PERUVIAN BREAKFAST SANDWICH

this is a sandwich inspired by "pan con chicharron", a famous sunday breakfast dish composed by spareribs or pancetta part of the pork, sweet potatoes, "salsa criolla" and ciabatta bread.

Time: 75 minutes

Number Of Ingredients: 13

Ingredients: boneless ribs,salt,black pepper,yellow peppers,garlic cloves,limes, juice of,olive oil,cilantro,sweet potatoes,vegetable oil,ciabatta rolls,mayonnaise,cumin

Steps:

  1. brine pork with salt pepper and a bit of cumin at least an hour or two ahead of time
  2. wash pork with cold water
  3. add pork in a large pot and cover with cold water and 3 garlic cloves
  4. let it cook in high heat until the water is fully consumed and pork starts searing with its own fat
  5. add a olive oil and keep searing pork until golden
