JALAPENO MEATLOAF
Best meatloaf ever. The Jalapeños don't make this hot at all. Just gives a great flavor. This the bacon and sauce is awesome. I like extra sauce to dip .

Steps:
- Preheat oven to 350 degrees.
- Saute onion, green pepper, garlic, and jalapeños in the oil.
- Add the sauted vegetables to hamburger, eggs,flour, salt and pepper. Mix well, I use my hands.
- put in a baking dish or on a cookie sheet lined with aluminum foil.
- drape with bacon.
- combine ketchup, brown sugar, and vinegar. cover the meatloaf.
- Bake uncovered for 1 1/2 hours . Let stand for 10 minutes.

PICKLED JALAPEñO MEATLOAF
Meatloaf, like chili, is something I make when I have a dozen or so little jars of something-or-other in the fridge that need to be used up. That's how I came up with pickled jalapeño, which adds a nice kick to this otherwise traditional meatloaf. In this version, a little pork adds extra flavor to the mix. It makes for a delicious and hearty meal, but it's great for leftovers, too, which can be used to make sandwiches that are as scrumptious as they are out of the ordinary. Peter loves open-face meatloaf sandwiches topped with a fried egg.

- Preheat the oven to 375°F.
- Combine the fresh basil, onion, eggs, diced jalapeño, mustard, garlic, dried basil, salt, and black pepper in a large bowl and mix well. Combine the ketchup and Worcestershire sauce in a small bowl and stir to mix. Add the beef, pork, bread crumbs, and half the ketchup mixture to the egg mixture and gently mix just until thoroughly combined; do not overmix or the mixture will become too mushy.
- Place the beef mixture on a rimmed baking sheet and mold into a loaf shape, about 4 x 10 inches. Brush the remaining ketchup mixture on top of the loaf and place the jalapeño slices in a row down the center.
- Bake the meatloaf for about 1 hour, until the juices run clear when the loaf is pierced with a small knife and an internal thermometer inserted in the center reads between 145°F and 150°F. Remove from the oven and let rest, loosely covered, for about 10 minutes before slicing. Serve warm with extra ketchup or spicy mustard on the side.
SOUTHWESTERN MEATLOAF WITH SPICY BARBECUE GLAZE
Add bell pepper, pickled jalapeno and green chile to this meatloaf and brush it with a honey-chipotle sauce.

- Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment.
- Combine the meatloaf mix, breadcrumbs, carrots, green chilies, cilantro, ketchup, pickled jalapenos, Worcestershire sauce, eggs, bell pepper, garlic, onion, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large bowl. Use your hands, mix together until combined well. Transfer the mixture to the loaf pan. Bake the meatloaf for 30 minutes.
- Stir the barbecue sauce, honey, chipotle powder, and vinegar together in small bowl. Remove the meatloaf from the oven and brush the top and sides all over with the spicy barbecue glaze. Return to the oven and bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 45 minutes more. Let rest for 10 minutes before slicing and serving.

- Place an oven-proof tray on the lower rack or bottom of your oven, and fill it with water. Preheat oven to 375 degrees (180C). This will create light steam.

- Place a large piece of aluminum foil (about 10 inches long) over a baking sheet. Transfer the meat to the aluminum foil, and very gently, shape it to form a rectangle of about 6 X 10-inch. Place the hard-boiled eggs in the center of the rectangle, and add the jalapeño pepper strips, if using. Form the loaf by lifting the edge of the aluminum foil to the center, and then rolling to form a log.
