bowl, place gelatin, and add boiling water; beat with whisk until blended. Stir occasionally about 2 minutes or until mostly dissolved. In medium bowl, beat dry pudding mixes and milk with whisk about 2 minutes or until thick. Stir in dissolved gelatin. Let stand 5 minutes, stirring occasionally.
- In large bowl, beat cream cheese and powdered sugar with electric mixer on medium speed until smooth, scraping down side of bowl frequently. Beat in 2 cups of the whipped topping. Spread over cookie crust.
- Pour pudding mixture over cream cheese layer; spread evenly over top. Drop remaining whipped topping by spoonfuls over pudding layer; carefully spread until even. Refrigerate 5 hours.
- When ready to serve, sprinkle orange segments on top. Cut into 6 rows by 3 rows. Cover and refrigerate any remaining pieces.

BEST ORANGE DREAMSICLE CAKE
If you love the taste of orange cream popsicles you'll love this cake. I made this for a cookout in the summer and there was no leftovers to go back home.

Steps:
- Set out Cool Whip to thaw.
- Prepare cake mix according to directions for a 9x13 pan,.
- After the cake is done and you bring out of oven, poke holes throughout the cake with a fork.
- Prepare Orange jello with 1 cup of boiling water and pour over the cake.
- Allow to cool in pan for 30 minutes.
- In a large mixing bowl, mix together with hand mixer (or other) instant vanilla pudding with 1 cup milk.
- Stir in orange and vanilla extracts, mix well.
- Fold in Cool whip Spread over the cake and chill for 2 to 3 hours before serving.

- Preheat oven to 350°F. Spray 3 9-inch cake pans with nonstick baking spray* and line with parchment. Spray parchment with baking spray. *NOTE: I used 2-9-inch cake pans, figuring I'd slice those in half. That was tricky, as the cake was so moist, that it took a miracle that transferring the layers didn't break! In a large bowl sift together flour, sugar, baking soda, baking powder, and salt. Add oil, orange juice, eggs and sour cream. Optional: I add 1/4 teaspoon of pure orange oil, for more flavor. Beat at medium speed with a mixer until smooth. Pour into prepared pans and bake for 20 - 25 minutes or until wooden pick inserted in center comes out clean. Let cool in pans for 10 minutes. Remove from pans and cool completely on wire racks. Frosting: In a large bowl, beat butter and cream cheese at medium speed with a mixer until creamy. Add orange zest and orange juice, beating until combined. Gradually add confectioners sugar beating until smooth. (NOTE: You can add more confectioner's sugar, if you prefer a much thicker frosting.) Assembly: Spread frosting evenly between layers and on top and sides of cake.
ORANGE DREAMSICLE CHEESECAKE
Great Summertime Dessert. Brings back childhood memories of eating creamsicles. This takes awhile but so refreshing for a hot and humid day BBQ.

Steps:
- Line the bottom and sides of a 9 inch springform pan with a single piece of extra wide aluminum foil as smoothly as possible. Pour Orange Soda into the pan until 1/4 inch deep. (Drink the rest.) Place in freezer, making sure the pan is level. Freeze until hard.
- Beat cream cheese and sugar until smooth and fluffy. Beat in the milk. Refrigerate 30 minutes in mixing bowl to chill. Fold 1-1/2 of the tubs of the Cool Whip into the cheese mixture until smooth and fluffy. Spoon filling into the springform pan on top of the frozen orange soda layer. Freeze at least 4 hours.
- Mix the graham cracker crumbs, sugar, and melted butter until they form a crumbly texture. Gently sprinkle the crumbs over the frozen cheesecake, smoothing across to form a crust. Return to the freezer overnight.
- When ready to serve, remove the sides of the springform pan. Loosen the the aluminum foil from the sides of the cheesecake. Invert the cheesecake onto a serving plate and carefully peel off the aluminum foil. Decorate the top with the remaining Cool Whip and serve immediately. Cut with a knife that has been dipped in hot water. Store any leftovers in the freezer.
- NOTE: If you are one of those "chocolate nuts", add 2 Tbsp cocoa to the graham cracker crumbs when making the crust.

- Preheat the oven to 350 degrees F.
- In a small bowl, combine the granulated sugar, pecans, and zest; set aside.
- Score and cut the cream cheese into 20 equal pieces, approximately 3/4 teaspoons each. Separate the biscuits.
- Place about 3/4 teaspoon cream cheese in the center of each biscuit. Fold each biscuit in half over the cheese, pressing the edges to seal.
- Dip the biscuits in melted butter, then dredge in the granulated sugar mixture. Place the biscuits, curved-side down, in a single layer in the hollows of a lightly greased 12-cup bundt pan, spacing them evenly (do not stack). Place any remaining biscuits around the tube, filling any gaps. Drizzle any remaining butter over the biscuits, and sprinkle with any remaining sugar mixture.
- Bake for 35 to 40 minutes, until golden brown. Immediately invert the cake onto a serving platter.
- Combine the confectioners' sugar and orange juice, stirring well; drizzle the glaze over the warm cake. Serve warm.

- Bake the cake as directed in a 9x13-inch pan. Let cake cool completely. Poke holes in cooled cake. Mix 1 package orange gelatin dessert with 1 cup boiling water and 1 cup cold water. Pour over cake. Cover and refrigerate for 4 hours. Mix pudding mix with cold milk the other package of orange gelatin dessert and vanilla. Beat by hand with a whisk until thickened. Fold in the whipped topping. Frost the cake with the pudding mixture. These instructions will make a single layered amazing cake that is delicious! NOTE: To get the layered look as in this particular picture make your cakes in well greased and floured pans-follow baking instructions. I then tip then out onto cooling rack and invert back onto a cookie sheet. Proceed to poke holes and do the jello thing and refrigerate (or put out on the cold enclosed back porch as we do). It is a little tricky to get the layers, but I love our pan lifters to help with this process.
ORANGE DREAM CAKE
A lighter version of the Creamsicle Cake. We can finally have our cake and eat it too! Can't remember where this originated but I have served this at family dinners without anyone suspecting it was low fat. Made as presented this is 4 points per piece. Cooking time includes chilling time.

- Mix Cake mix, soda and egg whites together.
- Pour batter into a 9 X 13 inch pan.
- Bake as directed on box.
- When done, use a meat fork to poke holes across the top of the entire cake.
- Allow cake to cool.
- In a medium bowl, mix together 1 box of the orange gelatin, 1 cup hot water and 1 cup cold water.
- Pour gelatin mixture over top of cake.
- Refrigerate for 2 to 3 hours.
- Meanwhile, mix remaining box of jello, vanilla pudding mix, nonfat milk, and vanilla together. Beat well.
- Fold whipped topping into this mixture, and spread on top of cake.
- Chill in refrigerator until serving.

- Beat shortening and sugar together in a large bowl with an electric mixer until light and fluffy; add eggs one at a time, thoroughly beating each egg into the batter before adding the next. - Preheat oven to 350 degrees.
- Beat salad dressing, cake mix, whipped topping mix, juice, eggs and grated orange peel at medium speed with electric mixer for 2 minutes. Pour into greased and floured 10-inch bundt pan.
