- Coarsely crumble the saltines into a medium bowl. Mix in the tomato, onions and mayonnaise. Stir in the hard-cooked egg, and season with salt and pepper.

EASY ZUCCHINI AND SQUASH CASSEROLE

Steps:
- Preheat oven to 400°. Spray a 13x9-inch baking dish with cooking spray.
- In a large bowl, toss together squash, zucchini, salt, and pepper. Arrange half squash and zucchini in a single layer in prepared pan. Top with half of onion, and sprinkle with half of cheese. Repeat layers, top with crushed crackers, and cover with foil.
- Bake for 45 minutes. Uncover and bake 15 minutes more or until golden brown.

A simple side dish just perfect for serving with seafood, Soda Cracker Salad is similar to potato salad but comes together super fast.

- Chop the tomato, red onion, jalapeño peppers, green onions, and boiled eggs. Mix the mayonnaise and sour cream together until smooth. Add this to the tomato mixture and refrigerate until chilled and ready to serve.
- Just minutes before you are ready to serve, add in the crumbled bacon and the saltine crackers. Mix well and put on top of lettuce leaves. Serve immediately as this will not wait for your guest.
