1 cup pecan halves
2 tablespoons raspberry vinegar
½ teaspoon Dijon mustard
½ teaspoon sugar
½ teaspoon salt
1 pinch freshly ground black pepper to taste
6 tablespoons olive oil
6 cups mixed salad greens, rinsed and dried
¾ cup dried cranberries
½ medium red onion, thinly sliced
crumbled feta cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Spread pecans evenly on a baking sheet. Toast for 8 to 10 minutes, or until lightly browned and fragrant.
  • In a small bowl, stir together the vinegar, mustard, sugar, salt, and pepper; mix until sugar and salt dissolve. Whisk in olive oil.
  • In a salad bowl, toss together the greens, cranberries, pecans, onions, and cheese. Drizzle with vinaigrette, and toss gently to coat.

Candied pecans provide such a sweet and yummy crunch while the cranberries and feta bring such strong flavors to the plate, yet surprisingly, combine to bring a delicious and desirable taste. The creamy balsamic vinaigrette takes these odd but delicious ingredients and tops it off with such a unique and perfect dressing that makes these flavors and textures work together perfectly.

2-3 cups spring mix salad
1 cup sugar coated pecans
1 cup craisins
1 cup crumbled feta
4 cloves garlic, grated
3 Tbsp. mayonnaise
2 Tbsp. lemon juice
2 Tbsp. sugar
1 Tbsp. Dijon Mustard
2 tsp. Morton's Nature seasoning
1½ tsp. salt
¼ cup balsamic vinegar
¾ cup extra virgin olive oil

Steps:

  • In a large bowl or on a large plate, lay out spring mix salad. Top with sugar coated pecans, craisins crumbled feta.
  • You could use a store bought Creamy Balsamic Vinaigrette or you can make the recipe above by whisking together garlic, mayo, lemon juice, dijon mustard, sugar, Nature's Seasoning, and salt until well combined. Add the balsamic vinegar and whisk well. Slowly add in the olive oil (while whisking).
  • Pour dressing over prepared salad and enjoy! Refrigerate any leftover dressing.

Steps:

  • In a large skillet, melt 1 tablespoon butter over medium heat. Add pecans; cook and stir until lightly browned, about 5 minutes. Remove pecans from skillet.
  • Add remaining 2 tablespoons butter to the skillet, and melt. Add zucchini, and saute until soft. Toss with pecans and cheese. Serve.

I was given this recipe years ago when I lived in Colorado. It is a very simple but delicious salad. It always gets lots of compliments and completely disappears at potlucks.

1 head romaine lettuce, torn into medium sized pieces
2 whole green onions, chopped
1 cup craisins
1/4 cup sliced almonds
1/2 cup diced celery
1 medium chopped avocado (I have never added this item.) (optional)
1/4 cup vegetable oil
2 tablespoons cider vinegar
2 tablespoons granulated sugar
1/2 teaspoon salt
1/4 teaspoon black pepper or 1/4 teaspoon white pepper

Steps:

  • Heat dressing ingredients until sugar dissolves, stirring constantly.
  • Cool dressing.
  • Mix salad ingredients.
  • Just before serving pour dressing over salad and toss well.
  • Serve and enjoy.

6 tablespoons all-purpose flour
¼ cup brown sugar
2 tablespoons butter
½ cup margarine, softened
1 cup white sugar
1 egg
1 ½ teaspoons vanilla extract
1 ½ cups all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 cup grated zucchini
1 cup cranberries
½ cup walnut pieces

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Prepare 12 muffin cups with liners.
  • Mix 6 tablespoons flour and brown sugar together in a bowl for topping; cut butter into the flour mixture until you have pea-sized crumbs. Set aside.
  • Beat margarine and white sugar with an electric mixer in a large bowl until light and fluffy. Beat egg and vanilla into the butter mixture.
  • Mix 1 1/2 cups flour, baking powder, baking soda, and salt together in a separate bowl; gradually beat into the butter mixture. Fold zucchini, cranberries, and walnuts into the mixture; spoon into prepared muffin cups, filling nearly to the top. Sprinkle reserved topping mixture onto the batter.

1/2 cup dried cranberries
1/2 medium red onion, sliced and separated into rings
1/2 cup pecan pieces, toasted
1/4 cup crumbled blue cheese
1/4 cup olive oil
2 to 3 tablespoons red wine vinegar
1 garlic clove, minced
Salt and pepper to taste

Steps:

  • In a large bowl, combine the spinach, cranberries, onion, pecans and blue cheese. In a small bowl, whisk the oil, vinegar, garlic, salt and pepper until blended. Drizzle over salad and toss to coat. Serve immediately.

1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon

1/2 cup vegetable oil
1/2 cup sour cream
1 teaspoon vanilla extract
2 cups shredded zucchini
1 cup chopped pecans

Steps:

  • In a large bowl, combine the first six ingredients. In another bowl, beat the eggs, oil, sour cream and vanilla. Stir into dry ingredients just until moistened. Fold in zucchini and nuts., Transfer to two greased 9x5-in. loaf pans. Bake at 350° for 60-65 minutes or until a toothpick inserted in the center comes out clean. Cool for 15 minutes before removing from pans to wire racks to cool completely.

One 6-ounce can frozen orange juice concentrate
1 cup chopped pecans or walnuts
1/2 cup chopped celery (optional)

Steps:

  • Combine the pineapple juice (from the can) and the water in a small saucepan; bring to a boil and remove from the heat. Pour the juice mixture into a large bowl and add the gelatin dessert mixes; stir until dissolved. Add the drained pineapple, cranberry sauce, orange juice concentrate, nuts, and celery, and mix well. Spray a 6-cup mold with nonstick cooking spray. Pour the gelatin mixture into the mold and refrigerate until firm.
