PECAN PIE BROWNIES
Two favorite desserts in one! Gooey brownie with caramel pecan pie topping. Your guests will thank you! Serve with a big dollop of lightly sweetened whipped cream. Can be made a day ahead and stored, in an airtight container, at room temperature.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Line a deep 9-inch springform pan with aluminum foil and coat generously with cooking spray.
- Whisk brownie mix, oil, 2 eggs, and water together in a bowl until well combined. Spread batter into the prepared pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 30 minutes. Remove from oven and leave oven on.
- Whisk brown sugar, corn syrup, 2 eggs, bourbon, vanilla extract, and salt together in a bowl. Add melted butter slowly, whisking until well combined. Add pecans and stir to coat in the filling. Pour gently over the brownie layer; spread evenly using a spatula.
- Bake in the hot oven until center is set, 30 to 35 minutes. Let cool to room temperature, at least 2 hours.

- In a saucepan over low heat, melt butter and chocolate. Stir in sugar; cool slightly. Add eggs and vanilla; mix well. Stir in flour and pecans. , Spread into a greased 8-in. square baking pan. TOFFEE-PECAN SKILLET BROWNIES

- Make the brownies: Preheat the oven to 325˚. Butter a 10-inch cast-iron skillet. Combine the butter and chocolate in a medium saucepan over medium heat. Cook, stirring, until melted and smooth, about 3 minutes. Remove from the heat and stir in both sugars until dissolved. Whisk in the eggs, one at a time, until smooth and glossy, then whisk in the vanilla. Whisk in the flour and kosher salt until combined, then whisk in the pecans. Spread the batter evenly in the prepared skillet.
- Transfer the skillet to the oven and bake until the brownies are slightly cracked on top and a toothpick inserted into the center comes out mostly clean, 35 to 40 minutes. Transfer to a rack and let the brownies cool in the skillet.
- As soon as the brownies come out of the oven, make the toffee topping: Combine the brown sugar, butter and corn syrup in a medium saucepan over medium-high heat and bring to a boil, stirring occasionally. Reduce the heat to medium to maintain a steady simmer and cook, without stirring, until the sugar is completely dissolved, about 2 minutes. Carefully pour in the heavy cream (it might boil up slightly) and simmer until thickened, 5 to 8 minutes. Remove from the heat and stir in the pecans. Let cool until thickened but still pourable, about 20 minutes.
- Pour the topping on the brownies and let set, 1 hour. Sprinkle with flaky sea salt, if using. Serve with ice cream.
PECAN NUT BROWNIES

- Preheat the oven to 190C/ Gas 5. Butter a 24cm x 34cm baking tin, 6cm deep, and line with greaseproof paper, extending the paper above the rim.
- Melt the butter and chocolate in a heatproof bowl set over a pan of barely simmering water. Stir until smooth, then remove the bowl from the pan and set aside to cool slightly.
- Using an electric mixer, beat the eggs for two minutes, then add the brown sugar and beat until the mixture reaches a ribbon consistency, about 6 minutes. Using a spatula, incorporate into the melted chocolate, but do not overwork. Add the flour and nuts in a steady stream, folding them in with the spatula until evenly mixed; stop mixing at this point.
- Pour the mixture into the prepared tin and immediately place in the oven.
- Cook for 20-25 minutes, lowering the oven setting to 180C/ Gas 4 after ten minutes. To test, insert a skewer or knife tip into the centre; it should come out clean and shiny. Set aside to cool in the tin. Once cooled, lift out the brownie, using the lining paper. Cut into squares or smaller pieces.
MOIST FUDGY PECAN BROWNIES

- Preheat oven to 350°F Lightly grease a 5 by 3" loaf pan. Line the bottom of pan with a strip of tin foil to fit down the length & up the short sides with enough extra length to extend over the edges by 1 1/2". Lightly grease foil and set pan aside.
- Place butter and chocolate in a med. microwaveable bowl. Microwave on med. power until chocolate is soft and butter is melted, about 1 minute Stir until chocolate is smooth. Add sugar and whisk well. Then add egg white and vanilla. Whisk until blended. Add the flour and salt. Whisk well. Fold in pecans. Spread batter evenly into prepared pan.
- Bake until toothpick inserted in centre comes out with moist crumbs, 28-30 minutes; the top will be dry and starting to shrink from edges of pan. Do not overcook.
- Remove from oven and place on wire rack. Let brownie cool completely in the pan. Use edges of foil to lift the brownies out of the pan. Remove the foil and cut brownie into three servings.

PECAN PIE BROWNIES
Topping a panful of brownie batter with honey-spiked pecan pie filling adds a gooey sweetness and crunch to the fudgy bars beneath. You can substitute any other nut for the pecans: Walnuts, almonds, pistachios, cashews or a combination will all work perfectly. This recipe calls for an 8-inch square pan, but, if you only have a 9-inch square pan, shave a few minutes off the baking time.

- Heat oven to 350 degrees. Lightly butter an 8-inch square metal baking pan and line it with parchment paper, leaving about 2 inches of excess on each side to help you lift the cooked brownies out of the pan.
- Make the brownies: Put butter and chocolate into a medium pot and place it over low heat. Melt the mixture, taking care not to let the chocolate burn and stirring constantly with a rubber spatula until smooth. Scrape chocolate mixture into a large bowl and mix in the sugar. Let mixture cool until it's just warm to the touch, about 5 minutes.
- Whisk eggs into cooled chocolate mixture. Whisk in flour, cocoa powder, vanilla and salt. Mix in chocolate chips, if using. Scrape batter into prepared pan and smooth it into an even layer. Set aside.
- Make the pecan layer: In a medium bowl, whisk together butter, honey, brown sugar, heavy cream and fine sea salt. Fold in pecans until well coated.
- Pour pecan mixture in an even layer on top of the brownie batter. Sprinkle the top lightly with flaky sea salt. Bake until the top is set and firm to touch, especially in the center, 45 to 55 minutes. Transfer the pan to a wire rack to cool completely before cutting into 16 squares.
