This is a showstopper, perfect for summer. Serve with vanilla ice cream to make it a perfect dessert. Use frozen fruit, if the fresh is not in season.

1 pint fresh raspberries
3 fresh peaches, pitted and chopped
2 tablespoons lemon juice
⅓ cup white sugar
1 pinch cinnamon
1 cup rolled oats
½ cup unsalted butter
¼ cup brown sugar
¼ cup white sugar
1 teaspoon vanilla extract
1 teaspoon salt
1 pinch cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease 6 small ramekins.
  • In a bowl, mix the raspberries, peaches, lemon juice, 1/3 cup white sugar, and 1 pinch cinnamon.
  • In a separate bowl, mix the oats, butter, brown sugar, 1/4 cup white sugar, vanilla, salt, and 1 pinch cinnamon.
  • Fill the prepared ramekins with equal amounts of the raspberry and peach mixture, and top with equal amounts of the oats mixture. Arrange the ramekins on a baking sheet.
  • Bake 35 minutes in the preheated oven, until crisp and golden brown. Cool 10 minutes before serving.

Steps:

  • Preheat oven to 375F. Lightly spray an 8 or 9-inch baking dish and set aside.
  • In a large bowl, combine peaches, raspberries, sugar, lemon juice, corn starch and salt.

¾ cup white sugar, divided

1 lemon, juiced
2 cups rolled oats

½ cup unsalted butter, cubed
¼ cup brown sugar
1 teaspoon salt

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Combine peaches, raspberries, 1/2 cup white sugar, 1/2 tablespoon cinnamon, and lemon juice in a bowl.
  • Combine oats, flour, butter, remaining 1/4 cup white sugar, brown sugar, and salt in a bowl; mix crumble topping thoroughly until smooth and not lumpy.
  • Pour fruit mixture into a large ceramic baking dish, spreading evenly. Top evenly with oat crumble mixture.

4 to 5 pounds firm, ripe peaches (10 to 12 large peaches)
1 orange, zested
1 1/4 cups granulated sugar
1 cup light brown sugar, packed
1 1/2 cups plus 2 to 3 tablespoons all-purpose flour
1/2 pint raspberries
1/4 teaspoon salt
1 cup quick-cooking oatmeal
1/2 pound cold unsalted butter, diced

Steps:

  • Preheat the oven to 350 degrees F. Butter the inside of a 10 by 15 by 2 1/2-inch oval baking dish.
  • Immerse the peaches in boiling water for 30 seconds, then place them in cold water. Peel the peaches and slice them into thick wedges and place them into a large bowl. Add the orange zest, 1/4 cup granulated sugar, 1/2 cup brown sugar, and 2 tablespoons of flour. Toss well. Gently mix in the raspberries. Allow the mixture to sit for 5 minutes. If there is a lot of liquid, add 1 more tablespoon of flour. Pour the peaches into the baking dish and gently smooth the top.
  • Combine 1 1/2 cups flour, 1 cup granulated sugar, 1/2 cup brown sugar, salt, oatmeal, and the cold, diced butter in the bowl of an electric mixer fitted with a paddle attachment. Mix on low speed until the butter is pea-sized and the mixture is crumbly. Sprinkle evenly on top of the peaches and raspberries. Bake for 1 hour, until the top is browned and crisp and the juices are bubbly. Serve immediately, or store in the refrigerator and reheat in a preheated 350 degree F oven for 20 to 30 minutes, until warm.

3/4 cup granulated sugar
1/4 cup cornstarch
2 teaspoons balsamic vinegar
1 1/2 pounds frozen raspberries
8 ounces prepared corn bread, crumbled (2 cups crumbs)
1 1/4 cups candied or glazed nuts, pecans or walnuts, broken
1/3 cup light brown sugar
1/2 teaspoon ground cinnamon

Steps:

  • Heat the oven to 400°F. Grease a 9- by 13-inch baking dish with 1 teaspoon of the oil or butter.Combine the peaches, granulated sugar, cornstarch, and vinegar in a bowl until the dry ingredients are dissolved and the peaches are evenly coated. Add the raspberries and toss gently to combine. Pack the fruit into the baking dish, and bake until the edges are bubbling and the top looks dry, about 40 minutes. Meanwhile, spread the cornbread crumbs on a sheet pan and bake in the oven until slightly toasted, about 5 minutes. Mix the toasted crumbs with the nuts, brown sugar, cinnamon, and remaining oil or butter. Top the baked fruit with the crumb mixture in an even layer that covers the entire surface. 1 can (14 ounces) whole-berry cranberry sauce

1/4 cup chopped walnuts
1/4 cup butter, melted

Steps:

  • Arrange peaches in a greased shallow 2-qt. baking dish. Stir cranberry sauce and pour over peaches. In a small bowl, combine the brown sugar, flour, cookie crumbs and nuts; sprinkle over fruit. Drizzle with butter. Bake, uncovered, at 400° for 18-20 minutes or until bubbly.

1/2 cup yellow cornmeal
2 cups all-purpose flour (spooned and leveled)
3/4 cup sugar
1/2 teaspoon coarse salt
1 cup (2 sticks) unsalted butter, melted
10 ounces frozen raspberries

Steps:

  • Preheat oven to 350 degrees. Line an 8-inch square baking dish with parchment paper, leaving a 1-inch overhang on 2 sides. In a food processor, pulse almonds until finely ground (you should have about 1 cup). In a large bowl, whisk together ground almonds, cornmeal, flour, sugar, and salt. Add butter and stir until dry ingredients are evenly moistened. Press about two-thirds the dough into dish. Scatter raspberries over top and crumble remaining dough over raspberries. Bake until top is golden brown, 35 to 40 minutes. Let cool in dish on a wire rack before cutting into 9 bars.
