This curried roasted cauliflower bowl has everything - crunchy veggies, quinoa and an amazing tahini sauce that brings it all together! Healthy, vegan, GF.

1 cup Quinoa (uncooked)
2 cups Water
1/2 teaspoon Salt
1 Red Bell pepper (cut into cubes or sliced)
1/8 teaspoon Black Pepper (cracked)
2 tablespoons Olive Oil
300 grams Cauliflower Florets
1 tablespoon Curry Powder
1/2 teaspoon Paprika
1/4 teaspoon Cumin Powder
1 tablespoon Lemon Juice
1/2 teaspoon Lemon Zest
3/4 tsp Salt
1/4 cup Olive Oil (extra virgin)
1/4 cup Tahini
2 teaspoons Dijon Mustard
3 teaspoons Honey
2 tablespoons Lemon Juice
1/2 teaspoon Pepper (powder)
1/2 teaspoon Salt
2 tablespoons Water (ice cold (optional))

Steps:

  • Preheat oven to 220 C/ 428 F.
  • Toss the red bell peppers in 1/4 teaspoon salt, pepper and some olive oil and spread them out on half the baking sheet. Toss the cauliflower florets in curry powder, olive oil, salt, paprika, cumin powder, lemon juice and the lemon zest and spread them out on the other half of the baking sheet.
  • Bake for 30-35 minutes in the preheated oven flipping the florets once in between. When ready, the cauliflower should be tender but with crisp and golden edges.
  • In the meanwhile, wash the quinoa really well in a colander. Add quinoa, water and salt to a saucepan and bring it to a quick boil. Then reduce the heat, cover and cook for 15-20 minutes till all the water is absorbed and the quinoa is cooked through.
  • To make the dressing, add all the ingredients except water to a jar and shake well. Check the consistency and if the dressing doesn't come together or is too thick, add water to the jar and shake again.
  • To serve, add 1/2-3/4 cup quinoa to a bowl and top with cauliflower and red bell peppers. Drizzle with tahini dressing and serve.

1 tablespoon canola oil
1 teaspoon cumin seed
1 teaspoon coriander seed
2 teaspoons curry powder
1 teaspoon fresh ginger, minced
1 whole clove garlic, smashed
1 head cauliflower, cut into florets
1 cup water
1 cup rice wine vinegar
1/2 cup cider vinegar
3 tablespoons sugar
1 teaspoon pickling salt

Steps:

  • Heat the canola oil in a heavy skillet over medium heat. Crush the cumin seed with the coriander seed and add to the pan. Add the curry powder, ginger, and garlic to the pan. Cook these spices, stirring until the oil colors and the spices are fragrant. Add the cauliflower florets to the pan and toss to coat.
  • In a lidded plastic container, combine the water, rice wine vinegar, cider vinegar, sugar, and pickling salt. Shake to combine.
  • Once the cauliflower is slightly tender, add it to a glass jar. Pour the pickling liquid over the cauliflower, filling to the top of the jar. Cool, chill, and store the pickles for 1 week to allow the flavors to develop thoroughly.

6 large chicken thighs (skinless and boneless)
2 tablespoon oil
1 large onion (finely diced)
2 green chilies (finely diced)
1 piece ginger (1-inch, finely grated)
3 cloves garlic (minced)
1/2 teaspoon chili powder
1 teaspoon turmeric
2 teaspoon garam masala
1 tablespoon brown sugar
1 tin tomatoes (chopped)
1 can coconut milk
1 cauliflower (broken into florets)
Salt to taste
Black pepper to taste
2 large handfuls spinach

Steps:

  • Gather the ingredients.
  • Start by cutting the chicken thighs into 2.5-centimeter ( 1 x 1-inch) sized chunks. Heat 1 tablespoon oil in a large frying pan and brown the chicken on all sides. Remove the chicken from the pan and keep to one side.
  • Add the remaining tablespoon of oil to the same pan, add the chopped onion and cook on medium heat until the onions are soft.
  • Add the green chile, ginger, and garlic and continue to cook for 1 minute, taking care not to burn. Then, add the chili powder, turmeric, garam masala , and sugar and cook for a further minute stirring constantly.
  • Pour in the tomatoes and coconut milk , stir well, then add the chicken and cauliflower. Simmer for 10 minutes until the cauliflower and chicken are cooked through. Add a little stock or water if the sauce gets too thick.
  • Check the seasoning, and add salt and/or pepper as required, then stir through the spinach until it just starts to wilt.
  • Serve the curry into warmed bowls with cooked rice, and/or naan bread or chapatis on the side.

1 cup seasoned rice vinegar (such as Nakano®)
¼ cup white sugar
2 tablespoons kosher salt
1 teaspoon ground turmeric
1 (2 pound) cauliflower, cut into florets
1 ½ teaspoons kosher salt
9 small Thai chile peppers, tops trimmed
6 cloves garlic, peeled
2 teaspoons whole black peppercorns

Steps:

  • Combine water, rice vinegar, sugar, salt, and turmeric in a saucepan. Simmer over low heat until sugar and salt have dissolved, about 5 minutes. Remove from heat and set aside.
  • Place cauliflower florets in a bowl, toss with kosher salt, and set aside for about 30 minutes.
  • Rinse cauliflower and evenly distribute cauliflower florets, chile peppers, garlic cloves, and black peppercorns among 3 pint-sized jars, pressing down so it's tightly packed. Pour brine into the jars, covering the cauliflower.
  • Place the lids on the jars, move them to the refrigerator, and marinate for 2 to 3 days before serving. Flavor will be at its peak in about 1 week.
