I whole chicken, cut up into 10 pieces
3 cups flour
1 Tbsp. freshly ground black pepper
2 Tbsp. paprika
2 Tbsp. fine sea salt
2 tsp. cayenne pepper
2 Tbsp. baking soda
2 cups buttermilk
Oil for deep frying

Steps:

  • Have ready a cookie cooling rack on the baking sheet. Heat oil in a deep fryer to 350F.
  • Mix the flour, black pepper, paprika, salt, cayenne pepper, and baking soda together.
  • Divide the flour into 2 bowls, 1/3, and 2/3. Pour the buttermilk into a third bowl. Dredge the chicken in the first bowl and shake off excess and place on the cooling rack.
  • Dip the pieces in the buttermilk and then thoroughly into the second bowl of flour. Return them to the rack.
  • Start to deep fry the pieces making sure not to overcrowd and cook for 12-15 min. until the chicken is cooked through. Transfer the chicken to another rack or paper-lined plate to cool for 5-10 min. before serving.

2 sticks (1 cup) unsalted butter, at room temperature
1/3 cup honey
Kosher salt
1/2 cup Chicago-style giardiniera, drained well and chopped (reserve drained brine for chicken)
1/4 cup giardiniera brine reserved from Honey Giardiniera Butter
1/4 cup dill pickle brine from a jar of dill pickles
1 fryer chicken, cut into pieces (thighs, breasts, legs and wings)
2 cups buttermilk
2 cups all-purpose flour
1/2 cup cornstarch
1 tablespoon paprika
1 tablespoon kosher salt
1 tablespoon freshly ground black pepper
1 teaspoon cayenne pepper
Canola oil, for frying

Steps:

  • For the honey giardiniera butter: Add the butter, honey and salt to taste to a bowl and mix until smooth. Stir in the giardiniera until well blended. Refrigerate until ready to use.
  • For the chicken: Add the chicken thighs, reserved giardiniera brine and pickle brine to a plastic zip-top bag and refrigerate overnight or for at least 2 hours.
  • When ready to fry the chicken, fill a Dutch oven halfway full with oil and heat to 350°F.
  • Set up a dredging station: Pour the buttermilk into a large bowl and in a separate large bowl, stir together the flour, cornstarch, paprika, salt, pepper and cayenne until well combined. Use your tongs to drizzle some of the buttermilk mixture into the flour mixture.
  • Remove 1 or 2 pieces of the chicken from the brine at a time and submerge in the buttermilk. Add 1 piece of the buttermilk-soaked chicken at a time into the flour mixture and turn to completely coat the chicken. Transfer to a plate and repeat until all the remaining chicken is well coated.
  • Add the chicken to the hot oil in batches, 2 or 3 pieces at a time, and cook until brown and crispy, 12 to 15 minutes. Transfer the cooked chicken to a wire rack on a baking sheet to drain. Serve immediately with the giardiniera butter or let cool and store on a wire-rack on a sheet pan, lightly covered, in the fridge overnight. Serve at the picnic at room temp. Served with softened honey giardiniera butter.

3 cups all-purpose flour
4 cups vegetable shortening for frying

Steps:

  • With a cleaver or heavy knife, split the chicken breasts, then cut each breast half in half again. Place the chicken pieces in a shallow container skin-side down and pour the buttermilk over them. Cover with plastic wrap and marinate in the refrigerator for at least 6 hours or overnight, if possible. Preheat the oven to 375 degrees. Remove the chicken from the buttermilk and season both sides with salt and pepper. Place the beaten eggs and flour in separate shallow bowls. Dredge the chicken pieces first in the flour, then the egg, and then the flour again. In a 12-inch saute pan with deep sides, melt enough shortening so that it is 2 inches deep and heat the pan until the oil begins to smoke. Fry the chicken for 2 minutes on each side, until the skin is golden brown. Transfer to a baking sheet and bake the chicken for 15 minutes, or until cooked through. Serve warm immediately, or store in the refrigerator for the next day's picnic. This recipe yields 4 servings.

1 can (12 ounces) frozen lemonade concentrate, thawed
1 broiler/fryer chicken (3 to 4 pounds), cut up
1/2 cup plus 2 tablespoons all-purpose flour
1-1/2 teaspoons salt

1 cup canola oil
2 tablespoons butter, melted

Steps:

  • Refrigerate 1/4 cup lemonade concentrate for basting. Pour remaining concentrate into a large resealable plastic bag; add chicken. Seal bag and turn to coat; refrigerate for 4 hours, turning occasionally., Drain and discard marinade from chicken. In a large resealable plastic bag, combine the flour, salt and pepper. 3/4 to 1 cup buttermilk
COATING:

¼ cup kosher salt
8 skinless chicken legs
3 cups all-purpose flour, divided
1 cup buttermilk

  • Mix cold water and kosher salt together in a large bowl until salt dissolves. Add chicken legs. Cover entire bowl with plastic wrap and refrigerate for 2 hours.

2 cups well-shaken buttermilk
4 large garlic cloves, lightly crushed with the side of a chef's knife, then peeled
8 chicken thighs and 8 chicken drumsticks (5 pounds total), skin on
Cooking oil spray
1 1/2 cups plain dried bread crumbs
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon dried marjoram
1 1/2 teaspoons kosher salt
1/2 teaspoon black pepper

Steps:

  • In large bowl, combine buttermilk and garlic. Add chicken pieces and turn to coat. Cover and refrigerate at least 30 minutes and up to 12 hours.
  • Arrange rack in upper third of oven and preheat to 400°F. Line large shallow baking sheet with foil and spray lightly with cooking oil. In large bowl, combine bread crumbs, oregano, basil, marjoram, salt, and pepper; toss well to blend.
  • Drain chicken and discard buttermilk. Working with 1 piece at a time, dredge chicken in bread crumbs until well coated, then place, skin side up, on baking sheet. Spray pieces lightly with cooking oil.
  • Bake chicken until golden and cooked through, 35 to 45 minutes. Transfer to wire rack to cool.
  • Transportation tips:
  • If you cook the chicken just before leaving, you can transport it warm, uncovered, in a basket lined with foil and paper towels. If you make it a day ahead, let it cool, then refrigerate it overnight. Pack the cold chicken in a covered plastic container lined with parchment paper.

1 cup flour
1 1/2 tablespoons sesame seeds
1 tablespoon dried thyme
1/2 teaspoon garlic powder
1/2 teaspoon onion powder

2 1/2 lbs chicken drummettes
2 eggs, lightly beaten in a small bowl
2 tablespoons butter
1/4 cup olive oil
1 round fresh sourdough bread
1/2 cup barbecue sauce, for basting
4 tablespoons butter
3 tablespoons sesame seeds
1 tablespoon dried thyme
1/2 teaspoon garlic powder
1 tablespoon poppy seed

Steps:

  • Preheat oven to 400°. In a medium mixing bowl combine the flour, sesame seeds, thyme, garlic powder, onion powder, poppy seeds, salt and pepper. Dip the chicken drumettes in the flour mixture and shake off any excess. Next, dip the chicken in the beaten egg and then coat each piece thoroughly in the flour mixture again.
  • Meanwhile, melt the butter and the olive oil in a large skillet. Brown the chicken thoroughly, about 3 minutes per side, over medium heat. Put the chicken on a rimmed baking sheet and bake 20 minutes.
  • In the meantime, to prepare the bread basket, cut a large top in the bread round. Scoop out the inside of the loaf, leaving about ¾ inch of bread all the way around the edge.
  • For the Herb and Seeds Butter Sauce, melt the butter in a small saucepan and add the remaining sauce ingredients. With a pastry brush, spread the sauce over the entire inside of the loaf and inside of the top. Place the loaf and top on a cookie sheet.
  • At this time the chicken should have cooked for the 20 minutes. Remove chicken from the oven and brush the drumettes with BBQ sauce and bake for an additional 10-15 minutes, or until done. Also put the bread in the oven at the same time and bake uncovered for 15 minute. Remove both cookie sheets from the oven and put the chicken in the bread round and put the bread top on. Wrap the bread basket in several layers of heavy duty foil, surrounded by several layers of newspaper. It will remain very warm for several hours this way. Enjoy your tailgate or picnic party!

2 bay leaves
2 (3 1/2-4-pound) chickens, cut into 8 pieces each
Assembly:
6 cups all-purpose flour, divided
1 tablespoon cornstarch
1 tablespoon freshly ground black pepper
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon smoked paprika
1 1/2 teaspoon ground fennel or finely ground fennel seeds
1 tablespoon Diamond Crystal or 1 1/2 teaspoons Morton kosher salt, plus more
2 large eggs, beaten to blend
2 cups buttermilk
Vegetable oil (for frying; about 6 cups)
White Barbecue Sauce and bread-and-butter pickles (for serving)

Steps:

  • Brine:
  • Toast mustard, cumin, and fennel seeds in a large pot over medium-low heat, tossing often, until fragrant and mustard seeds are starting to pop, about 1 minute. Add salt, brown sugar, peppercorns, bay leaves, and 2 cups water. Bring to a simmer, stirring to dissolve sugar and salt. Remove pan from heat and add 8 cups ice water, then chicken pieces. Cover pot with plastic wrap and chill chicken at least 8 hours and up to 1 day.
  • Assembly:
  • Place 2 cups flour in a shallow bowl. Whisk cornstarch, pepper, garlic powder, onion powder, paprika, fennel, 1 Tbsp. or 1 1/2 tsp. salt, and remaining 4 cups flour in another shallow bowl to combine. Whisk eggs and buttermilk in a third shallow bowl to combine.
  • Remove chicken pieces from brine and pat dry; discard brine. Working with 1 piece at a time, dredge chicken in plain flour, shaking off excess, then dip in egg mixture, allowing excess to drip back into bowl. Transfer chicken to bowl with seasoned flour and coat, packing all around chicken and firmly into cracks and crevices; shake off excess. Place chicken on 2 wire racks set inside rimmed baking sheets.
  • Pour oil into a large pot to come halfway up sides. Fit pot with thermometer and heat oil over medium-high until thermometer registers 350°F. Working in 4 batches, fry chicken, turning often with tongs and adjusting heat to maintain temperature, until brown and an instant-read thermometer inserted into the thickest part of chicken registers 165°F for dark meat and 160°F for white meat, 10-14 minutes per batch. Transfer chicken to clean wire racks and let rest 10 minutes.
  • Serve fried chicken with barbecue sauce and pickles.

  • Chicken can be dredged 2 hours ahead. Chill uncovered on rimmed baking sheets. Chicken can be fried 2 hours ahead. Let sit uncovered at room temperature. Reheat in a 250°F oven if desired.
