ZITI PEPPERONI CASSEROLE
This is my kids' favorite meal. And it's so easy to prepare, that they often do it themselves! It's very cheesy! I've also made this and cooked it in the microwave during the summer. Freezing instructions included. If you prefer, you may sub in ricotta cheese for the cottage cheese.

Steps:
- Set aside some of the cheeses for topping the casserole.
- Mix remaining ingredients in a large bowl.
- Spoon into a 13x9 baking dish.
- Top with remaining cheese.
- Bake at 375º for 40 minutes or until lightly browned on top.
- To freeze: Cover dish with foil and freeze. When frozen you can pop it out of the container and put in a freezer bag if desired. To heat: Thaw and preheat oven to 350°F Cover and bake for 20 minutes. Uncover and bake for 10-15 minutes more.
PEPPERONI BAKED ZITI
Steps:
- Preheat your oven to 350 degrees. Boil your pasta in salted water; cook it about 80% done, so if the box says 10 minutes boil for only 8 minutes. Drain and set the pasta aside. In a large pot sauté about three quarters of the halved pepperoni until it renders out most of its fat, if you have a lot of fat in the pan drain off the majority of it.
- Add in the diced onion and garlic. Cook the onion until it is starting to become transparent, then add in the crushed tomatoes with all the liquid in the can. Cook for about five more minutes before you add in the meat sauce. Use the red wine to make the sauce the right thickness. Turn down the heat and leave the sauce on the stove while you make the cheese filling.
- In a bowl mix the ricotta and most of the mozzarella cheese together with either the egg & Italian spices or the pesto. Add a good bit ground black pepper too. You may want to taste the cheese mixture and adjust the flavoring as you desire, I especially recommend adding extra pesto if the cheese is not tasting really flavorful.
- Now it's time to assemble, don't' forget to spray that ziti pan with non-stick spray. Baked ziti is free form lasagna; just throw it all in there until it looks good. I start with a big scoop of sauce then alternate "layers" of pasta, cheese mixture and more sauce until the pan is full. Then top it all off with the remaining shredded cheese and a layer of the uncooked pepperoni. Bake in a 350 degree oven until the top browns and the edges are bubbling, about 30-45 minutes. If you are concerned that it's not cooked through put a meat thermometer in the middle and get the exact temperature, about 160F is what you are looking for. Allow the pasta to rest for at least ten minutes before you scoop some out, top with extra parmesan as desired.

- Cook pasta according to package directions. , Meanwhile, in a large nonstick skillet, cook turkey over medium heat until no longer pink; drain. Transfer to a large bowl. Add the 29-oz. can tomato sauce, 1 cup mozzarella cheese, mushrooms, spinach, ricotta cheese, Italian seasoning, garlic, garlic powder, pepper flakes and pepper. Drain pasta; fold into turkey mixture., Transfer to a 13x9-in. baking dish coated with cooking spray. Combine the water and remaining tomato sauce; pour over pasta mixture. - Preheat oven to 350 degrees. In a large frying pan, sauté the pepperoni over moderate heat until lightly browned, about 3 minutes. Transfer to paper towels to drain. Pour off the fat from the pan and wipe the pan clean. In the same pan, heat the oil over moderately low heat. Add the onion and cook, stirring occasionally, until soft, about 10 minutes. Add the garlic and cook, stirring, for 30 seconds. Stir in the sausage and cook until no longer pink. Stir in the tomatoes with their juice, breaking them up. Add the salt,oregano, and basil, cover, and simmer over low heat for 10 minutes. In a large pot of boiling, salted water, cook the ziti until just done, about 13 minutes. Drain and toss with the sauce, the pepperoni, and the parsley. Top with the mozzarella and finish with the parmesan. Cover and bake about 30 minutes or until cheeses are melted and bubbly.
THE BEST BAKED ZITI
I am half Italian, was raised eating the finest Italian-American cuisine, and have filmed almost 2000 recipe videos, so when you consider all of those facts, it seems incredible that I have never posted a video for baked ziti. Hopefully I make up for that long wait by posting what I think is the best version of it.

- Cut down the length of each sausage with a sharp knife. Remove and discard casings.
- Heat olive oil in a large saucepan set over high heat. Add sausages and onion. Cook, stirring occasionally and breaking up with a spatula, until the sausage begins to brown, and the onion turns translucent, 5 to 7 minutes. Add oregano, thyme, and rosemary and cook for 1 minute more. Pour in marinara sauce. Pour 1 cup water into each jar to rinse out remaining sauce; add to the saucepan. Stir together and bring sauce to a simmer.
- Reduce the heat to medium-low, and let simmer, stirring occasionally, for 1 hour. Taste for seasoning and adjust if needed. Turn off heat and reserve until needed. Before using, skim any excess fat that rises to the surface.
- While sauce simmers, bring a large pot of generously salted water to a boil. Add ziti and cook, stirring occasionally, for 1 or 2 minutes less than the directions on the package call for, about 8 minutes. Drain well and transfer into a large mixing bowl.
- Carefully add the meat sauce and stir until thoroughly combined. Let rest for 5 minutes.
- Meanwhile, preheat the oven to 375 degrees F (190 degrees C). Grease a large 9x15-inch or 9x13-inch casserole dish with a drizzle of olive oil.
- Use a slotted spoon to transfer half of the pasta and sauce mixture to the prepared dish, then use a spatula to even out into a uniform layer. Top with 1/2 of the ricotta cheese, 1/2 of the mozzarella cheese, and then 1/2 of the grated Pecorino Romano cheese, being sure to distribute evenly. Top with the rest of the pasta and sauce mixture and give the pan a little shake to settle the sauce. Repeat the cheese application.
- Bake in the center of the preheated oven until the cheese is melted and the casserole is piping hot, 30 to 35 minutes. Remove from the oven and let cool 10 to 15 minutes before serving. Top with parsley.
