PEANUT BUTTER DIVINITY ROLL
Loved these as a kid. Mom called them pinwheels. She stopped making them, lost the recipe I guess. So it took a while for me to get it right.

Steps:
- Mix sugar, corn syrup, and water together in a deep pan; bring to a boil. Heat to 250 degrees F (120 degrees C), or until a small amount of syrup dropped into cold water forms a rigid ball (hard ball stage), about 15 minutes.
- Beat egg whites in a glass or metal bowl until stiff peaks form. Lift your beater or whisk straight up: the egg whites will form sharp peaks.
- Slowly pour sugar mixture over egg whites while beating with an electric mixer. Beat until candy clings to a spoon and loses some of its shine. Spread candy mixture onto a sheet of waxed paper; sprinkle with confectioners' sugar. Generously spread peanut butter over candy mixture. Roll candy into one large roll; cut into 2 rolls. Slice each roll into desired pieces.

- Combine the sugar, evaporated milk, butter and salt in a wide saucepan and bring the mixture to a boil, stirring often. Cook until the temperature reaches 240°F when measured with a candy thermometer, about 5 minutes. (If you don’t have a candy thermometer you can determine if the fudge has boiled for long enough and reached the “soft ball” stage by dropping a ¼ teaspoon of the mixture into a bowl of chilled water. It should form a soft ball when picked up with your fingers.)
- Remove the saucepan from the heat and stir in the peanut butter until smooth. Then add the marshmallow crème and vanilla extract. Stir until melted and smooth.

- In a saucepan over medium high heat, mic together the sugar, corn syrup, and water. Stir until the sugar has dissolved then add the candy thermometer and stop stirring. Watch for the candy thermometer to reach exactly 255 degrees, then immediately remove from heat.
- While the sugar mix is heating up, use a stand mixer with a large bowl to beat the egg whites. Beat until the egg whites are super white, fluffy, and form stiff peaks.
- When the sugar mix reaches 255, start to SLOWLY pour into the egg whites while the mixer is still running at a fast speed. You want to do a super slow drizzle, it took me about 5 minutes to pour it all in.

- Grease an 8-inch square pan with butter. Trim a piece of parchment paper to 8 inches wide and line the pan with the parchment sling, leaving enough overhand on two sides to cover the top of the fudge with later.
- Combine the butter and peanut butter in a 4-quart microwave-safe bowl and cover with plastic wrap. Poke a few holes in the plastic wrap to vent the steam, then microwave for 2 minutes on high. Stir and microwave on high for 2 more minutes. (Use caution when removing this mixture from the microwave, it will be very hot.) Add the vanilla and powdered sugar to the peanut butter mixture and stir to combine with a wooden spoon. The mixture will become hard to stir and lose its sheen.
- Spread mixture into prepared pan. Fold the excess parchment paper so it covers the surface of the fudge and refrigerate until cool, about 2 hours. Cut into 1-inch pieces and store in an airtight container at room temperature for up to a week.
