Sweet Potato-Peanut Soup image

The cayenne adds a nice mild heat while the cinnamon adds warmth and depth. This is a great fall soup! From Woman's Day magazine, with a few added twists of my own.

2 tablespoons coconut oil (or olive oil)
1 onion, chopped
salt (to taste)
pepper (to taste)
4 garlic cloves, finely chopped
2 tablespoons ginger, freshly grated
2 teaspoons cumin
1/4 teaspoon cayenne
1 teaspoon cinnamon
1 tablespoon cilantro
2 tablespoons peanuts, crushed
3 large sweet potatoes, cut into 1/2 inch pieces (1.5 pounds)
1/2 cup creamy peanut butter
14 ounces crushed tomatoes
4 cups water

Steps:

  • Heat two TBL oil in a large saucepan over medium heat.
  • Add chopped onion; season with pepper and salt.
  • Cook onion until tender (8-10 minutes).
  • Stir in garlic and ginger; cook one more minute.
  • Add cumin, cayenne, and cinnamon; stir until blended.
  • Add the sweet potatoes into the pot.
  • Stir in the crushed tomatoes, creamy peanut butter, and water.
  • Add cilantro and crushed peanuts.
  • Bring to a boil, then reduce and simmer, covered, until sweet potatoes are tender (about 25 minutes).

1 tablespoon vegetable oil
1 large onion, chopped
2 cloves garlic, minced
2 teaspoons minced fresh ginger root
1 ½ teaspoons ground cumin
1 ½ teaspoons ground coriander
½ teaspoon ground cinnamon
1 pinch ground cloves
3 medium tomatoes, chopped
1 ½ pounds sweet potatoes, peeled and chopped
1 carrot, peeled and chopped
4 ½ cups water
1 teaspoon salt
¼ cup chopped, unsalted dry-roasted peanuts
1 pinch cayenne pepper
2 tablespoons creamy peanut butter
1 bunch chopped fresh cilantro

Steps:

  • Heat the oil in a large saucepan over medium-high heat. Saute the onion 10 minutes, until lightly browned. Mix in the garlic, ginger, cumin, coriander, cinnamon, and cloves. Stir in the tomatoes, sweet potatoes, and carrot, and continue to cook and stir about 5 minutes.
  • Pour water into the saucepan, and season the mixture with salt. Bring to a boil, reduce heat, and simmer 30 minutes.
  • Remove the soup mixture from heat. In a food processor or blender, blend the soup and peanuts until almost smooth. Season with cayenne pepper. Return to the saucepan. Whisk in the peanut butter, and cook until heated through. Serve warm topped with fresh cilantro.

This spicy, tasty soup is something a bit different and easy to assemble. The bright orange-fleshed sweet potato is not only attractive to the eye, but tastes beautiful. We loved it when my brother served it and begged the recipe from him. For best results, use Thai-style sweet chili sauce.

1 tablespoon vegetable oil
2 lbs sweet potatoes, peeled and chopped into 1 ich pieces (the orange-fleshed variety)
2 large onions, peeled and chopped
2 cloves garlic, crushed
1 tablespoon ground cumin
8 cups chicken stock
1 1/4 cups crunchy peanut butter
1 tablespoon chili sauce
1/4 cup chopped peanuts
1/4 cup chopped chives (or chopped cilantro)

Steps:

  • Heat oil, and saute onions in a heavy-based stockpot.
  • Add garlic and cumin, and stir-fry 30 seconds over medium heat.
  • Add chopped sweet potato, cover and cook for 10 minutes over low heat, stirring occasionally to prevent sticking.
  • Add chicken stock, bring to boil, then reduce heat and simmer for 10 minutes.
  • Add peanut butter and chili sauce, and mix into the soup thoroughly.
  • Simmer uncovered for 20 to 30 minutes, stirring occasionally, until vegetables are tender.
  • Puree with a hand-held blender, such as a Bamix, until the sweet potato is almost smooth.
  • Serve immediately, garnished with chopped peanuts and chives or cilantro.

1 tablespoon canola oil
1 large onion, diced (about 2 cups)
1 medium red bell pepper, seeded and diced (about 1 cup)
2 medium carrots, diced (about 1 cup)
1/2 teaspoon cayenne pepper
1/2 teaspoon freshly ground black pepper
1 clove garlic, minced (about 1 teaspoon)
1 teaspoon peeled and grated fresh ginger
1 large sweet potato, peeled and cubed (2 cups)
6 cups low-sodium chicken broth or vegetable broth
1 (14.5-ounce) can no salt added diced tomatoes, with their juices
2/3 cup creamy natural peanut butter
2 teaspoons honey
1/2 cup chopped scallion greens (about 3 scallions)

Steps:

  • Heat the oil in a large soup pot over a medium-high heat. Add the onions, bell pepper and carrots and cook, stirring until the vegetables soften, about 5 minutes. Add the cayenne, black pepper, garlic and ginger and cook for 1 minute more. Stir in the sweet potato, broth, and tomatoes and bring to a boil. Reduce the heat to medium-low and simmer until the potatoes are tender, about 20 minutes.
  • *Puree the soup in the pot using an immersion blender or in a regular blender in 2 batches and return the soup to the pot. Add the peanut butter and honey and stir, over low heat, until the peanut butter melts. Serve warm, garnished with the scallions.
  • *When blending hot liquids: Remove liquid from the heat and allow to cool for at least 5 minutes. Transfer liquid to a blender or food processor and fill it no more than halfway. If using a blender, release one corner of the lid. This prevents the vacuum effect that creates heat explosions. Place a towel over the top of the machine, pulse a few times then process on high speed until smooth.

1 can (28 ounces) diced tomatoes, undrained
1 cup fresh cilantro leaves
1/2 cup chunky peanut butter
3 garlic cloves, halved
2 teaspoons ground cumin
1 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon smoked paprika
3 pounds sweet potatoes (about 6 medium), peeled and cut into 1-inch pieces
1 can (15 ounces) chickpeas or garbanzo beans, rinsed and drained
1 cup water
8 cups chopped fresh kale
Chopped peanuts and additional cilantro leaves, optional

Steps:

  • Place the first 8 ingredients in a food processor; process until pureed. Transfer to a 5-qt. slow cooker; stir in sweet potatoes, beans and water., Cook, covered, on low 6-8 hours or until potatoes are tender, adding kale during the last 30 minutes. ½ cup sour cream
1 teaspoon grated lime zest
2 large sweet potatoes, peeled and cubed
1 tablespoon butter
1 onion, sliced
2 cloves garlic, sliced
4 cups chicken stock
½ teaspoon ground cumin
¼ teaspoon crushed red pepper flakes
2 tablespoons grated fresh ginger root
¼ cup smooth peanut butter
1 lime, juiced
2 tablespoons chopped fresh cilantro
salt to taste
1 large roma (plum) tomato, seeded and diced

Steps:

  • In a small bowl, stir together the sour cream and lime zest. Set aside in the refrigerator to allow the flavors to blend.
  • Melt butter in a large pot over medium heat. Add onion and garlic, and cook for about 5 minutes, until softened. Add sweet potatoes, and chicken stock. Season with cumin, chili flakes and ginger. Bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes, until potatoes are tender.
  • Puree the soup using an immersion blender or regular blender. If using a counter top blender, puree in small batches, filling the blender just a bit past half way to avoid spillage. Whisk peanut butter into the soup, and heat through. Stir in lime juice, and salt.
  • Ladle into warm bowls, and top with a dollop of the reserved sour cream, a few pieces of diced tomato, and a sprinkle of cilantro.
