CRANBERRY-PECAN SHRIMP SALAD
I had this recipe in my "to make file" since 2005. I finally made it today. I'm still trying to figure out why I waited so long to make this. Simply delicious. Hope you don't wait as long as I did to try this recipe. I used dried parsley, regular mayo and regular yogurt because that's all I had on hand; it was still delicious.

CANDIED PECAN, CRAISIN, FETA SALAD WITH CREAMY BALSAMIC VINAIGRETTE
This is the most amazing and delicious salad! Candied pecans provide such a sweet and yummy crunch while the cranberries and feta bring such strong flavors to the plate, yet surprisingly, combine to bring a delicious and desirable taste. The creamy balsamic vinaigrette takes these odd but delicious ingredients and tops it off with such a unique and perfect dressing that makes these flavors and textures work together perfectly.

- I like to make my salad dressings in a small jar but a coffee cup or glass measuring cup works well too. Combine the mustard, maple syrup & vinegar in a small container. Use a fork to combine well. If I'm working with a jar with lid, I'll combine the ingredients by putting the lid on the jar and give it a shake.
- Adding the oil. You want to emulsify the ingredients. Oil and vinegar do not naturally combine but the mustard acts as an emulsifier to help them play nice together. Vigorous stirring or shaking helps too so I like to slowly add (pour) the olive oil into the jar with one hand and stir hard with a fork in the other hand.
