PHILLY CREAM CHEESE BRUNCH QUICHE
We had this at a morning meeting, and it's quite tasty! Feel free to substitute or add ingredients (i.e., bacon, swiss cheese, spinach, etc ).

Steps:
- On a lightly-floured surface, roll pastry to a 12" circle. Place in 10" pie plate.
- Turn under edge and flute. Prick bottom and sides of pastry with fork and bake at 400 for 12 to 15 minutes or until pastry is lightly browned.
- Combine cream cheese and milk in saucepan. Stir over low heat until smooth.
- Gradually add cream cheese mixture to eggs, mixing until well blended.
- Saute onions in butter.
- Add onions and remaining ingredients to cream cheese mixture and mix well.
- Pour into pastry shell and bake at 350 for 35 to 40 minutes or until set.
- Garnish with ham slices and fresh dill, if desired.
SEAFOOD CREAM CHEESE QUICHE
This is a very delicious seafood quiche, I have made this quite often for a luncheons, everyone just loves it. This recipe make 2, 8-inch pies, just divide all ingredients evenly between the two pie shells. If my memory serves me right, I believe the original recipe called for one large deep-dish, 10-inch pie plate, but I prefer to make it into two, 8-inch pies.

Steps:
- Set oven to 425F degrees.
- In a saute pan, melt the butter, and saute the onion and the celery, until soft.
- Add in the shrimp, cook until the shrimp are pink in colour; set aside.
- Divide the cream cheese in half, and cut the cream cheese into 1/4 inch pieces; sprinkle evenly into the bottom of the two pie crusts.
- Top with the sauteed shrimp/onion mixture.
- Top with the grated Swiss cheese.
- Mix together the milk and eggs; divide evenly between the two pie crusts.
- Bake for 10 minutes at 425F degrees.
- Reduce the temperature to 350F degrees, bake for 30 minutes more.

- Preheat oven to 350 degrees F (175 degrees C).
- Spread shrimp evenly across the bottom of the pie crust. Sprinkle cheese over the shrimp.

- Preheat oven to 375 degrees F (190 degrees C).
- Pour egg whites, eggs, and cottage cheese into a blender; pulse several times to mix and blend until smooth, about 1 minute.
- Heat 1 tablespoon olive oil in a large skillet over medium heat; cook and stir asparagus and onion until asparagus is tender, about 8 minutes.
- Heat 2 teaspoons olive oil in the same skillet over medium heat. Season shrimp with salt and black pepper; cook in hot oil until they turn pink and are no longer translucent in the center, 5 to 8 minutes.
- Fit pie crust into a 9-inch deep-dish pie plate and spread shrimp into the crust; top with asparagus mixture. Pour cottage cheese mixture over vegetables and shrimp. Spread Monterey Jack cheese over the top of the quiche. Sprinkle green onions over cheese.

- Preheat oven to 350. Cook bacon in a medium skillet over medium high heat until crisp. Remove bacon and drain on paper towel.
