Peanut oil, nice and hot, gives the crab cakes a nice clean-tasting fry. A squeeze of lemon is all they need after that!

Number Of Ingredients 11

1 lb. crabmeat
1/2 c. dried bread crumbs
c. mayonnaise
1/4 c. finely chopped scallions
1 large egg
1 tbsp. Old Bay seasoning
1 tsp. mustard powder
1/2 tsp. Worcestershire sauce
1/4 tsp. Hot sauce
peanut or vegetable oil
1 lemon

Steps:

  • In a large bowl, combine the crab, bread crumbs, mayonnaise, scallions, egg, Old Bay seasoning, mustard powder, Worcestershire sauce, and hot sauce. Shape into six 3-inch patties.
  • In a large skillet, heat 1/4 inch of oil over medium heat. When the oil is hot, carefully place the crab cakes, in batches, in the pan and fry until the undersides are golden, 4 to 5 minutes. Carefully flip the crab cakes and fry on the other side until golden brown, about 4 minutes. Serve warm, with pretty lemon wedges.

Makes 10 to 12 servings

Number Of Ingredients 14

¾ cup butter, softened
1½ cups sugar
3 large eggs
2 cups mashed ripe banana (about 4 medium)
1 teaspoon vanilla extract
2¼ cups all-purpose flour
1½ teaspoons baking powder
½ teaspoon baking soda
¼ teaspoon salt
¼ cup plus 2 tablespoons whole buttermilk
1 (3.4-ounce) box banana cream instant pudding mix
2 cups milk
1 (12-ounce) container frozen whipped topping, thawed
Garnish: grated chocolate

Steps:

  • Preheat oven to 350°. Spray a 13x9-inch baking pan with baking spray with flour. In a large bowl, beat butter and sugar with a mixer at medium speed until fluff y. Add eggs, one at a time, beating well after each addition. Beat in banana and vanilla. In a medium bowl, whisk together flour and next 3 ingredients. Add flour mixture to butter mixture alternately with buttermilk, beginning and ending with flour mixture, beating just until combined after each addition. Pour batter into prepared pan. Bake for 35 minutes or until a wooden pick inserted in center comes out clean. Let cool for 10 minutes. With the handle of a wooden spoon, poke holes halfway through cake in ½-inch intervals. In a medium bowl, whisk together pudding mix and milk until smooth and slightly thickened. Pour over top of cake. Loosely cover cake, and refrigerate for 4 hours. Spread whipped topping onto cake; garnish with chocolate, if desired. Cover and refrigerate for up to 3 days.

1 teaspoon Worcestershire sauce
1 teaspoon dry mustard
1/2 lemon, juiced
1/4 teaspoon garlic powder
1 teaspoon salt
1 dash cayenne pepper
flour, for dusting
1/2 cup peanut oil
favorite dipping sauce, for serving

Steps:

  • In a large bowl, mix together all ingredients, except for the flour and peanut oil. Shape into patties and dust with flour.
  • Heat oil in a large skillet over medium heat. When oil is hot, carefully place crab cakes, in batches, in pan and fry until browned, about 4 to 5 minutes. Carefully flip crab cakes and fry on other side until golden brown, about 4 minutes. Serve warm with preferred sauce.

2 (6 ounce) cans tuna fish
1 egg, beaten
2 tablespoons diced green onions
1/4 cup mayonnaise
1/2 cup breadcrumbs
lemon juice (optional)

Steps:

  • Heat 1-inch of oil in a large skillet over medium heat.
  • While oil is heating, combine tuna, beaten egg, green onions, mayonnaise, 1/4 cup bread crumbs, and lemon juice, to taste, if desired.
  • Form into patties and dust with additional bread crumbs.
  • When oil is hot, fry patties until golden brown, about 2 minutes on each side. Remove from oil and drain on paper towels before serving.

2 tablespoons finely chopped red bell pepper
1/4 cup grated Parmesan cheese
2 tablespoons vegetable oil
1 lb picked free of any bits of shell white or claw crabmeat
1/2 teaspoon minced, plus 1 tablespoon chopped for sauce fresh parsley
1 egg
1 cup breadcrumbs
2 cloves minced and divided garlic
3 tablespoons heavy cream
1 tablespoon dijon mustard
1 finely chopped green onion
3 tablespoons butter
1 cup mayonnaise
1/4 cup buttermilk
2 tablespoons chopped fresh dill
1 tablespoon grated lemon zest
2 teaspoons fresh lemon juice

Steps:

  • To make the sauce, combine mayo, buttermilk, dill, 1 tablespoon parsley, lemon zest and juice and 1 garlic clove in a bowl and stir well. Refrigerate until chilled. The sauce will thicken as it chills.
  • To prepare the crab cakes, melt 1 tablespoon of butter in a heavy skillet over medium heat. Sauté the onion, bell pepper and 1 clove garlic until the pepper is limp, approximately 3 minutes. Add the cream, mustard, 1 egg, 1/2 teaspoon parsley, cayenne pepper and 1/2 cup bread crumbs, to taste, and mix well. Gently fold in the crabmeat.
  • Form the mixture into 8 patties, about 1/2-inch thick. In a mixing bowl, combine the remaining 1/2 cup of bread crumbs with the Parmesan. Pat this topping onto both sides of the patties. Refrigerate until firm, about 2 hours.
  • Using a skillet, combine the oil and remaining 2 tablespoons of butter. Sauté the crab cakes in the hot oil-butter mixture for approximately 3 minutes on each side or until golden brown. These crab cakes can also be baked for 7 to 10 minutes in a 400 °F oven.
  • To serve, spoon a dollop of the lemon dill sauce along side each crab cake.

2 cups sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
3 beaten eggs
3/4 cup vegetable oil
4 large ripe bananas , mashed
1 cup pecans , chopped
1 1/2 teaspoons vanilla extract
butter for greasing pan, at room temperature
1 teaspoon vanilla extract
1 (8-ounce) package cream cheese , at room temperature
1 cup butter , at room temperature
1 pound confectioner's sugar , sifted
1/2 cup pecans , chopped

Steps:

  • Butter and flour 3 (9-inch) round cake pans; set aside. Preheat oven to 350 °F.
  • In a mixing bowl, stir together the flour, sugar, baking soda, cinnamon and salt. Add the eggs and oil and stir just until the dry ingredients are moistened; do not beat. Stir in the banana, 1 cup pecans and 1 1/2 teaspoon vanilla. Divide the batter among the prepared pans and bake for 23 to 28 minutes, or until a wooden pick inserted in the center comes out clean. Cool the cake layers in the pans for 10 minutes, and then turn them out onto a rack to cool completely. While the cake cools, make the frosting.
  • In a bowl, blend together the cream cheese and butter. Gradually add the confectioner's sugar and beat until light and fluffy. Beat in 1 teaspoon vanilla. Stir in 1/2 cup pecans, or reserve them to sprinkle over the frosted cake. Fill and frost the cake when it is completely cool.
  • This makes enough for a naked cake. To make enough to frost the entire cake, multiply ingredients by 1.5.
