1 1/2 lbs ground beef
1 cup cracker crumb
1 1/4 teaspoons salt
1/4 teaspoon pepper
1 large egg, beaten
1 medium onion, chopped
1/2 cup tomato sauce
3/4 cup ketchup
2 tablespoons firmly packed brown sugar
1 cup water
2 tablespoons mustard
2 tablespoons vinegar

Steps:

  • Preheat oven 325 degrees Fahrenheit.
  • In a large mixing bowl, combine ground beef, cracker crumbs, salt, pepper, egg, onion and tomato sauce.
  • Mix lightly.
  • Shape into a loaf and place in a baking dish.
  • In a small mixing bowl, combine the ketchup, brown sugar, water, mustard and vinegar.
  • Brush the loaf with this mixture.
  • Place meat loaf in oven and bake 1 hour and 15 minutes, basting occasionally with sauce.

3 bell peppers
1 lb. ground beef
1/4 c. bread crumbs
1 egg, lightly beaten
1 tsp. Worcestershire sauce
1/2 onion, finely chopped
1/2 tsp. fresh thyme leaves, chopped
1 clove garlic, minced
1 tbsp. tomato paste
Kosher salt
Freshly ground black pepper
1/4 c. ketchup
1 tbsp. brown sugar
2 c. shredded Monterey Jack
1 tbsp. fresh parsley, for garnish

Steps:

  • Preheat oven to 350° and line a medium baking sheet with parchment paper. Cut ends off peppers and finely chop (minus the stems), then set aside. Remove seeds and slice peppers into 2" thick rings; you should be able to get 2 rings out of each pepper. Place on prepared baking sheet.
  • In a large bowl, combine beef with chopped peppers, bread crumbs, egg, Worcestershire sauce, onion, thyme, garlic, and tomato paste. Season with salt and pepper and stir until combined. Fill each pepper ring with meat loaf mixture.
  • In a small bowl, whisk together ketchup and brown sugar and brush on tops of meat loaves. Bake for 35 minutes, then top with cheese, and bake 5 to 10 minutes more, or until cheese is melty. Garnish with parsley and serve.

1 onion
1 green bell pepper
1 red bell pepper
1 yellow bell pepper
2 ½ pounds ground beef
1 (15 ounce) can tomato sauce
12 crushed saltine crackers
¼ cup brown sugar
1 egg, beaten
2 tablespoons Worcestershire sauce
2 tablespoons chicken stock
2 tablespoons olive oil
1 tablespoon Montreal steak seasoning
1 clove garlic, minced
ground black pepper to taste
¼ cup ketchup, or as needed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x11-inch baking dish with cooking spray.
  • Cut 3/4 each of onion, green bell pepper, red bell pepper, and yellow bell pepper into thin slices. Dice remaining 1/4 of onion and peppers.
  • Mix ground beef, diced onion and peppers, tomato sauce, crushed crackers, brown sugar, egg, Worcestershire sauce, chicken stock, olive oil, steak seasoning, garlic, and pepper together in a bowl until well-combined.
  • Spread 1/2 of the beef mixture into the bottom of the prepared baking dish. Top meat with sliced onion and peppers, leaving a 1-inch border. Spread remaining beef mixture over vegetables, tucking in sides to seal vegetables in the center of the meatloaf. Pour ketchup over the top of the meatloaf.
  • Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

1/2 white onion (diced)
1 cup dried bread crumbs
1/2 cup milk
1 large egg
2 tablespoons Worcestershire sauce

1/2 teaspoon crushed red pepper flakes
1/2 cup ketchup

Steps:

  • Preheat the oven to 350 degrees. Lightly grease a 9x13 pan.
  • In a large mixing bowl, knead together the ground beef, onion, bread crumbs, milk, egg, Worcestershire sauce, salt, basil, oregano, pepper, and red pepper flakes.
  • Shape the meat into a loaf and put it into the prepared pan. Bake in the 350 degree oven for 45 minutes.

1 small green pepper
2 eggs
1/2 cup milk
1/2 cup shredded sharp cheddar cheese
1/4 cup ketchup
2 teaspoon Worcestershire sauce

Steps:

  • Remove top and seeds from green pepper; cut in half lengthwise. In a large saucepan, cook the pepper halves in boiling water for 5 minutes or until crisp-tender; set aside. In a large bowl, beat eggs. Add the next seven ingredients. Crumble beef over mixture and mix well. Stuff pepper halves with some of the meat mixture. I got this recipe from "Leftovers Makeovers" This Meat Loaf is Meal number one, then you can use the leftovers to make Recipe #237966 the next night or Recipe #237930 the next if you have enough left over. Here at my DD's I might get enough left over to make one or the other but never both. The kids love this meatloaf, and it is one I appreciate since there is no tomato in it so I can enjoy it without suffering later.

If you want dice up the left over meat loaf, add some cooked elbow macaroni, and your favorite bottled or canned spaghetti sauce, heat a bit, serve with a green salad and you have one quick work-night meal with out much added cost.

1/2 cups onions (finely diced)
1/4 cup red bell peppers (finely diced)

1 cup dry/stale bread crumbs
1/4 cup whole milk ((may need more or less))
3 tablespoons unsalted butter (melted)
2 eggs beaten
2 tablespoons parsley
1 teaspoon sage
1 teaspoon oregano
1 teaspoon basil
1 teaspoon black pepper
2 teaspoons sea salt
1½ teaspoons onion powder
1½ teaspoons garlic powder
1/2 teaspoon paprika
8 oz tomato sauce ((can use less if desired))
2 lbs 90 % lean ground beef
1/2 cup natural ketchup
1/2 cup tomato sauce
1 teaspoon honey
1 teaspoon prepared yellow mustard
1 tablespoon brown sugar
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
liquid smoke (splash)

Steps:

  • Preheat oven to 350 F.
  • Heat olive oil in a large skillet.
  • Add onions, peppers and celery and saute until tender.
  • Add garlic and cook just until fragrant.
  • Remove from heat and let cool. Set aside.
  • In a large bowl, add breadcrumbs and just enough milk to moisten the crumbs.
  • Add remaining ingredients, except for the beef.
  • Mix these ingredients well.
  • Add the beef. Use your hands to mix it in. Don't be alarmed if the mixture seems a bit too wet at first. Handle the beef as little and as gently as possible to prevent it from becoming tough when baked. Mix JUST until everything is combined.
  • Optional: Fry a tiny piece of the mixture to check the taste and adjust the seasonings if desired.
  • When all of the ingredients are well combined, spoon the mixture into a loaf pan and smooth to an even layer. Set aside.
  • To make the glaze, combine all glaze ingredients and spread half on top of meatloaf.
  • Bake for 30-35 minutes and then top with remaining glaze. ( you don't have to use all of the glaze. You can save some to use when serving the meatloaf of desired)
  • Continue baking for another 30-35 minutes or until internal temperature reaches 160 F. or to your desired (safe) doneness. ( I like to flip the oven to broil for the last few minutes to get the glaze a bit sticky but watch it carefully if you decide to do this)
  • Remove from oven, drain off the fat and let meatloaf rest before slicing. (If meatloaf is steaming hot when you cut into it, it will fall apart)
